July 15 to July 27- managed to flake out of doing my Thing A Day posts, and for considerably longer than I thought it’s been at that (feels like a week, it’s been more like two). Haven’t done much in that time other than laundry, and partially cleaning the upstairs bathroom. Need to get out of the doldrums and start doing more stuff. Also resume doing these posts because mostly they’ve been at least partially successful in reminding me to do more.
What I can remember of the last week or so below the cut.
July 19 - dug meat sauce out of the freezer and we had that and pasta. I’m surprised I can even remember back this far.
July 20 - starting prep for a colonoscopy next Monday, so made an easily digestible supper of pan-fried haddock and homemade hash browns. The last “real” meal I’ll have until early next week. Thankfully brother is going on a trip starting tomorrow so I only have to worry about cooking for myself over the weekend. He spent the afternoon making a big pot of sausage & steak chili to take along with him
July 21 - made a vat of stock, partially to use up some freezer burnt chicken (a half chicken and four thighs), but mostly to provide myself with well-cooked chicken and stock for this weekend. Brother forgot to pack his chili, crock pot full of it was sitting out on the counter when I went downstairs to turn off the heat under the stock pot, whoops. Chili is now in fridge.
For supper I made a cheese and chicken sandwich with mayo on white bread, and picked all the very-well-cooked chunks of carrot out of the stock pot to also eat
July 22 - ran two loads of laundry. Deboned the remainder of the chicken and froze most of it. Also divided up and froze the chili and most of the stock (which I’d strained yesterday and then chilled overnight so I could skim off and discard any fat). Cut up a beef roast into stewing beef and froze it in 1 lb amounts for future use.
For supper I cooked some white rice in stock with a little dried tarragon, and added some of the shredded chicken to it.
July 23 - the fun of clear liquids only day! I will not go into the gross details of what prep involves (google peglyte it if you’re curious). When I was finally able to ingest stuff in late evening, my supper was some lime jello made using grape-apple juice, and later a soup mug full of chicken stock.
July 24 - colonoscopy day. Brother drove me there and back. I am now four polyps down, and am being referred to their big polyps specialist to remove a fifth (the big ones apparently need different instrumentation to remove), which will mean re-doing prep at some point in the near future. I am SO not looking forward to that - the colonoscopy itself is no biggie but the prep sucks so very, very much.
Pretty tired since I had to get up at stupid o’clock to do final prep. I will be avoiding blue gatorade for some time to come, since that’s what I was mostly drinking during prep (aside from the Peglyte itself) and now find its flavour revolting as a result.
Had to gently reintroduce my digestive system to food after getting home, so supper was vanilla yogurt, applesauce, a banana, and a slice of white bread and cream cheese, spread out cautiously over the evening.
July 25 - cleaned upstairs bathroom. Brother off at a golfing stag party for someone, so I stayed easy on my digestive system and made tuna rice with green peas for supper. So nice to have a vegetable again after days without any.
July 26 - finally got around to using up the chayote I bought before leaving Toronto (they last forever and a day when refrigerated) and made chayote & chicken wraps using some of the cooked chicken from making stock.
July 27 - supper was chili and rice; some of that steak & sausage chili my brother had made. It was delicious.

Comfort foods that i deeply enjoy
my first comfort food that wins over my heart is Mac and Cheese. It has to be homemade of course the boxed mac and cheese does not make me feel the same way. A warm mixture of butter noodles and 3 or 4 different kinds of my favorite types of cheese with some bread crumbs baked on top will do the trick every time.

Another one of my favorite comfort foods is Beef stew. It is very easy to make in the crock pot and it is a perfect meal and comfort food during the cold months. You get meat and all sorts of vegetables in a stew with a beef or chicken broth (i prefer beef) that warms me up and is a very delicious.

The last food i'm going to mention is Chicken Pot pie. growing up my mom use to make this all the time and it will always be one of my favorite foods to have. A beautiful flaky crust mixed with filling of chicken vegetables and a creamy broth brings a smile to my face everytime.

Goulash, devine beef stew for your crockpot
Sometimes you don't need a lot of ingredients to make something that tastes deep and rich. It comes down proportions and technique. Goulash, a beef stew seasoned with paprika, is one of those dishes.
So, here hoes (my version)!

I bought this pre-chopped stew beef at a a pretty good price. Sometimes butchers make mistakes or have odd ends they toss together and the result is discounted beef that saves you time. Don't be afraid to ask at your counter. Tell your butcher your budget and ask for whatever stew beef he might have. You would be surprised at what they can do for you.
Let's get to the onions before we cook our beef, though, as onion is key to this dish.

Yes, two whole onions minced and browned in a pan. I dope mine up with a little balsamic syrup to bring out their sweetness which is what you're after. You can use a teaspoon of white or brown sugar as well or none at all, but it takes longer to brown your onions without it.

Ok, for this dish, you gotta do a thorough browning of your onions because we want them to virtually disappear into the stew. Plus, we're after sweetness. So, you cook on low heat until you see them get brown, then add water, cook all the water out and repeat. I add and cook off the water at least 3-4 times. NO GARLIC IN THIS DISH!!! Hisssssss!

I get my pan smoking and sear my beef (seasoned with salt and pepper) before it goes in the crock pot. I then deglaze with red wine (that's what's bubbling). You can skip the red wine if you prefer, of course! However, I like what it adds in depth. Also, don't worry about cooking the beef through. The crock pot can do the rest.

Add 1-2 cups of beef broth, a whole jar or tin of crushed tomatoes (I always recommend jarred or preserves if you have them, the canned ones are too salty imo). Add a Bay leaf, some chopped fresh parsley if you have it, a couple teaspoons of sweet paprika (Hungarian is really nice) and season with salt and pepper. Let the crockpot do its thing. 4 hours on high is more than sufficient but you can do a low and slow for up to 8 hours.
When you are about a half hour from meal time, add several tablespoons of tomato paste, more paprika and then thicken with a cornstarch slurry. You DO NOT want to add any flour roux or cornstarch thickeners right from the start. I've had those burn to the bottom of the crockpot, not good!

Finally, you have this amazingly, deceptively simple but hearty stew. The beef melts in your mouth. I serve mine with my grandma's homemade bread or over spaetzle if I get ambitious (but pretty much any starch pairs nicely).

Shaak Stew
Ingredients:
2 1/2 lbs boneless beef chuck, cubed
1 Tbsp of Smoked Tea Rub
1 Tsp of Pennsylvania Pepper
4 cloves garlic, minced
2 sweet onions, chopped
8 baby Yukon gold potatoes cut into quarters
4 carrots, peeled and chopped
1 cup button mushrooms, sliced
¾ cup tomato paste
8 oz. cup brewed Bounty Hunter Blend (the Smoky notes pair well with the Smoked Tea Rub)
8 oz of stout OR your favorite cola
2 cups beef stock
3 Tbsp of cornstarch
Directions
1. Pat beef with a paper towel to dry, then season liberally with Smoked Tea Rub and Pennsylvania Pepper.
2. Place in the bottom of crock pot. Add onions, potatoes, carrots, mushroom and garlic to crock pot.
3. Whisk the tomato paste with the beef stock. Pour mixture, cola (OR stout) and Bounty Hunter Blend over all ingredients in Crock Pot.
