The horror or the dilemma and the sadness of my heart (and belly) as I got 4 tickets for 2, when I ordered vegan food online the other month, but first I don’t even have 7 vegan friends to invite and it’s in Tokyo so too far for me to go with my sick cat... I’m not gonna discuss the choice of those organizers to always have a festival at the same time as other vegan ones... Celebrating new commodities

Mission to be a cheap virgin vegan in Japan has begun. I decided to change tact from researching vegan recipes and products and then spending hours in the supermarket hopelessly looking for them, to letting what’s available here (+ imagination + creativity) determine how I eat.

Yesterday I discovered a completely new product: okara! (おから)This is the by-product of making tofu, or what’s left when the milk is squeezed out of the soy beans. It looks like a kind of wet flour, and costs about 10p for a big bag, or sometimes they give it away! And it’s full of calcium, fibre and protein! Given that it’s a dry mushed up bean, I tried it out in veggie burgers. Mixed with fried onions, peppers, garlic and ginger, cumin, paprika, a little flour, water, salt and pepper, and fried in patties it worked pretty well. Okara has less flavour than whole beans or chickpeas, so I’ll add more spices and fried vegetables next time, and maybe even a few whole beans. I also made okara hummus. I know hummus is a cheap vegan foodstuff at home, but chickpeas are an exotic imported product here, so a Japanese alternative is welcome. I mixed fresh okara straight from the bag with a bit of water, lemon juice, tahini (sesame products abound, thankfully!), and cumin, and it tasted just like the real thing!

Roasted soy beans (黄粉 or きなこ, kinako). They’re sold in the nuts/snacks section of the supermarket and I originally bought them as a cheaper alternative to nuts (about half the price of peanuts). But have since discovered their versatility, adding them to everything (soup, fried vegetables, salad, noodles). They soak up a bit of whatever liquid is available, making them soft but chewier than fresh soy beans.

Chestnuts (栗, kuri) are coming to the end of their season (autumn-winter) in Japan, but are still available and cheaper than in the UK! I love chestnuts, but at home they were always a luxury, so now I’m using them a lot more. You can buy them already cooked and peeled in packets, and yesterday in an attempt to replace peanut butter, I made a chestnut spread. I put the few chestnuts I had left after hiking in a pan with a spoonful of brown sugar and a little water. I let it simmer, adding water and mashing the chestnuts as I went, until I got a spreadable texture. I enjoyed it on my toast in blissful ignorance (see last post). Next time I might forego the sugar and add a little salt instead.

On the topic of bread, a friend just told me that it is possible to make bread in a rice cooker! The recipes I’ve found all involve milk and butter, but I’m going to try with soy milk and olive oil instead. Watch this space…

So NHK came to our school last week to take some footage and interview me on how it is to live in Gunma being a vegan. I’m not super comfortable with that, I don’t have good memories with the press so I hope they won’t be cutting and mixing my words to change the meaning like it’s been done before. 1/2 I ordered ANOTHER vegan Xmas tart at a small vegan truck shop cause I had given up on the strawberries but before the first amazing shop told me they actually found strawberries at the market and could do a strawberry tart, I had saw @ken.hokkori ‘s post about his Xmas cake and tart and went to order one (a tart. I had a huge craving for tarts). I knew it will be A LOT to eat for me alone but no surprise here, the French girl has almost finish them both already !! Ahaha ! I went to get this on on the 25th and of course I started eating it that same evening! Mouahahahah ! This tart is delicious !!! Thank you @ken.hokkori for all the strawberries and the cream taste is omg 😱 it’s out of this world !!
