A question! :0! Does Panga view everyone around him like an animal? or is it just those who've caught his interest, cause I've been wondering if he sees Nath like wild animal...
Hmm, good question!
I'd say he views the vast majority of people as human (and so of little to no interest to him) but realising Silent Spy was mute allowed Panga to see him differently and to impose his own thoughts and beliefs onto Si's actions. He's probably not even consciously aware that he thinks of Si more like the injured animals he likes to take in than an actual human being with individual agency.

Panga Fish Mousseline

This light, airy and delicious Panga Fish Mousseline, makes excellent use of leftover fish and is an entrée fit for a Festive table!
Ingredients (serves 4 to 6):
olive oil
340 grams/12 ounces leftover steamed panga fish (Pangasius bocourti)
6 fluffy sprigs Garden Cilantro 
a pinch of fleur de sel or sea salt flakes
¼ teaspoon freshly cracked black pepper
1 heaped tablespoon thick crème fraîche or sour cream
2 tablespoons dry white wine, like Gros Plant du Pays Nantais
1 tablespoon good quality Cognac
2 large egg whites
a pinch of salt
Hollandaise Sauce, warmed, to serve
The day before serving the terrine, preheat oven to 160°C/320°F. Lightly grease a 600-millilitre/20-fluid-ounce terrine dish with olive oil. Set aside
Cut panga fish into small chunks, and add to the bowl of a food processor. 
Roughly chop Cilantro, and add to the food processor. Process until finely chopped, but before it becomes a paste. Spoon into a medium bowl. Season with fleur de sel and black pepper. Gently stir in crème fraîche. Then, drizzle with white wine and Cognac, and give a gentle stir until combined.
In another medium bowl, beat egg whites with a pinch of salt, gradually increasing speed to high, until stiff peaks just form.
Gently fold beaten egg whites into fish mixture. Spoon the fish mousse into the terrine dish, levelling the top with a spatula. Close with the lid and place in the middle of a large baking dish. Fill baking dish to three-quarters with warm water, to make a bain-marie.
Place baking dish in the middle of the oven, and cook in the bain-marie, 30 minutes, at 160°C/320°F. Once cooked remove bain-marie from the oven, and let cool, half an hour.
Place mousseline in the refrigerator, to chill and set overnight.
The next day, carefully and gently up-turn fish mousseline onto serving dish.
Serve Panga Fish Mousseline, with warm Hollandaise Sauce, toasted bread, and a glass of chilled Sèvre et Maine sur Lie Muscadet or Gros Plant du Pays Nantais.

Ginger and Rum Colombo Panga

Death In Paradise is back on telly, and thus, so are vibrant, fragrant, delicious Caribbean flavours on the menu! Like this Ginger and Rum Colombo Panga, its delicate flesh enhanced with bright spices, to make each bite a delectably aromatic explosion! Yesi!
Ingredients (serves 2):
1 teaspoon Graines à Roussir
1 heaped teaspoon Colombo spices
2 small garlic cloves
1 thumb-sized piece fresh ginger
1/2 teaspoon coarse sea salt
1/2 teaspoon freshly cracked black pepper
a small bunch fresh Parsley
1 tablespooon olive oil
1 tablespoon Ginger and Lime Rum
2 large fillets fresh panga
Spoon Graines à Roussir in a pestle and mortar, and grind them thoroughly. Add Colombo spices, and grind as well to combine.
Peel garlic cloves and add to the mortar. Crush them with the pestle, grinding them into the spices to form a thick paste.
Peel ginger, and grate into the mortar. Keep grinding with the pestle, to combine. Season with coarse sea salt and black pepper, crushing them in.
Finely chop Garden Parsley, and stir into the spice, garlic and ginger paste. Then, gradually stir in olive oil and Ginger and Lime Rum, until just loosened. Set aside.
Drizzle a little olive oil at the bottom of a large baking tin.
Pat panga fillets dry, if necessary, and place them into the baking tin. Carefully, but thoroughly rub spice, garlic and ginger paste generously all over the fish, on both sides.
Cover with cling film, and allow to marinate, at least a couple of hours in the refrigerator.
Preheat oven to 190°C/375°F.
Remove cling film, and place baking tin in the middle of the hot oven. Bake, at 190°C/375°F, 25 minutes.
Serve Ginger and Rum Colombo Panga hot, with lime wedges, a ripe avocado and Coconut Rum Rice.
