Crispy Baked Sweet Potato Fries

Ingredients Scale
3 pound sweet potatoes, peeled
6 tablespoons olive oil
6 teaspoon cornstarch
1 1/2 teaspoon garlic powder
1 1/2 teaspoon smoked paprika
1 1/2 teaspoon freshly-cracked black pepper
fine sea salt, to taste
Instructions
Slice your sweet potatoes into long, thin strips, about 1/4-inch wide.  It’s important that the fries are uniformly sized for even cooking.  Add the fries to a large bowl of cold water and soak for at least 30 minutes (or up to overnight).
Preheat the oven to 425°F.  Line a large baking sheet (or two medium baking sheets*) with parchment paper, or mist with cooking spray.  Set aside.
Drain the fries, rinse out and dry your bowl of water, then blot dry the fries with a clean towel.
Add the fries back to the clean bowl.*  Then drizzle evenly with the olive oil, and toss until they are evenly coated.
In a separate small bowl, whisk together the cornstarch, garlic powder, smoked paprika and black pepper until combined.  Sprinkle the mixture evenly over the bowl of fries, then toss until the fries are evenly coated and the cornstarch has soaked into the oil.
Spread the fries out in an even layer on the prepared baking sheet.  Be sure that the fries aren’t overlapping, or else they will not cook evenly.
Bake for 15 minutes.  Then remove pan from oven, and take the time to flip each fry with a spatula.  Rearrange so that the fries are evenly spaced and not overlapping again.  Then bake for 10-15 more minutes, or until the fries are crispy and have begun to brown a bit on the tips.
Transfer the baking sheet to a cooling rack, sprinkle with your desired amount of salt, then let the fries rest for 5 minutes.  Serve warm.
Notes
Baking sheets: If you need to spread the fries out between two baking sheets, be sure to switch their positions on the top and bottom oven shelves at the halfway point when you flip the fries.
Mixing the fries: Or you can do this step in a large ziplock bag, if you prefer, which makes the fries a bit easier to toss with the cornstarch mixture.

I don't even know what to call this but oh my god.
I had leftover pie crust but not enough for a pie and three apples, which is not enough for a pie, and some honey I accidentally got water in and this isn't a pie and it's weird and it's so good.
It's kind of a take on my caramel apple pie in that the base components are apples, butter, and brown sugar but I also added two teaspoons of cinnamon and a few tablespoons of watery honey and half a teaspoon of almond extract. It was about half a cup of brown sugar and maybe a third of a cup of melted (salted!) butter and 3 tablespoons of potato starch.
Baked at 400 for 45 min.
The edges are covered in this foamy bubbly caramel stuff that like, hardens into candy as you chew it. I used envy apples so it's very sweet and just a tiny bit tart. The water from the apples and honey and the butter soaked into the very thin layer of crust so it's crispy rather than flaky in a very nice way.
It's not a pie, it's kind of a tart? But not. It's just really really good and it's frustrating when something I randomly mixed together to use up ingredients comes out well enough that I want to duplicate the recipe but the recipe includes stuff like "honey I accidentally got some water in when I was trying to decrystallize it."

Chili Raspberry Pork Chop
Layering flavors - The marinade is a simple concoction of sugar, soy sauce, and a small amount of five-spice powder. Chill the seasoned chops for an extended period of time if you can. A deep-fried pork chop with a crispy sweet potato starch coating. Finished with a delectable, smoky, sweet glaze of rich raspberry jam and smoky ancho chili powder.
FYI: You may skip the last step and still have a tasty dish to be pleased with.

In honor of Dracula Daily starting again, I thought I'd share with you ...

What you need:
6 chicken drumsticks (or an entire chicken)
3 onions
4 garlic cloves
3 paprika peppers (of any color)
2 tablespoons of tomato paste
800g (1,6 lbs) peeled tomatoes
Chili powder (as you like)
100 ml (a little less than 1/2 cup of) cream
3 tea spoons of sweet paprika powder
3 tea spoons of hot paprika powder
2 tea spoons of (corn)starch
a pinch of sugar
salt & pepper
What to do:
preheat the stove to 150°C (302°F)
meanwhile, peel the onions and garlic cloves, and cut them into cubes.
Wash the paprika peppers, remove the pips and cut them into cubes as well.
Wash and dry the chicken, then sear it. Add the onions and paprika peppers, then the garlic and roast them for two minutes.
Add tomato paste and peeled tomatoes.
Add paprika powder, salt, pepper and sugar.
Add chili powder (a little, a lot ... depends on whether or not you want to have the Jonathan Harker experience of chugging water all night)
Put it in the stove in a closed pan for 2h and let it simmer.
Then take it out, add cream and make it boil while stirring.
Bind with starch.
If necessary, flavor with salt, pepper and chili powder.
Goes well with:
rice
potatoes
a salad
Have fun trying it out! Oh, and please note: the garlic used in this dish could be effective against vampiric attacks, so it's better to use too much than too little. For your safety.
