I saw that you said you don’t read much VNC fanfiction, but of what you have read, do you have any recs?
In general, anything by fl4nel is probably an absolute banger imo. I have three (3) user subscriptions on Ao3, and they're one of them. Blood and Thunder is a fandom classic if you want a starting point, but their less popular fics are just as good. Their writing style is absolutely gorgeous, and they nail the sort of tension that good canonverse vanoé fic requires.
I'm also fond of fortuna, choosing sides by leovenus and you're the one (i think i'll regret this) by coffeebiscuits.
It's probably becoming clear by now that my favorite genre of vnc fic is more or less canon compliant oneshots in which vanoé pine and yearn and want each other without ever fully acting on that tension. Unfulfilled yearning that you can't voice would be Vanitas's middle name if he had one. And anyway, both of the above fics do that specific thing very well. There's a certain similar mood that they both capture.
To be entirely honest, beyond that, the vnc fic I read/reread most often is my own An Act of Trust. Might be mildly tacky to self-promo on a rec list, but I unabashedly love that fic ¯\_(ツ)_/¯. I think it's pretty solid, and if you want a taste of what I like in vnc fic, it's incredibly self indulgent in that regard.

Dove on the Roof, Canon Chapter, 11.111 Words
After the cruise mission, meant to prove their merit as a team but revealing far more to all of them, Sun, Moon, and Y/N are now finally free to explore what dating will entail for them. Except, dates don't always go as planned.

if ozai had a proper backstory/character regarding his family and personality instead of just "ozai = ultimate villain = ultimate evil (literally, like the summation of all kinds of 'evil')" and got more screentime, then it would have made the ultimate lesson of atla as a series more viable, like the zuko redemption arc, that there is no "true black / white" nor "ultimate good / evil"
he was such an 1D character in the series it's so intriguing when ao3 spices up his character

Nearly done with this reread of The Ballad of Songbirds and Snakes, and I had forgotten how much Snow like... actually did love Sejanus? He whines about him a lot in the first half of the book but like... he does really stick his neck out for him a LOT. And even hugs Sejanus when they meet again in District 12! Once they’re peacekeepers together, Snow’s thinking of him shifts from being annoying to being a friend, at least until Sejanus starts hanging out with the rebels. And even then, Snow is extremely conflicted about his decision to record him with the jabber jay; it’s more an instant of panicked self protection then I remembered. He’s definitely burying his head in the sand about the ramifications of what he did right up until Sejanus is arrested (Snow convinces himself that Sejanus’s father will swoop in and save him again, but like come on dude. Definitely just not wanting to accept that his actions will result in Sejanus’s execution) And then later he refers to Lucy Gray as something along the lines of “the only person left he loves”.
Don’t get me wrong, Snow is absolutely 100% at fault for snitching on Sejanus; he just did what he does throughout the entire book. He chooses to save himself at the expense of other people and this the penultimate moment of that that’s been building the entire time. But it really did strike how much he actually cared about Sejanus in this read through. Not that it saved him in the end, but the love was there.
