Momos Cravings? • Beef Sukuti and Tandoori Chicken Momos🇳🇵I am fearful of fusion because the execution often falls short of the culinary promise, which was my hesitancy of trying the recently opened @momocrave offering spins of the Nepali momos. @wendalicious888 said it was worth going so I am in. In the foreground is the combo of two Nepali dishes— the sukuti and momos. The deep fried momos with a beef filling are tossed in a beef sukuti, which is a popular dried meat snack. Sukuti is dried meat that is further enhanced by frying, smoked, or roasted with cumin, chili powder, turmeric, salt, and pepper after which the meat is mixed with ginger, cilantro, garlic, and scallion. Really good. In the background is the tandoori momo with a chicken filling. While I did not discern a strong and distinct tandoori flavor, it was still a tasty dish. I did notice the thin and resilient dumpling skin to withstand the different cooking techniques without breaking and being tough in texture. Well done. Tip 1: One can opt for beef for chicken for any of the Momo selections. Tip 2: There are 8 momos per order so tables of 2 or 4 people are best for even sharing. NB: Right off the 69 Street station stop on the 7 line, @momocrave is next door to @purpledoughs if interested in dessert after dinner. That’s All Yolks • Golden Yolk Threads on Thai Custard 🇹🇭 On top of the mound of golden egg yolk threads, Foi Thong, is my favorite Thai dessert, which is the Thai Custard with Taro aka Khanom Mo Kaeng Pueak. This egg custard, Khanom Mo Kaeng, can have hulled mung beans or lotus seeds too. This fine example with Taro is from @khaonomnyc. Foi Thong is based on the Portuguese Egg Thread called Fios de Ovos and known as Angel Hair. This post is a follow up to the Portuguese egg custard Pasteis de Nata. My Thai language teacher @pimchaisuwan had once shared with me that Thai egg desserts came from a Portuguese lady, who was half Japanese named Maria Guyomar de Pinha or Thao Thong Kip Ma in Thai, in the Thai Royal Court during the 17th Century. If familiar with traditional Asian desserts, the use of egg, cream, sugar, and a starch for a dessert is quite a culinary departure. With these two desserts and Goan cuisine, I inadvertently am on a Portuguese inflected food kick. Waste Not ... Pastéis de nata • Portuguese Egg Custard Tarts 🇹🇲 Egg Custard Tarts have been omnipresent in my life as Hong Kong Daan Taat or the “burnt” style from Macau 😉 to later learn that they are derivatives of this Portuguese dessert. I learned this year about another yolk-y Asian dessert that also originated from the Portuguese. This got me wondering... why? Research revealed that these extra yolks were originally excessed from the whites aka albumen, which were used to starch clothing of the religious class, such the nuns’ habits. To avoid waste, sweet desserts incorporating yolks were created. These lovely examples are served hot with a dash of cinnamon and sprinkle of confectioner sugar by @joeybatscafe at the penultimate Saturday of the 2018 @queensnightmarket. Grandma Approved 🍕 Awesome Pizza exists all over NYC. This excellent Grandma slice is from @louiespizza in Elmhurst. The length of proofing time and crispiness of the pizza bottom distinguish the Grandma from the Sicilian (rectangular) slices. The Grandma’s shorter proof time yields a denser and thinner crust but a more tender crumb. There is also an emphasis on achieving a crisper bottom with a Grandma. Tip: if you are hungry, get the steak. Yes, that is not a typo. The steak is amazing so it is getting its own post. Trust me. Sizzling Beef Momo 🥟 This delicious fried Momo was from the recently opened Lungta when my friend @nigelsie was cheering me up. It definitely worked because I can’t remember what ticked me off so badly. Thanks! While trying to recall the reason for my foul mood, my monkey brain started churning and poking me about why is this called a Momo? Always giving in, I dug around and found that Momo is a colloquial Tibetan term Mog Mog that borrowed from the Chinese for a plain steamed bun without any filling called a Momo. The Tibetans spun this by stuffing the formerly unfilled buns with all sorts of goodies like beef and alternate cooking methods like pan frying and deep frying. With migration, the Tibetan Momos were adopted into the cuisine of Nepal and certain areas of India. I am saddened that the Tibetan Flag is not available as an Emoji I suppose for geopolitical reasons because I would like to give this proper attribution in this post. Don’t let the ramen sit in the broth, which is warm and could further cook the ramen passed its ideal preparation. The Miso broth has a thinner consistency while the Saba is more viscous, which I am seeming to develop a preference. This is the biggie • Chipa Guasu 🇳🇱 This Paraguayan cheesy corn soufflé gets its name from the Guaraní language where this baked dish is considered the largest among all types of chipas, which are baked goods made of corn. Chipa Guazu, an alternate spelling, is gluten-free and was brought out first then quickly followed by a bottle of vinegary hot sauce at @iloveparaguayrestaurant I’m going to pour it on. The vinegary spicy sauce is a good foil to this rich Chipa. Is there any need to say this tastes good? 😉 Guaraní is a native language of Paraguay and neighboring regions. It is still widely spoken and one of the official languages along with Spanish. Tip: That one edge pulled away in this shot was alI ate. So, this is easily shareable by 3-4 people. It’s not the 29th day of the month but I’m going to have ñoquis 🇳🇱 There is a tradition in Latin America of eating Gnocchis, which was transliterated to Ñoquis in Spanish with the immigration of the Italians into Argentina, Uruguay, and Paraguay around the Second World War. While the reason is not quite clear but most cited is that this meal of flour and water is not expensive to make and made toward the end of the month when supplies ran low. This meal would allow families to make it to the next month. That definitely makes me think these pillowy potato wheat dumplings differently. Paging Ice Cream Lovers!!! • Fruits and Nuts Cassata 🇮🇳 This ice cream creation is a riff on the Italian Cassata cake, which a sponge cake layered with sweetened ricotta cheese and candied fruit. This version replaces that cannoli ricotta filling with 3 different ice cream flavors and is from the Vadilal Group, which an ice cream company over 100 years old started by founder Vadilal Gandhi churning out ice cream with a hand cranked apparatus aka the Kothi method, in Gujarat, the western state of India. Vadilal ice cream is purportedly vegetarian. Please read the last post, which was on Vatan, to understand why this Gujarati product would be vegetarian. Most important is that it is delicious. This was a welcomed treat after a 🔥 fiery🔥set of curries at the recently opened Cardamom. Because it is technically a cake, we realized it was 2 slices in the bowl. Accomplished! 🇮🇳 @vatannyc has been on my list forever. I recruited my friend @ethnojunkie to this table-service All You Can Eat Restaurant serving Indian food from the western state of Gujarat. Two fun facts about me are that I eat strictly vegetarian at least five days of the week but my goal is six. And, my day job is in commercial real estate where I have worked with many Gujarati, all of whom told me to come to this restaurant to sample their cuisine or come over for dinner. This restaurant is right up my alley and was such a wonderful treat. Due to influence of the Jain religion, Gujarati food is mainly vegetarian. I find Indian vegetarian really appealing because many dishes are not a substitution like a faux fish or fiction chicken, etc. The appeal is the vegetable dish itself. I also find that this regional cuisine is not as spicy as other regions. For Dewi fans, the medium spicy at this restaurant was a level 0.5. These colorful fryums in the shapes of stars and wheels were a fun way to start. They start as dehydrated flour and starch shapes that pouf up when they hit hot oil like Asian shrimp chips. Working on the entree post. Tip 1: This restaurant only serves dinner. Look for the elephant on the east side of Third Avenue for this restaurant, which is the last shot. Tip 2: I would have asked to save the fried garlic for the entree round. The condiments are carefully curated and pair though. NB: This is not a help yourself All You Can Eat Restaurant. Everything is brought to the table. Matter of Fact Mapo Tofu 🇨🇳 The Chen Du Tian Fu stall at the OG Golden Mall makes a textbook Mapo Tofu, which means swimming in a slick of bright red chili oil, mala spicy from the Sichuan peppercorns, fermented black bean, and fresh raw scallions. I think there might have been ground pork too. Please note that the order of rice is an extra cost. The dish’s name translates as Tofu from the Granny with the Pockmarked Face, who is purportedly the description of the inventor of this dish years ago. While the dish name may be insensitive by our standards, for others, it is just a matter of fact description without any malice. Another controversy is because of the natural phyto estrogen in soy, which is used to make tofu, my foodie Father is very adamant of not eating any such dish that would purposely unbalance his system without good reason. Some say that the amount of estrogen from consuming soy product has a negligible impact on men. Tortilla Española Con Espinaca 🇪🇸 This is my triangular pincho de tortilla portion from @fireflynewyork, which I grabbed for breakfast. While she does serve the traditional potato and egg version, the spinach called out to me. This is the first time I have seen one with spinach so I am unsure if this is typical or a riff on s classic. It definitely filled a hole. Pizza! Pizza! = Gone! Gone! 🍕 2 sell outs at the Detroit style Pizza Pop Up by @serhan_ayhan at @bostonpizzagram on a rainy Sunday. What’s so appealing about this style pizza? Hallmarks are the crispy lacey edge of cheese, frico like, due to the sloped pizza pan edges; Sicilian square shape; more fluffy than chewy dough; cheese blend that provides a glossy blanket atop of the slightly sweet tomato sauce; and a crunchy but not oily bottom. Each was successfully achieved in the two choices available— Cheese with a fresh Basil leaf and “Pepperoni,” which was sujuk. Living in a neighborhood with a Turkish community, I am familiar with sujuk or sucuk, which is a spicy Turkish sausage generally flavored with cumin, red pepper powder, garlic, sumac, and pepper and made with beef or lamb due to dietary habits to be halal.
