i forget, have we talked about this one? i chuck some beyond meat spicy sausage into it (broiled separately usually and then cut up) and it's perf. also salad IS good with it if you can rustle one up. love me some green acidy cronch. 🥒

Caramelized Endive Galette, p. 278, Dessert Person by Claire Saffitz
This felt hella bougie to create and eat. I had never heard of endive (pronounced on-deev). Endive is extravagant because of how it's grown. Basically, you cut off all the leaves from it's first growth, which is really fast. Then, store this nubby end in cold storage for several months and force it to grow these bitter, tender, pale leaves (don't ask me about how they do it, I'm just reporting back to you, fellow Claire enthusiasts).
Make it vegan:
Butter in the pie dough = Earth Balance
Honey in the dressing = maple syrup
Egg wash = a little Just Egg I had leftover from Confetti Cake came out great, but you could use a flax egg for the inside and a little Earth Balance for the outside just as well.
You can buy vegan parmesan or you can make some yourself. I made this recipe from Minimalist Baker:
Throw all this in a food processor and whir it up into granules: ¾ cup cashews, 3 tbsp nutritional yeast, ¼ tsp garlic powder, ¾ tsp salt. Truthfully, I barely measure stuff like garlic powder and salt, just go by taste and it’ll come out great.
Matt says this feels like something you’d make as a fancy hors d'oeuvre, but it’s not very memorable and I agree. I’m glad to have tried something new though, I give this an honorary medal for making me go out and find endive (not pronounced n-dive).

i can tell my brain is kind of fried because I was reading an old Smitten Kitchen post that is based on an endive salad from somebody named Mattos and at a comment on the ~cheffy (to me) presentation of it I went "Ah yes, that's Matteo JWHJ0715. Serving an endive salad in this semi-impractical way"
