Okay so a general rule of boiling stuff is that you start root vegetables in cold water, but other veggies go right into already boiling water. And for some reason, the phrase "eggs are therefore a root vegetable" will not leave me alone.

Jammy Tomato Egg
A flavourful indulgence on a Sunday morning, this Jammy Tomato Egg will bring colour and taste to a grey and rainy day! Have a good one!
Ingredients (serves 1):
2 tablespoons olive oil
1/4 large onion
1/4 red Bell Pepper
1/3 red hot chili pepper
2 medium ripe tomatoes, rinsed
1/4 teaspoon fleur de sel or sea salt flakes
1/4 teaspoon freshly cracked black pepper
1/4 teaspoon Piment d'Espelette or Cayenne Pepper
1/2 tablespoon caster sugar
a small bunch Garden Parsley聽
1 large egg
a pinch of fleur de sel or sea salt flakes and Piment d'Espelette or Cayenne Pepper
Heat olive oil an egg dish over a medium-high heat on the stove.
Finely chop onion, and add to the dish. Fry, a couple of minutes.
Finely chop Bell Pepper, and stir into the dish. Cook, a couple of minutes more, until softened.
Thinly slice hot chili pepper, and stir it in as well.
Roughly dice tomatoes, and stir them into the dish, mixing well with onion and peppers. Reduce heat to medium. Cook, stirring often, until tomatoes collapse into a chunky sauce. Season with fleur de sel, black pepper and Piment d'Espelette. Cook, another couple of minutes.
Stir in caster sugar until completely dissolved.
Finely chop Garden Parsley, and stir half of it into the dish.
Make a well in the tomato sauce, and break in the egg. Cook, until the white is set and the yolk is still runny, 5 to 7 minutes. Season with a pinch of fleur de sel and Piment d'Espelette.
Enjoy Jammy Tomato Egg hot, sprinkled with remaining Parsley, with toasted bread.
