Sticky Coconut Chicken and Rice
Recipe by Kay Chun This comforting one-pot chicken dish features fragrant coconut rice infused with aromatic ginger, garlic and scallion, and studded with toasty cashews. The cashews soften as the rice steams, adding subtle nuttiness to the dish. Chicken thighs absorb the coconut milk as they cook, which keeps the meat tender and juicy. Fresh chopped cilantro brightens the dish, while hot sauce adds nice heat and tang to balance the creamy, rich and slightly sweet rice.
Yield: 4 servings
Time: 45 minutes
Ingredients
1 1/2 pound boneless, skinless chicken thighs, each thigh cut into 2 equal-size pieces
1/4 cup neutral oil, such as canola or safflower
2 teaspoons kosher salt (such as Diamond Crystal), separated
1/2 teaspoons black pepper, separated
2 tablespoons minced fresh ginger
1 tablespoon minced garlic
1 1/2 cups short-grain white rice, rinsed until water runs clear
1 3/4 low-sodium chicken broth
1 (13.5 ounce) can full-fat coconut milk
1 yellow bell pepper, cored, seeded, and chopped into 1/2-inch pieces
1/2 cup roasted cashews, coarsely chopped
3 scallions, green and white parts, thinly sliced
2 tablespoons coarsely chopped cilantro
Hot sauce for serving
Preparation Step 1 Heat oven to 375 degrees. Rub chicken with 1 tablespoon of oil and season with 1 teaspoon of salt and 1/4 teaspoon of pepper. Step 2 In a large Dutch oven, heat 2 tablespoons of the oil over medium heat. Working in two batched, brown the chicken, turning halfway, until no longer pink, around 5 minutes per batch. Transfer to a plate. Step 3 Add the remaining 1 tablespoon of oil, the ginger, and the garlic to the empty pot, and stir until fragrant, 30 seconds. Add rice and stir until evenly coated in the oil. Add broth, coconut milk, bell pepper, cashews, scallions, and the remaining 1 teaspoon of salt and 1/4 teaspoon pepper. Stir to lift up any browned bits on the bottom of the pot. Arrange chicken on top, add any accumulated juices from the plate, and bring to a boil over high heat. Step 4 Cover and bake until all of the liquid is absorbed, rice is tender, and chicken is cooked through, about 25 minutes. Scatter cilantro over chicken and rice, and serve with hot sauce.

I had big plans to go shopping today. Wha-hoo! A day out on the town at Trader Joe’s! The snow was pouring down, so I bundled up, turned on the car, cleaned off the snow, then had a good look at the road. Why was I going to Trader Joe’s again? Boxed mac and cheese for Ethan? Any other urgent item that I absolutely must go out in this weather for? I turned off the car and came inside.
What better time to make my madeleines, I thought. I used a no-fuss, highly simple recipe, but perfect in every way, including the orange zest rubbed into the sugar with my fingertips, the oils of the zest permeating the sugar. What a wonderful aroma.

The recipe makes exactly 12 cookies, which is how many molds are in the tray. A lovely afternoon treat to have with my tea, as the snow came down. “Money pouring from the sky,” as Ethan put it. He kept looking longingly out the window as he tried to concentrate on his school work. Finally, when school check-in time was over, he put on his snow pants and coat, grabbed the shovel, and off he went. He came home two hours later with $85. Not a bad day’s work for a 16-year-old. Billy and I ran into him in the road while out on our walk. By then it was raining. My old snow boots will not zipper up, and my back-up boots are not water-proof, as I discovered while sloshing around in the muck through the neighborhood.
Looking forward to more snow, and more walks in the snow. With better boots.

Medieval Hummus
Recipe by Lucien Zayan Adapted by Ligaya Mishan The roots of this recipe, an ancestor of modern hummus, date back at least as far as the 13th century, as the Iraqi food historian Nawal Nasrallah writes on her blog, My Iraqi Kitchen. As adapted by Lucien Zayan, a Frenchman of Egyptian and Syrian descent who runs the Invisible Dog Art Center in Brooklyn, you boil chickpeas until their skins loosen and they reveal themselves, tender little hulks with souls of butter. Then you mash them in a swirl of tahini, olive oil, vinegar, spices and herbs, and fold in a crush of nuts, seeds and preserved lemon, sour-bright and tasting of aged sun. Notably absent from the recipe is garlic. Here, instead, the nuts — Mr. Zayan uses hazelnuts, for more butteriness, and pistachios, with their hint of camphor — fortify the chickpeas in their earthy heft, so close to the richness of meat.
Time: 30 minutes
Yield: about 4.5 cups
Ingredients:
1/3 cup raw hazelnuts
1 1/2 tablespoons caraway seeds
1 tablespoons coriander seeds
1 1/2 teaspoons sesame seeds
1/4 cup shelled, roasted unsalted pistachios
5 mint leaves
1 small sprig tarragon, leaves only
3 1/2 cups cooked, drained chickpeas (two 15-ounce cans or homemade from 8 ounces dried chickpeas)
1/2 cup tahini
1/4 cup olive oil, plus more for drizzling
2 tablespoons fresh lemon juice, plus more to taste*
1/2 tablespoon ground sumac, plus more for sprinkling
1 1/2 teaspoons rice vinegar
Salt
1/2 cup ice-cold water
*Tip: Instead of lemon juice, Lucien Zayan uses half of a preserved lemon (preferably made with minimal salt) and adds a splash of its liquid along with the ice water.
Preparation Step 1 In a small skillet over medium-low heat, toast the hazelnuts, stirring occasionally, until fragrant and the skins begin to split, 3 to 4 minutes. Then transfer to a plate lined with a paper towel. When cool, gently rub off the skins and discard. Step 2 Using the same pan, toast the caraway, coriander, and sesame seeds, stirring occasionally, until fragrant, about 2 minutes. Remove from heat to cool slightly (seeds will continue to toast). Step 3 Add the toasted hazelnuts and the pistachios to a food processor and pulse until they release their oils and make a compact paste. Add the mint and tarragon and pulse to combine. Step 4 Add the chickpeas to the mixture in the food processor, reserving a handful for garnish. Then add the tahini, olive oil, lemon juice, the toasted seeds, sumac, rice vinegar, and a pinch of salt. Start pulsing and gradually add the ice water, splash by splash, until creamy and smooth. Taste and add more lemon juice or salt, as desired. Serve drizzled with olive oil, dusted with sumac, and finish with a few chickpeas on top.
