Received a very large bushel of beautiful ripe red tomatoes freshly picked from the fields and I'll be damned if they go to waste so I've been subjecting my family to all manner of tomato dishes and they complain about the tomatoes but I know I live in a house of hypocrites because the bruschetta I made disappeared before my very eyes!!!

leveled up my customary struggle meal of nachos (chips, cheese, salsa, beans if i have them already opened) tonight by doing something at random that took longer time-wise but had about the same amount of effort
ingredients:
what's left of a veggie tray
a single serve tub of hummus I bought in a six pack and don't know what to do with bc it turns out i don't like hummus as a veggie dip
olive oil
some herbs
leftover cooked chicken
the end
dump what's left of a veggie tray about to spoil onto a sheet pan
drizzle with oil and some herbs (italian ones? are peppers herbs? pick what you like on veggies okay) and roast until they smell good: about 30-40 min at 425F-ish
i didn't remember to turn on the oven first but you probably will if you read all the way through before starting (do people do this)
put some cooked chicken in a bowl
add the roasted veggies and the hummus and mix it all up (actually did this in a microwavable glass tupperware thing so i could shake it with the lid on instead of stirring)
(this step is only necessary because my chicken was frozen cooked chicken strips: microwave for one minute)
eat
my other struggle meal is literally dump a can of tomatoes and a can of white beans or chickpeas and a box of gluten-free gnocchi on a sheet pan, drizzle with oil and seasoned salt, add garlic however you want (sometimes all we have is garlic powder and that's okay), and roast for like 25 min at 425F-ish. if there's kale or spinach i throw that in the bowl before adding the gnocchi so it wilts. generally makes about 2-4 meals, is good with feta or parmesan on top
btw my standards for a struggle meal are: no chopping or slicing, minimal standing, only have to set one timer. but the timer isn't a hard and fast rule bc i tend to cook until it smells too good not to eat right out of the pan bc i can ignore any timer but can't resist good-smelling food
