🌿Our high raw lunch plus vegan goodies from Malaysia VegFest by @veghubmy .🌿 The other day we had: 🥗Big raw vegan salad with Brazilian Maca dressing (dressing recipe by @rawintuition) Maca powder from @organicule of course 😀👍 Salad had 3 kinds of lettuce, jackfruit, yellow capsicum, tomatoes, tempeh, natto, seaweed, mool kimchi, mung bean sprouts, green lentil sprouts, goji berries 🥟Spicy Mala dumplings from @justvegan.my 🌱Edamame from @veggies.my (use code CHEFYIN for savings 💰) 🍅We also tried out the vegan omelette mix from @devspice - added tomato, yellow capsicum, spring onions and coriander into the omelette. Since I don’t have a working stove, I made it in the toaster oven instead, haha. Seasoned it with @devspice crazy salt. Where’s the best vegan dumplings you’ve had? Homemade Taco Cups by @elavegan Ingredients -6 tortillas (regular or gluten-free) about 15 cm in diameter -1 tbsp vegetable oil -1 onion, chopped -2 cloves of garlic, minced -3 cups cooked lentils (*see recipe notes) -1 cup chopped bell pepper (color of your choice) -1 cup chopped cherry tomatoes -Spice mixture: 2 tsp onion powder, 1 tsp ground cumin, 1 tsp turmeric, 1/2 tsp smoked paprika, 1/2 tsp brown sugar, 1/4 tsp red pepper flakes, salt and pepper to taste -1 tbsp soy sauce (gluten-free if necessary) -1/2 tbsp balsamic vinegar -1/3 cup plant-based milk or cream -3 tbsp tomato paste -Vegan cheese sauce or cheese of choice (to taste) Instructions Put tortillas in heat-resistant bowls and bake them in the oven at 390° Fahrenheit for about 15 minutes until they are lightly browned. The taco cups will firm up after they cooled down. In the meantime, chop the vegetables. Heat oil in a frying pan, add the onion and fry for about 1-2 minutes. Add garlic and bell pepper and fry over medium heat for about 3-5 minutes. Add all the other ingredients (except cheese sauce) and fry for a further 3-4 minutes. Put the filling into the taco cups, add vegan cheese sauce and fresh herbs (optional) on top. You can reheat the taco cups in the oven. I'm not a gyoza fan but this truffle gyoza by @omnipork.hk is really amazing that I bought a few boxes after I've tried it for the first time. It has a really strong truffle taste and smell, you would definitely love it if you're a fan of truffle food. “Har Gow’s It?” Uncle is very fond of the food truck family that he’s gotten to know. Today, The Rolling Pin was at Grid AKL, Madden St, Viaduct where General Collective was having a Christmas market. I had the vegan Buddha’s Delight dumplings which has a filling of tofu, shitake, pumpkin, bokchoy & cabbage, served with Asian slaw, with a piquant soy vinegar dressing topped with fried shallots and crushed peanuts. Vegan Dumplings! How to start making them ☺️🙏-
- 1) Dumpling Wrappers—> •250g All Purpose Flour •160ml Water •1/2 tsp Salt -  Mix together all ingredients and knead dough until you feel it soften. Cover it and leave it for 30 minutes and it’ll become even softer. Then knead it for 5 minutes and then you can roll it out! Roll out with some extra flour, just a little so they’re not powdery. Roll thin and I use a cookie cutter for the circles, you could use a glass or a jar. - - I recommend storing the extra ones you make (because just this amount of dough makes loads) in the freezer, pre-rolled and cut, between parchment to stop them sticking. - 2) Mushroom and Tofu Filling- This is the filling I made this time, but you can fill them with anything. I used both firm and medium firm tofu, 50g of each so… -100g Tofu -15g Spring Onion -30g Spinach -40g Button Mushrooms -45g Chestnut Mushrooms -20g Kale -8ml Soy Sauce -5g Nutritional Yeast -Finely chop everything and cook in a pan, stirring regularly. . . 3) Filling the Dumplings! I used a teaspoon of filling for each. Place a wrapper in your hand, fill the centre with the filling. Then wet the edges of the circle slightly and fold together. Here for the photo I just did them folded normally since it’s absolutely the easiest way to do it, but once you’re used to it you can do it differently and even fold it as you close it (as pictured). - The ones I made this way were 41.42kcal each.
