The Dinner Diaries Day 6 - Improvement (French toast and poached sea bass; 1 spoon each)
Minor improvement today, in that I produced two actual meals! At least part of it was my desperately wanting a treat, and deciding to go for French toast. I used to make my French toast incredibly basic, but I decided to play around with the "milk / egg / bread / fry / drown in maple syrup" model that my parents taught me. Now, most of the recipes I'm finding for French toast are for multiple people; I'm going to provide my recipe for one. Well, technically French toast and bacon, but ... well, I'll get to that in notes.
Here's what you'll need:
4-6 slices bacon
2-3 slices of bread
1 large egg
3-4 tablespoons milk
Little splash of vanilla extract
Pinch of cinnamon
Pinch of brown sugar
1/4 teaspoon granulated sugar
Now, bacon's good in and of itself, but it also produces enough bacon grease to cook the French toast in, adding a richness to the flavour. But if you're a vegetarian, or can't eat pork for some other reason, just ignore the bacon step and use a teaspoon or two of vegetable oil, or a pat of butter, for frying.
Here's what you do:
Fry your bacon; when crispy, remove from pan and set aside on paper towel (or, if skipping the bacon, add vegetable oil / butter to pan and heat
Add egg, milk, vanilla, cinnamon, and both sugars to a bowl; whisk well
Dip bread into the egg mixture; drop into hot pan for 3-5 minutes or until golden brown on both sides
Serve (with bacon if made)
So that was my brunch. Fairly late brunch, but brunch regardless.
After that, I had plans for clearing various of the meats out of my freezer. I had sea bass, and I decided to do something fairly simple with that. I could have just baked it, but I decided to poach it instead. Hence, recipe the second.
Here's what you'll need:
2 sea bass fillets (or other white fish)
3 cups vegetable stock
1 onion, sliced
4-6 cloves garlic, minced
1-2 tablespoons lemon juice
Seasonings to taste
For the seasonings, I stuck with celery salt, garlic pepper, and a couple of chilli flakes, but like most things, it's all down to what you like. I tend to tart it up a bit because when I was a kid, my mother used to poach fish in nothing but water, a slice of lemon and some celery, and I like something a little livelier. Hence the vegetable stock.
Here's what you do:
In a deep frying pan, bring vegetable stock, onion, garlic, and lemon juice to the boil
Add sea bass fillets; reduce heat and simmer on medium heat for about 10 minutes.
This one's best with rice, because it can absorb the flavoured-up broth, but I couldn't be bothered with boiling rice today so I went with a baked potato instead. Though I did add some frozen broccoli to the pan while poaching the fish, which gave that a nice flavour too. So maybe add whatever veg you're having with the meal to the stock as well.
Honestly, given I was dragged out of bed way earlier than I wanted to be (workmen put up scaffolding right out side my windows and the management company did not warn me about this, which is irritating), managing two meals when underslept and cranky is some kind of miracle. Still, zero-spoon recipes make the miraculous possible, so it's good to have a large collection of those.
Snack midway between those meals involved a can of peaches.

EATING.
So I’ve been struggling to make/follow some sort of an eating routine for about 20 years. I’ve researched this topic til my eyes bled [not literally], and I’ve tried many different [usually too complicated] ways of eating ‘enough food’. Last year I started the process again, only this time, I wrote out a list of food I actually like eating. Then, I figured out (this week) what groups those foods fall into, and how many of each I have to eat to just... be healthy and feel good.
Once I figured that out, I learned what a serving portion is, because LEMME TELLYA, I have not been doing that correctly. A serving size, for me, was however much I could stuff in til I didn’t have any left.
Going back to all those years of trying, I made SO MANY CHARTS. I tried like 5 different apps, doing different things, and generally not really feeling like I was doing it for me; I was reporting to some faceless AI that kept trying to get money from me. I’d make these beautiful charts with precise lines and pretty fonts and wonderfully artful crafted images... and not much of it worked.
Tonight I said  Fuck this, and I scribbled out this thing

I got my fruits, veg, fortified soy, grains, water, and weekly proteins on there. I filled in what I ate today (I’ve since had 2 more cups of water). I’ve eaten more today than I’ve been eating daily for the past 4 YEARS AT LEAST... and I still haven’t made it up there. Baby steps. I’m not sure if/how I’m going to keep track of when I succeed at having all the food and water I should be in a day, but for now, I am doing Something. IDK if this will stick, IDK if this will WORK. But for now I’m trying and this seems the closest to succeeding.
I think I gotta set myself a goal. Like... 90% of my daily food intake for a month or something to start with. I’ll work on that later.
Even if it’s just like this for the next forever. I’m gonna be okay.

Elimination Diet tips
I’ve been on a strict elimination diet for several weeks now, in order to try and figure out what I’m reacting to. Here are a few tips and tricks I learned along the way, as someone who is also gluten intolerant and dairy intolerant, which further limited what I could eat.
1. Baby food.
I have to make nearly everything from scratch during this diet, because everything has additives in these days, even table salt (anti-caking agents). I was only allowed to eat one fruit at the most extreme stage of the diet -- pears. And they had to be both peeled and cooked. I was not allowed to eat tinned pears if they were in juice, only in syrup. Unfortunately, tinned fruit in syrup has gone out of fashion and I couldn’t get it anywhere. It meant I was prepping and stewing fruit every few days. Finally, I discovered that baby food has no additives, and there was a pear option. It meant that on days I was just too damn fed up, I could take at least one shortcut and not have to cook my own damn 2-serves-a-day of pears.
2. Lunch bowls.
Lunch was hard at first -- there was a such a weird mix of veges on the list of allowed foods, many of which didn’t obviously go together, and I had no condiments or sauces, and only sea salt as a spice. I also only had butter and ghee as a fat, which I didn’t want to overdo. Now if you can eat wheat and dairy, lunches even on an elimination diet probably aren’t that hard, but I struggled. I did make some rice-paper rolls, which were good. But my go-to ended up being warm-salad bowls. I’d chop up some iceberg lettuce, celery, and mung bean sprouts, and add a couple of spoons of warm rice. I’d pan fry or poach a protein with some salt, along with a couple of the alliums I was allowed to have (garlic powder, leeks, chives, or shallots). The warm food and a bit of the cooking liquid would become the salad dressing, and it was pretty tasty, while also filling my requirement for 2 cups of veg.
3. Celery as a cooked green.
Celery was one of the few greens on the allowed list. I ate it a lot in salads, and I used the leaves as well as the stalks. I was pretty desperate for leafy things, as my only other option was iceberg lettuce. However, I also started making a dish my nan taught me, and I’d forgotten about - celery in white sauce. Cook the celery in enough water to make a sauce. Once the celery is tender and while still hot, stir in a slurry of tapioca flour (or cornflour if you’re not GF), milk powder, and salt. Cook for another minute or two until the sauce is fully thickened. This is surprisingly delicious, and also provides a gravy, which I really needed for some meals. If you’re dairy intolerant, you may find a small amount of butter, milk powder, or sweetened condensed milk don’t trigger a reaction, so this recipe might be worth a try. Of course, don’t try if you’re actually allergic.
4. Potato and swede mash.
Instead of just plain mashed potatoes, I’d usually make potato and swede mash. My diet is so limited, I want to include as many of the very few options I had each day, to maximise the vitamins and minerals I was getting. The secret to this mash is to either cook the swede for a few minutes before adding the potato, or grating the swede so it’s very small and chopping the potato into small cubes, as the swede takes a bit longer to cook. Because I wanted to limit the amount of butter I was eating, I’d make this with just garlic powder, salt and soy milk, and maybe some chives and a sprinkle of parsley. It ended up creamy enough to be good. I often make a bit extra so I can pan fry the leftovers for a meal the next day, along with some celery, alliums and a protein.
5. Potato chips can be used as a breadcrumb replacement.
Plain potato chips are allowed on the diet (in moderation), and when I wanted to make crumbed chicken one night, I used crushed potato chips. I dipped the chicken into rice flour, then beaten egg, then the crushed chips, and it worked well. Not quite as nice as breadcrumbs, but acceptable.
6. Psyllium is a thickener.
I was instructed to eat psyllium to replace all the fibre that had been removed from my diet. I didn’t know this beforehand, but psyllium is a thickener. I mostly added it to things like stewed fruit, or porridge. I got into the habit of making these things with more water than usual, to account for the extra thickening the psyllium created. It actually has a very slightly spicy taste, like a pale echo of cinnamon or nutmeg, so it works well with fruit.
7. Vitamins are really important!
About halfway through the most restrictive stretch of the diet, I had a few days where I felt really, really bad -- foggy and slow and with no energy. I was already taking a multivitamin, but realised I was probably not getting enough, so I doubled what I was taking -- doing so was still within the safe dosage. I immediately felt much better. I would have contacted my dietician if that hadn’t worked, but if you experience this, it might be worth trying the same thing if the dosage is safe.
8. Desserts.
Even though I’m required to eat every two to three hours for this diet. I also do an hour or so of exercise a day, so there were days I was still hungry at supper time. Deserts are one of the easiest things to make on this diet, because sugar is allowed. Here are some that are easy and good.
soy custard (I make this by eye, but it’s about 3 cups milk, 1 egg, 2-3 tablespoons tapioca flour, vanilla, cooked on a low to moderate heat on the stove until thick, stirring throughout),
soy baked custard (4 eggs, 3 cups soy milk, pinch salt, vanilla, baked in a water bath for 1 hour at 170c),
soy rice pudding (1/3 cup rice and 1/3 cup sugar to 1 litre milk, and vanilla, baked for an hour at 170c, stirring every 15 mins), and
soy tapioca pudding (1/3 cup tapioca balls, 1/3 cup sugar to 3 cups milk, and vanilla, cooked on a low to moderate heat on the stove until thick, stirring regularly).
All of these are things I make occasionally anyway, and also work with cow and coconut milk. I also tried and enjoyed:
Buckwheat pancakes (1 cup buckwheat flour to around 1 cup soy milk, 1 teaspoon baking powder, and a pinch of salt). I usually use chickpea flour for this recipe, but that was off the menu, and buckwheat worked just the same.
Cashew nut brittle - I just did this once, and it’s not something I plan to make often, but it was nice when I was really desperate. Toast the cashews lightly in the oven or a pan on the stove. Cook toffee (look up a recipe online for this), and pour over the cashews on non-stick baking paper in a heatproof tray.
This is just a sample of things I’ve tried. A lot of the other things I’ve eaten on this diet are variations on my usual - roasted veges, roast chicken, stir fries, slow cooker soups and stews. There have been a few disasters along the way, but mostly it hasn’t been too bad. Better than I expected, to be honest.
The thing I miss most? Probably oil. I’m tired of butter and want a proper salad dressing.

I am in no way qualified to say this, but as someone who has had bulimia for eight years and has only now made any recovery progress that feels real to me, here are the things I've found helpful and unhelpful.
Helpful:
If I want more anything after a planned meal or snack, I say "okay, I can have more of x at my next meal" and at night, when I'm most prone to binging, I say "okay, I can more in the morning". If allowing yourself more than a planned meal leads to a binge, trick your brain. I never actually more of whatever it is, I just want an excuse to eat more.
Pay attention to what you're eating while eating it, and eat slowly. You will be more satisfied with your meal
Have hobbies. Don't have hobbies? Try something new. You're going to need something to fill the time your ed took up
Eat at the same time every day, and plan what your going to eat the day before. You've been going "all in" too long and you need to get some structure before you can eat completely normally.
Lunch is the hardest meal for me because I'm in college and I haven't eaten lunch since 4th grade, so my advice is to find a mom that packs lunches online and copy her.
Prepackaged meals are fine if that's what you need to do at first (I know it's terrible for my health, especially because bulimia has already permanently damaged my heart, but ramen with tofu and added veg has become a go-to dinner)
Find things that your grateful for each day, and acknowledge them to yourself. You will be happier, even if it sounds ridiculous.
Eating 3 meals and 2-3 snacks a day. It makes sure I eat enough before dinner to not binge

Unhelpful
I'm going to rip the band-aid off and say it: HAES. It's disgusting that it's infiltrating ed recovery spaces, and extremely dangerous. So many MORE people struggle with BED than anorexia, and I've seen so many people swing from anorexia to binge eating disorder because of this terrible movement. Being obese is unhealthy, just like being underweight is unhealthy. Both are clear indicators of at the very least extremely disturbed eating, and at worst deadly. I can't trust any source that uses HAES beliefs.
The idea that restaurant sizes are indicative of regular sized meals. I live in the US, so that is incredibly false. Most restaurants here serve 2-3 regular sized meals on one plate. If you need help with sizes, go on recipes and portion it out according to their servings, or look up what the serving size is of each part of your meal

Another week when I had to bite the bullet and make myself step on the scales. I'm glad I did. The result wasn't as bad as I thought it would be.
169.6lb.
I started blogging on Sept 9th and I am 2lb lighter since then. I had hoped it'd be at least four times that. It's better than being heavier of course, so positivity only in my head. If I say that often enough, I'll believe it. I shouldn't give the numbers on the scales such power over me. I know better! Non scales victories,or NSVs, are so much healthier, but that's easily said. An NSV, for the uninitiated, is anything that denotes weight loss without looking at actual weight. Great examples are being able to climb stairs without getting so puffed, putting your socks on without having to sit down or going down a size. All good stuff and not scales dependant.
I think a round up of the good things about last week would help. While not perfect, it started in an exceptional manner and was good in many ways. I ran twice. I ate far less processed food. I bought no sweets at all and my bread intake was less than it has been of late (see less processed food eaten above) I got through Saturday and Sunday without buying ice cream, crisps or marshmallows to chomp mindlessly mid afternoon in front of the telly. All good stuff to build upon.
I finally told someone about Manchester! Eek! It's out there now. In a very minor way, yes, but someone else actually knows. I didn't say it to his face, but sent him a message.
"If someone could run 5k in about 33 mins, and they foolishly signed up to Manchester marathon, but haven't told anyone, even their partner, and they were going to be running 5k every day in December anyway, would you be able to do a plan for them? Asking for a friend."
He said my friend was nuts, but he's very good. He's going to do me a plan starting next week!
Plans for after work today to keep me on track for an A+ start to the week are attending a hill session at club and cooking a lentil and root veg stew. I should have time to start it cooking before going running.
200g green lentils
2 or 3 large onions, chopped
3 or 4 large carrots, diced
1kg red skinned potatoes, diced
Salt, pepper and dried mixed herbs to taste
Sweat lentils with onions and a little water for about five minutes. Add the rest of the veg and some water to just cover them. Add seasoning to taste. I've said it before, but go easy on the salt. I'm far too prone to be heavy handed. A little at a time. It's easy to add more, but impossible to remove excess. Cook till lentils are tender and the veg are at a prefered level of soft. I love it to all cook in together, potatoes practically melted in.
This is great coz you can add other veg, like turnip or parsnip, as you like. I've mentioned that I'm basically greedy, so I can easily eat half of this recipe, slowly I'll grant you, In one sitting. I think that's about twice what a different person would eat. The basic recipe, divided into four, works out at approx 300 cals per serving. So low cal, but uber nutritious. A fave of mine. Versatile too. Leave out the spuds and just cook down the lentils, onions and carrots, and it's a savoury "mince" that you could make into a pie, or top with mashed potato for a cottage pie.

Hi Sarah! You seem to be quite enthusiastic and well informed about cooking, and I was wondering if you had any tips for students at uni? I feel it's so difficult to keep a healthy diet and cook for yourself on a low budget. Do you have any good recipes you could share? Or ideas? Thank you so much if you are able to answer, no worries if you don't feel like it.
This is...kind of a difficult question to answer, given that I approach cooking as a decadent, pleasurable thing, rather than something functional. (Some people shop online when they want to splurge. I make 48 coconut macaroons hand-shaped and dipped in chocolate, and a parmesan-garlic cream sauce to drizzle over my steamed brussel sprouts.) If all I need to do is consume calories, I’m much more likely to cut corners---seriously, store-bought sauces, simmer pastes, and salad dressings are a godsend---or buy something convenient. I could probably survive on deli sandwiches, if I really put my mind to it.
However, I do want to suggest a couple tips I think are helpful:
1) Know what you like, know what you need.
What it says, because food is always a balancing act between getting the kinds of nutrients your physical, calorie-consuming body needs and the sugar/salt/fats you want. Personally, I will eat literally anything if there’s bread or cheese or both involved. (This is not a joke---I have eaten a lot of creamed spinach and deli sandwiches.) However, having discussed my diet with healthcare professionals, I know what I need is proteins and vitamin d. So when I’m preparing my schedule for the week, I force myself to think about both: what will I eat, what should I eat, what can I make that satisfies the difference? And then, what’s my timing? (i.e., do I need to stay late at work? do I have other plans that night?) 
Like everything with my life, I review it vaguely sometime Monday and plan out my week. Though I do know enough about myself to build in some flexibility, because sometimes a bitch is walking home desperate for a burger, and shouldn’t have to apologize.
2) Google with abandon.
I do not have any private store of family recipes. My mother was a functional cook, and my grandmothers were either of the “hors d'oeuvres and martinis” generation or the “jello(tm) with colorful sprinkles is an actual dessert” generation. (The difference there, by the way, is class. But that’s a whole other tumblr post.) The point is that at the end of the day, there’s no secret treasure trove of recipes for me to delve into.
Which means I google everything. Every recipe I post here, every time I have spare ingredients I’m looking to get rid of. “Unsweetened chocolate recipes” is one of my latest searches, because I accidentally bought 4 oz of it instead of semi-sweet and don’t know what to do. (I’ll probably end up make brownies.) I have also googled in the last few months:
Reduced milk recipe
Quinoa recipe
Bean recipe
Dark corn syrup recipe
Pie crust recipe 
Apple pie recipe
Scallion pancake recipe
The point is, just because you don’t know what to do shouldn’t keep you from making good food! Personally, I love Epicurious, and always check their suggestions first, but the internet is wide and deep and full of people who will suggest cooking times, oven temperature, and spices you can add to stuff to make it taste good. Don’t be afraid to scroll through 4 different recipes on different domains, even if it’s the same dish; or to add “simple” to you search terms. You have more cookery knowledge at your clumsy fingertips than anyone before us ever has---use it.
3) Store it, freeze it, stick it in a tupperware.
As someone who’s now been cooking for herself for at least 5 years, I am here to tell you that there’s no “cooking for one.” Cooking for one is a lie. What you do is cook for 3-4 people, and then freeze or refrigerate the leftovers. So it’s important to consider how well your various ingredients freeze and how you’ll reheat them when the time comes.
Meat and seafood freeze well when you get them from the grocery store! Unfortunately, if you cook something or marinate it, and leave it to sit in the fridge, it will get very tough or break down entirely. (This is especially true if you use a particularly acidic marinade.) Unless you get them already frozen, fruits and vegetables do not freeze well at all—water expands as it freezes, and your fresh fruit & veg are so watery that the ice completely ruins the cellulose structure and defrosting will make them mushy. If you have leftover cooked vegetables, those should be used in scrambled eggs or eaten with a sauce within the week. Cream-based soups and sauces freeze pretty nicely, you just have to be careful not to leave them long enough to get freezer burn. Freezing bread arrests the yeast and mold processes, so if you’re looking to keep your loaf from turning, stick it in the freezer in an airtight bag.
(I haven’t had a microwave in two years, so most of what I make is the kind of stuff I can reheat on the stove—or eat cold!)
Also, most food isn’t ruined by temperature---you can leave a lot of stuff out on the counter after cooking without fear of bacteria. However, too much exposure to the air will ruin just about any dish: creams curdle, meat toughens, vegetables soften, starches harden. If you’re going to store something at room temperature, stick it in a ziploc bag, plastic wrap, or aluminum foil quickly, and it’ll last longer even without the refrigerator.
4) Occasionally, try something new.
Obviously, as a uni student you should try lots of new things---but as a uni student cooking for yourself, I encourage you to occasionally experiment. Make bread, if you’ve never made bread before; try a desert if you’ve been focused on single-serving chicken breasts. Once every few months, try cooking or baking something you’ve absolutely never tried. (For hard mode, pick something completely out of the ballpark---for example, a couple months ago I tried to make a meringue and failed miserably. But I think I understand why I failed and that’s made me a better cook in the interim.)
It is, of course, very important that we eat in a way that serves our body and its needs. But at the same time, making food has always struck me as serving more than just need---we make food to show our love and appreciation for others (isn’t feeding an act of service?), to articulate desires we can’t verbalize, to satisfy unreasonable cravings, to demonstrate capability, to prove our worthiness, to offer something that isn’t-sex-but-is, etc. etc. etc. Food is very rarely ever just food. Which means that sometimes, we should sequester ourselves in the kitchen and see if we can make that....thing from the Great British Bakeoff.
As a footnote, I hope my coworkers enjoy haphazardly baked alaska.

Brave Part 18-Finale.

Notes: Alright this is it. My one-shot smut turned into an 18-Part monster and now it’s done! Don’t worry, there’ll be a new Lin x Reader next week-I’m sort of addicted. Thank you to everyone who read even just one part.
“I guess I’m joining Amazon Prime”, you joke grimly as lin holds the door open for you. “Eeesh, sorry about that.”, he apologises. Your Christmas shopping had been cut short because of a stream or selfie-needing fans. It was just getting to the stage where you couldn’t walk 10 feet without Lin getting stopped. “It’s not your fault, I’ll figure it out”, you say. “At least we both got our secret Santa presents for Fake Christmas tomorrow”. “Yup, and I already got your gift last month”, Lin says smugly. “Last month?! That is waaaay organised”, you say. “Just, saw a thing and thought of you”, he says. You touch the necklace nestled at your throat, the last “saw this and thought of you” gift he’s gotten you. He catches you doing it and you both smile.
“Well you’ve a good record with those things”, you say with a wink. “Alright what’s left to do before tomorrow?”, Lin asks. “Prep vegetables, wrap secret Santa presents. Figure out where the Cards Against Humanity got stashed”, you groan. “Ok well it’s 4, how ‘bout we prep the veg now, with Muppets Christmas Carol on, then eat take out?”, he suggests. “Yes! And we’ll look for the game tomorrow-no one is coming until 3 anyway”, you say. Lin holds out his fist for a bump and starts pulling potatoes and veggies out of the fridge. “I don’t have to stuff a turkey, right?”, he asks suddenly, anxiously. “No”, you laugh “it’s a pre done thingy you just bang in the oven for an hour”. “Thank god.”.

An hour later, still chopping and now wondering why you’d ever suggest having 7 people over for Christmas lunch, you belt out all the film’s songs to help ease the tedium. “After all there’s only one more sleep til Christmas!”, you practically screech and Lin giggles at your enthusiasm (or hysteria? Who can tell?). “Ok this is the one bit I don’t like about Christmas.”, you admit, flopping back on the couch dramatically. Lin chuckles and coaxes you back to work. “Come along, it’ll be worth it tomorrow when everyone loses their shit over your roast potatoes.”, he says. Grumbling, you resume and the two of you work away, pausing to cry about Tiny Tim and to sing the finale.
By 6, it’s all done and in the fridge. You wrap the secret Santa presents and place them under the tree and finally order your take out. “There’s only one thing left to do”, Lin declares. “What’s that?”. “Play Christmas songs and dance around the kitchen with a glass of mulled wine.”. You practically swoon at the suggestion after the long day, however “we’d need mulled wine for that”, you point out helpfully. Lin opens the kitchen cabinet nearest him with the flourish of a gameshow’s Glamourous Assistant. Inside is a bottle of mulled wine. “I fucking love you”, you deadpan.
“Picked it up at the airport”, he says smugly as he opens it. “The airport?! You’re flying around on secret business and you remember to get that? You are really super-prepared, it’s making me feel inadequate and nervous”, you joke. “Oh, you have no idea”, he grins. “Whaaat? What does that mean? What’ve you done?”, you ask suspiciously. “Patience, baby”, he mocks, recalling your utterance of that phrase earlier today. You actually blush at the memory, but you still want to know what he’s prepared. “Liiiiin”, you whine. Just then the door buzzes “Oops, gotta get that!”, he says as he practically skips away.
He returns proffering the Thai food you ordered. You keep the mulled wine for later since it’s a weird match for your curry. As you sit at opposite ends of the counter to eat, you wonder what present he’s got you. You’ve been so busy this last week that you haven’t had time for it to sink in that Christmas is actually here. You’ve not had chance to get excited yet, so when he’d mentioned his gift for you it just made the penny drop.
“Lin?”. “Yeah”, he replies through a mouthful of noodles. “It’s Christmas tomorrow!”, you grin. He laughs and puts down his fork. “You’re gonna get me up REAL early, aren’t ya?”, he groans. “What’s an acceptable time to get you up?”, you ask. Lin takes one look at your excited face and says “Whenever you want, love”. Your reply is just an excited squeal and he grins as he shakes his head. “Oh boy”.
You stick your tongue out at him and ask “Isn’t my enthusiasm...endearing?”. And he’s laughing again. “Alright but seriously I have a special breakfast planned, it’s a French toast bake thing that is gonna blow your mind.”, you tell him. “Then presents?”, he asks. “Then presents. What do you want to do after that?”. Lin looks slightly amused. “Oh once you’ve had your present you’ll just want to jump me, so I wouldn’t plan too much”, he deadpans. He ducks the newspaper you aim at his head.

By the time you finish your food it’s kind of been a long day, so you settle in front of the Peanuts special with the mulled wine and just enjoy being snuggled up together, Lin’s arm around your shoulder, your hand resting on his thigh. Occasionally he turns his head to leave a kiss at your temple. When the special finishes, he gets out his phone and knocks out a few Peanuts tweets and announces that it’s time to hit the sack so Santa can do his stuff.
“I just gotta make the breakfast thing, you go”, you say. “Alright, my love-see you in a bit”, he says and leaves you with a spiced-wine kiss.
You prep the breakfast and leave it in the fridge and then put the last couple of touches to your gifts. When you climb into bed beside him, he’s already fast asleep. You spoon him and whisper that you love him as you feel yourself drifting off.

You wake randomly in the night to find Lin gone from your side. You squint at the clock: 2:36. You know he’ll be in his study, writing down the thing that just can’t wait. You roll over and fall asleep long before he returns to your side.

You were half kidding about what an acceptable waking time was but apparently your body took you seriously as you wake just after 6. You creep off to the guest room to take a shower so as not to wake Lin. You pull on a soft red knit dress and curl your hair while the oven pre-heats. Once you’ve put the French toast in, it’s a much more reasonable hour. You set off a playlist of carols in the living room and go to wake your boyfriend.
You climb onto the bed and lean over to kiss him. “Merry Fake Christmas, gorgeous”, you say as he turns over to face you with a sleepy smile. Rubbing his eyes and sitting up, he says “Merry Fake Christmas to you too”. When his eyes focus he takes in your dress and gives an appreciative “Woah.”. You grin in return and tell him to get dressed while you serve up breakfast.
You’re just placing the plates on the counter when he comes into the kitchen. He’s wearing a Zelda Christmas sweater and his hair is down. He looks ridiculously cute. You tell him so. He comes over to hug you and kisses you so softly, over and over. “I love you.”, he says. “And I love you. So much”, you answer.
And so you sit down to your French toast bake, bopping in your chairs to the Christmas songs in the background. When La Vie Bohème comes on Lin grins at you. “What? Rent the movie is a Christmas movie, therefore this is a Christmas song”, you shrug defensively. “No argument from me!”, he laughs. “This is delicious by the way.”, he indicates the French toast. “Mmhmm, no argument from me!”, you laugh. You clink orange juice glasses and toast to Fake Christmasses, French toast and Rent. Then the music changes and Lin freezes. “Y/N...”, he starts, on the verge of giggles. You raise an eyebrow. “Is this...the Gremlins score?!” he asks. “CHRISTMAS MOVIE.”, you insist. “Yup, sure, sure.”, he agrees hurriedly and between laughs.
Lin sinks the rest of his orange juice. “Wanna do gifts?”, he asks, already knowing the answer. You’re out of your seat before he finishes, practically throwing the dishes into the dishwasher and then grabbing his hand and pulling him to the tree, where you’ve left his gifts. There’s just a little envelope for you, you notice.
“You first”, you say, holding out a gift bag. Lin bounces excitedly as he opens the bag up. “Oh myyyyy”, he says when he opens the box of rocky road you made him. “This smells amazing!”, he says. “Well It has a secret ingredient...honey whiskey!”, you explain. “Damn! That’s genius!”.
He puts the box on the counter, then hands you the envelope. He has a mischievous look on his face as you open it. You eye him suspiciously and pull out a piece of paper with Lin’s scrawly handwriting on it. “Welcome to your Christmas TREASURE HUNT!”, you read aloud. “Oh Lin that’s awesome! Wait, when did you do this?”, you ask. “Oh, about 2am”, he laughs. “That’s where you went! Ok first clue, first clue!!”. Now you’re the one bouncing as you read “In the morning you’ll hear me whistle and toot, as you decide: Earl Grey or fruit?”.
It only takes you a second or two. “The tea kettle!! Is that where the next clue is?!”, you squeak. Lin grins at your enthusiasm “Go look!”, he urges. You run over to the stove and lift the lid off the kettle. Another envelope is inside and you grab it before running back to Lin. You give him a kiss and declare this is already the best present you’ve had. “Open the envelope, then!”, he says. Inside is...a takeout menu and a map of the park across the road, along with the next clue. You look up at Lin, confused. “All will be revealed!”, he says mysteriously.
You hand him his next present which he squishes and tries to rattle. It does not rattle. “Hmmm, feels like a book, think it’s a book”, he decides, weighing it in his hands. He rips off the wrapping paper to find a grey box (admittedly book-sized). Black letters in the bottom corner spell LMM. He looks confused and pulls the lid off the box. “Y/N...”, he whispers as he places the box on the table. He lifts out a single leaf of the notepaper inside. It is headed by a skyline illustration, with the George Washington Bridge front and centre. A bold font states “From the desk of Lin-Manuel Miranda”.
“This is stunning, I can’t believe this-you had this made?”, he asks as he reaches for your hand, still looking at the paper. “Yup, there’s a specialist printer in Inwood.”, you confirm. “Who knew?!” Lin exclaims. “There’s a watermark...”, you prompt. Lin drops your hand to hold the paper up to the light and read the watermark. In a circle it says “Made in Wash. Hts”. Lin has a tear in his eye as he carefully places the paper back in its box. He pulls you into his arms and says “That is truly special, thank you so much!”. “You’re welcome. A great writer should have great tools.”, you say. He squeezes you tight and then tells you to read your next clue.
“How we gonna pay last year’s...” you read aloud and then run to the bookcase in the bedroom. Lin follows behind, and leans against the doorway, hands in his pockets. He watches as you scan the shelves and then triumphantly hold up the Rent libretto. You shake it upside down and an envelope falls out. You open it and take out a bus timetable and a subway map. “Lin are you buying me shares in the bus company? Is the subway map a Heights reference?”, you ask, more confused than after the last clue!
He just grins at you. “Hmmmm. Alright, you get another present before I read the clue, right?”, you say as you usher him back to the living room. Once in front of the tree again, you point to an envelope you had nestled into the branches last night. Lin lifts it out joking that he hopes you haven’t also done a treasure hunt. You laugh and shake your head no as he opens the envelope. He finds a calendar page for February and reads out what’s written across the last weekend “Lin and Q’s writing retreat”. He spins round to you, surprise on his face “You booked the house for me and Quiara?”, he asks. “Yeah, you missed out last time and I loved spending that time with you but you didn’t get much writing done”, you wink. “I just want you to know that I’ll do whatever you need to help you get stuff done”.
“You’re a dream”, he says with a smile. “I can’t wait to tell Quiara!”. “Uhh she already knows actually-I had to check her schedule-sorry”, you explain. “No, not at all! Psssh and you were all pretending you weren’t organised!”., he says with a nudge to your shoulder. “Oh you have no idea how last minute some of this was!”, you admit.
“Read your next clue”, Lin says. “We had our first fight, but we’re over it, please-go check the place where you threw back my keys”. Yikes. “Uh Lin, why would you want to remind me of our first fight?”, you laugh nervously. “Just go with it.”, he says reassuringly. “Where’d you throw my keys back at me?”. You cross the room “I didn’t THROW them, I just put them here”, you take an envelope and package from the potted plant. “I know but that didn’t scan!”, Lin laughs. You roll your eyes as you open the package. It’s a set of notecards and envelopes, made by an artist whose work you both saw in a little gallery nearby a few weeks ago. “Oh Lin they’re beautiful, thank you!”, you walk back to him to place a kiss on his cheek. “You’re welcome. That dude is super talented, isn’t he?”, he says.
You hesitate. “I’m not sure how to give you your final gift”, you cringe. “What do you mean?”, Lin asks, intrigued. “We might need to go out...”, you say vaguely. “Okaaaay...maybe you should read your next clue...”, Lin says. You open the envelope. “I hope no-one steals this next gift, go outside, turn around with your back to the ‘lift’”. You grin at the use of the word lift instead of elevator and head for the door. At the last second you grab a package from the table and take it with you. Lin follows you out of the apartment with his keys and phone. He closes the door behind you as you spin around so that your back is to the elevator and stare at Lin’s door. “Ummm”, you murmur. You look around the doorframe, and then it clicks-the console table. You open the drawer and there’s an envelope and a small rectangular box in there.
You walk to the stairs so you can sit to open the gift. You unwrap to see a distinctive blue box. Tiffany. You glance up at Lin, who rubs his hands together. “This is the saw it and thought of me?”, you ask. “Mayyyyyyybe”, he responds with a smile as he sits down next to you. You lift the lid off the box and find a silver keychain with a little charm on the end-a book, open, with delicate page details on it. You take it out of the box “Lin this is beautiful, and it’s so me...”, you stop as you see “Love, Lin” is engraved on the back. You place a hand over your heart. “Thank you, so much. I don’t know what to say!”.
Lin smiles and takes your hand. “You said it’s you and I know you meant because you love to read, but it’s more than that-you’re my open book-no poker face.”. You laugh at that. “I’m sorry I reminded you of our first fight but I kinda *wanted* to draw attention to it, because here’s the thing: we fought because I was trying to move us forward and you’d been holding back because you’d been hurt before. In the diner you said to me that you were normally a really open book, that you didn’t keep anyone guessing about your feelings. Ever since that day, you’ve opened up more and more to me-I don’t mean just by talking, but by making yourself vulnerable. You put it all on the line, to make this work. That took a lot of guts and I just kinda wanted to acknowledge that.”
“Lin, that’s so lovely.”
“And look, I also have to acknowledge that in letting me in like that...well I nearly screwed that all up with that kiss, and I couldn’t be more sorry. I’ll never do that again. So I guess I want to say that I’ll always be an open book too.”
You squeeze Lin’s hand. “I know you will. I...”, you pause. “You know what? This would be the perfect time to give you your last gift-it kinda says what I want to say”. “Ok. But can you read your last clue first, that miiiight dictate where we go...” he says. You open the envelope.
“After one of our dates: ‘She loves me’ I excitedly tell Kail, ‘Great musical but terrible movie” he says -You’ve Got...” you leap to your feet. “Mail! I disagree, it’s a fine version of the story!”, you say as you start to run down the stairs. You hear Lin follow behind you.
You run down to the row of mailboxes in the lobby and stand in front of Lin’s. Oh boy, this is a little spooky. You turn around as he catches you up. “I want you to open your last gift.”, you say. “Yeah? What about the location thing?”, Lin asks. “Uhhh that’s the thing...I was just gonna bring you here too...just open it.”, you ramble. “You were gonna bring me to the lobby? Ok”, he laughs and takes the package as you hold it out. He unwraps a small box and as he lifts the lid he pulls back a couple of layers of tissue paper. He puts the box down on the table and lifts out the tiny brass nameplate. He swallows hard then reads out “‘Miranda/Y/L/N’...honey, what is this?”, he asks gently. You straighten up, take a deep breath.
“Its a nameplate for a mailbox. With both our names on. See, I really have been trying to let go of the fears and insecurities I had and I’m not scared any more. Im not scared of us. And so I was wondering...that is, this is my way of asking...do you maybe want to live together?”, you explain. Lin just stares at you. “I just, I know when we first got together, I was holding back. I really was. But over these last few months, you’ve broken down my defences. You’ve shown me so much love and respect and it’s changed how I feel. I love you so much. I can no longer imagine my life without you in it.”. Lin still hasn’t spoken. What’s wrong? “And anyways, I’m always here so...”, you trail off feebly.
There’s a pause. And then Lin lets out a tiny laugh. Not the reaction you were hoping for! “Lin! What the...?”, you cry. “I’m sorry, I’m sorry”, he says and squeezes your shoulders. “It’s just...your last clue”, he points. “You’ve Got Mail?”, you repeat. “Open the mailbox, Y/N”, Lin says softly. You turn the key and inside is a sheaf of paperwork. Lin lists off the gifts he’s already given you by ticking them off on his fingers. “Local bus timetable, subway map and takeout menu. New keyring. Notecards so you can let people know you’ve moved....”. He pauses and points to the word at the top of the paperwork you’re holding.
“Lease.”
Oh. OH. This is the lease for his apartment. “With both our names on”, you repeat.
“I got these drawn up, to officially ask you to move in. Not just in a ‘Oh you might as well stay’ kinda way. I’m ready for us to be moving on, adding you to the lease, it’s a big commitment. But I love you and I know it’s right.”. He pauses and takes in your smile. “But you beat me too it! Jeez!”.
He leans over to kiss you and you smile against his lips. “I can’t believe we got each other the same gift!”, you say. “Well”, he laughs. “I mean if we ever needed proof we were on the same page...!”. You shake your head in disbelief.
“I wondered at one point if you’d ever want to take the plunge, really”, Lin says. “and I went back and forth on the whole gift thing, wondering if it was too much, too soon.”.
You shake your head. “No, not too much and not too soon. Couple months ago this really would have scared me. Before you brought me out of myself and built my confidence and just... loved me in that amazing Lin Miranda way that you do”, you say. He smiles in response and you hug him close, then kiss him. Your lips move against his, soft and familiar. When you stop, you say “You haven’t just told me, you’ve shown me, that you think I’m worth loving, that we were worth gambling on. I guess what I’m trying to say, Lin, is that you made me feel...brave”.

Lockdown Diary Part 11
A personal account during the lockdown in the UK due to the Covid-19 outbreak.
23/03/2020 8:30pm Boris Johnson, UK Prime Minister, gives a live address to the nation to, effectively, put the country on lockdown to stem the spread of the deadly coronavirus strain, Covid-19.Many of us have been self-isolating for days but this latest development within the UK in reaction to the pandemic feels very serious and very scary. I decided to keep a simple diary and where better but online.
Day 301: Up at 1pm after a good few bevvies last night. usual Saturday stuff but my walk was astop/start affair due to yet more flooding. 
Facebook today informed me that Karen Wyles died suddenly. It really shocked me. I saw Guy and Gail while out walking (nice to bump into them and chat) and they told me it was a heart attack! I sent K a WhatsApp just in case she’d not heard. I put a few words on FB. I had known Karen for a long time and, while I took the piss a lot, she was a friend (that I often didn’t deserve) and a good person....I felt a responsibility to say something nice as a small homage.
During the week I ordered new boots (since my Merrells are fucked after only  few months but I am getting my money back) and, today, I also ordered McKenzie Attwood trainers (£20 cheap as fuck from JD Sports sale), slippers and jogging bottoms from Amazon. 
Now I am going to have pizza, drink, smoke and watch The Equalizer 2 (for the umpteenth time - I watched the first one last night). I could watch Tenet - Miles has given me his Amazon login details, which is pretty fucking cool of him, but I’m not in the mood.
Posh beat MK 3-0 at home. I fucking love beating them. It’s extremely satisfying.
Right, it’s Saturday, it’s nearly 9pm, time I got on it.
Day 302: Not the most mental night last night but still 4am-ish when I went to bed, so I am very pleased to type that I was up before my alarm this morning. But, also, as I type, at gone 10pm, I am fucking knackered. Just about to tuck into spicy-as-fuck sauasage casserole, wtach MotD2 and then bed!
Day 303: Slippers arrived today but they’re going back. Too tight in the left foot. I’m not wearing slippers in FFS!
Day 304: New trainers (McKenzie Attwoods) arrived. Now, this footwear I shall keep. £20, bargain.
Posh came from a goal down to beat Charlton at home 2-1. Nice.
I made some veg soup today and, quite frankly, it’s fucking stupidly chilli-fied. Barely edible.
Day 305: New trainers are sweet - wore them for my morning exercise routine. Pretty comfy - after a few wears, they’ll be ace, I think.
Got served notice on the house on Monday (why I didn’t enter that on day 303, I do not know). Lynda, from Woodfords, says a semi-detached place in Havelock Cottages is coming up that looks promising. I contacted Emily at Aspire today, there’s a two bed terrace in Basset Place coming up so i am looking at that on Monday. Choice of 2 I do hope! First is £700 pm, second £725.
Day 306: Flipping frustrating “nothing works” day at work, It’s been like it all year so far. Tbf, Sueanne gets it and is quite supportive, even though she dives in when I’ve been dealing with problems that drag on! It’s Thursday, I can’t wait for tomorrow and, I am all to aware, I am wishing what little life I have left away.
Spoke with dad, he had his first vaccination jab on Tuesday in Spalding - he said it was a very efficient process (he was full of praise) and that the jab itself was no bother, with no after effects apart from a slightly sore arm. Excellent!
Day 307: Not even one beer (Saporro) in, and I feel wasted. A toke has helped.
Day 308: New Scarpa boots arrived today and, while they will need some wearing in, I did the stair climb and a 45min walk in them. I think they are going to be ace. Just as well as the Merrells are falling apart.
I have decided to listen to the Rush back catalogue, 2112 (4th) is playing as I type. It’s been a trip down memory lane and a bloody good one!
I had a few beers last night, as yesterday’s entry confirms, which included a video catch up with Fog, Ham and Andy P. Gonna chat with Fog later tonight as well.
I watched King of Statten Island last night. I liked it but, in some parts, it was smultzy as hell, rendering it a 6/10. Later, I’m watching Outside the Wire and eating pizza. Can’t wait!
I reset my mobile yesterday ‘cos it’s been playing up. What a fucking ball ache, logging on to all the different apps, all the little settings you get so used to, only to miss them when set back to defaults. Things like the camera settings - photo size and watermark....ooooh, just realised, ‘first world problems’! Get a grip, Tim!
Day 309: SNOW! Thick and crisp and uneven. I walked 11.9km in it today and it fucking well knackered me out. The old Merrells held their own in the snow as well, totally waterproof and, for such a light boot, remarkably warm. I will actually be sorry to see them go.
Danny sent me a link to a free week’s worth of receipes from Hello Fresh (he’s nuts for it) so I and ordered one, worth nearly £40! 
Posh won away from home yesterday at Ipswich. Now, get this: the stats on the BBC’s report showed Posh had no shots on target but still won 0-1. How, might one ask? Own goal, that’s how. Piss funny!
Day 310: I am aching today. Walking in the snow yesterday certainly exercised different muscles than walking in mud. And, today, I walked less than normal, usual lunchtime but only 4km (instead of 8) in the evening. 
‘Cos of the snow, the woman from Aspire cried off showing me around 3 Bassett Place. At first I was well pissed off but, looking at the roads and traffic situation around Oundle, it was the right decision (she’d have had to get here from Nassington - a bit treacherous),
It’s just gone 8pm. I am going to eat and go to bed. It’s too fucking cold even with the heating on!
Day 311: Rearranged the viewing of Bassett Place tomorrow - I rang them ‘cos I saw it advertised on Facebook, FFS! My walk tonight was mad...melting snow, rain/sleet, ice made for fucking hard work. Plus, since I am wearing in the new Scarpas, I wore the Merrells. The right boot is now, most definitely not waterproof! Got home about 8pm, changed bed sheets, showered and made diner...bloody knackered. It’s now 11pm and I am off to beddy byes.
Day 312: Viewed Bassett Place and I really like it. It is advertised at £750pm but Emily (from Aspire) said it was £725. Sarah, who showed me round said there may be some leeway for the right tenant so i’ve asked if it could be done for £700. If so, I’ll take it. It’s a large two bed mid terrace, bigger than here (36, East Road), similar type place, just what I want. Fingers crossed.
Day 313: Having slept on it, I do believe I definitely want 3 Bassett Place. I phone Sarah at Apsire to say as much. She told me she’d forwarded my details and offer to the landlord and is waiting to hear. As yesterday, fingers crossed.
I couldn’t take the pic of the field for the Morning Walk album, too flooded due to melting snow. On that note, my new boots are getting worn in both by wear and by superficial looks, it’s that filthy out there. I need to clean them. I wonder that, if I’d cleaned the Merrells, they might have lasted a bit longer. That being said, no amount of cleaning would have save the soles from wearing as thin as quickly as they did.
Day 314: Typing on Day 315. I didn’t get Bassett Place, the landlord gave it to a couple who offerred full asking price. To say I was fucked off is an understatement. I phoned Emily to let her know as much. Tbf, she explained that the snow (delaying my original viewing) wasn’t her fault and that she is at the mercy of the landlord. Fair enough, when I heard her POV. But, I am still gutted. I should have gone for the full £750!
Glad the working week is over (I am really wishing my life away so far this year).
Long walk to Cotterstock - amazing light behind the clouds with a wolf moon (which I just looked up - full moon, basically) - I just wish I was a bit better at night photography, or at least the camera on the Mi9 was. However, once I tweak them a bit and post them, the feed back is usually good. In fact, I posted one on the move last night and someone on FB has asked if they can paint it!

I have decided, when the year of this log is up, that I’ll end it (the diary, not my life, though that dark thought is never far away!). I have reached this decision because, while this diary is really only for me, it is as boring as fuck, really. I’ll continue to write a log but randomly, when the day’s events warrant it. It’ll be on the main Tumblr.
Day 315: Typing this on day 316. Up at 1pm-ish. Morning exercise routine, long walk curtailed by flooding (again!) more beers, smokes and trash food. Posh lost 2-0 away to Shrewsbury (a bit of a bogey team).
Day 316: Up at 1pm yet again. I really didn't feel like any exercise but I did the usual regardless. Google Fit isn’t fucking working!
I have got to start stopping these ridiculously late Friday and Saturday nights. My weekend is over before it’s begun. This coming Friday, I am not going to do the really long walk in the evening that i have become accustomed to - just a 8km one that I do most evening, and then start drinking earlier so as to go to bed early. If I can get out of bed in the Saturday morning, perhaps do a couple of long walks so as to get the weekly steps up.
Day 317: My left foot, during my lunchtime walk, killed. I must have sopped and undone & redone my laces 6 times. Dunno wtf is going on with the Scarpas. I wore my Merrells for the evening walk. I tried to got to Cotterstock but it was too flooded on the road just before the bridge!
Ordered new joggers, a boot brush and some new wireless earbuds (Mifo 05 plus Gen 2 - bought them off eBay -I hope they are the real deal, it’s the very latest spec and £74.99 instead of £89.99 from the Mifo website).
Day 318: I went shopping at 10.15pm mainly for pizza and party food since I have booked Monday off because it’s the Superbowl (Tampa vs Kansas) and booze! No fucking Sapporo. It was eerie shopping that late at the superstore in Corby. Boots still hurting (Merrells in the evening). Day 319: New ear buds arrived. Well impressed. So did the boot brush (BootBuddy) - on that note, boots weren’t so bad at lunchtime. I didn’t wear them in the evening but I think it’s just a ‘wearing them in’ thing, hopefully.
Day 320: Hello Fresh delivery day. I had pork and chipotle black bean tacos with pickled red onion, chipotle tomatoes and lettuce. It’s a good set up, decent ingredients and nice recipe sheets...but I don't need it, I’m good enough in the kitchen. And, I am no fan of minced pork. I am not being a fair judge though. Today, my sugars have been all over the place over 21 and under 2 mmol/L. I nearly fell asleep trying to recover from a low before my evening walk. When I got back (soaked - it was pissing down), I was over 21 by the time I had cooked it all....puts me off actually eating, even though I have to! Rang Barry Haddon today, to see how he is. I think he’s OK but, strangely, told me, during conversation, that he’s 77 years old. I don't think so! I also texted Posh Dave. I think he’s struggling being on his own (he lost mum and dad last year, I think). I must make more contact with him. I might call him over the weekend.
Day 321: Typing on Day 322 (well, 1am on day 323 actually). It was nice finishing work knowing I have Monday off. I also din’t do an extra long walk this evening as with most Fridays. Cooked the send Hello fresk meal, Mango chicken tacos -diced chicken thighs - it was alright. Rog video called so had a good chat with him and I invited Foggy to it (he was at his cousin John’s funeral today), so the three of us chewed the cud for a bit. I then went onto get fucking shitfaced. I couldn’t make it to bed with low sugars, lying on the runner rug, fell asleep, got up and could only make it top the living room rug..I felt so dodgy but I was too fucked and too full to even take more than a swig of coke. I think I’m going to fall asleep one drunken night, slip into a coma and then die. I can think of worse ways to go. Day 322: Typing  very late, it’s actually Sunday morning, 1.07am. I got out of bed at gone 2.30pm today. I managed my morning routine and a 8km walk (in the Scarpas, they are getting more comfortable since my episode of pain a few days ago; definitely a wearing in process). No booze after last night’s debacle. I am going to hit it during the Superbowl tomorrow though. The Hello fresh meal tonight was pasta chicken bake with pepper and courgette. Fucking lovely and I coudln’t eat it all. I’ve lerant that adding creme fresh to pasta, whacking it on top of meat and sauce on a casserole bowl and baking it for 15 minutes is the way to go. I watched The Dig tonight. It’s a good film but fucking glum. Posh won at home to Crewe today, 2-0. They are now 4th. Day 323:Bright as a button today, up at around 11:00am despite switch in the bedroom light off at just before 3am. Today’s walk was fucking hard work. It’s wintry, the wind was keen, strong and full of icy particles just not quite sleet. The fields between Park Wood and Monson Way were bloody tough. One wrong foot and you’d slip over. I did about 10 km; it took over 2 hours and felt like twice the distance.  I’ve just eaten Hello Fresk teryaki mince. It was good. One beer in, a film (probably One Night in Miami) and then Superbowl time. Day 324: The Superbowl was good. Tampa beat Kansas 31-9. The second half was a damp squib since Kansas never made a go of it. Tom Brady won his 7th ring. He is to American football what Federer is to tennis. The Weeknd half time show was excellent. So, it was about 4am I went to bed, nicely pissed. Up at just after 1pm. Exercise, omelette, long walk, done some washing. About to make the last Hello Fresh meal and watch One Night in Miami which I didn’t manage last night.   Richard sent me a message (screen shot of a) house up for shared ownership in Oundle (Sharmann & Quinney) - I need to look into what that is all about.
Day 325: Shared ownership isn’t straightforward and, actually, I have discovered that I need to look at something call ‘older persons shared ownership’ when I hit 55. Jon at work wants me to get involved in two additional pieces of work, he told me at the SUMO today (Sueanne is off) - he did say that “that’s what happens if you have a day off! Finished the last of the Hello Fresh (last night’s sausage bolognese including homemade garlic bread using a Tiger loaf from Co-Op which was reduced to 28p. I didn’t watch One Night in Miami last night. Shock. Day 326: I spoke with Lynda from Woodfords yesterday, viewing 13 Havelock Cottages tomorrow. Also, yesterday, Posh beat Ipswich 2-1 at home. They came from behind. Ipswich have never beaten Posh away. Simon Banwell posted on FB berating some new legislation whereby potentially people who travel and lie about it (the destination) are liable for 10 years in prison. His gripe is people get less for murder. I am beyond words...the potential for mass deaths of such actions! I tried to argue that case but it is, as always on social media, flogging a dead horse. Rachel Harris jumped on Simon’s bandwagon whereas Tim Francis posted a ‘well said’ to me (I think it’s genuine). Day 327: Carrying on directly from above; Candice Bellingsea, Rachel’s niece, Carla’s daughter, was also ‘vocal’ in defence of Simon’s post, joining in with the clamour for relaxation of lockdown (at the expense of safety) - citing more people commit suicide because of the mental pressure than die of covid. Well, today, I investigated and posted a FB status to poo-poo such claims. It felt good (and right) to address Candice’s ridiculous post albeit, I didn’t call her out directly but did have part of her comment on Simon’s post directly quoted in my status. I went to see 13 Havelock today. It’s OK. Not perfect but more than alright. When I left there I was very much in two minds but now, at 10:30pm, the place is growing on me. Still part of me thinks to hold out - I have got around 5 month’s notice left - but, if I let it go (and Lynda from Woodford’s has already said the landlord is happy for me to move in), I might regret it. I keep thinking of 3 Bassett Place though...if only I had said yes to £750 straightaway. That place would be perfect, I reckon. One major concern with 13 is the neighbours. There’s no way I could have my usual Friday and Saturday night revelry. But...I’ll sleep on it. I have only just finished doing some work - pissing about with Smartview Essbase (with Simon Welch’s help - he’s a bloody good bloke - no need to be so helpful, but he’s more than happy to be) - I sent him a Teams message to arrange a catch up tomorrow with some questions I have regarding the installation - he only bloody answered - working as late as I am! I have managed to watch some of One Night in Miami. Going to finish it now with a dirty, microwave hamburger for tea.
Day 328: Typing on day 329. Usual Friday but not so mad in the evening. One Night in Miami was good. For Friday’s viewing I chose Greenland. Not so good. Only 4 beers and two spliffs. I’m getting old! Day329: Up at 1pm, usual exercise including a long old walk. It included walking along the river (Oundle Mill bridge to the marina) for the fist time this year. The floods are in evidence but, obviously, receded enough to get through - that, or the resulting water, mud and boginess is frozen. I really enjoyed it today but it was freezing - the wind was evil at certain points. Tea’s on the go, beer in hand and I am going to watch War Dogs.  Posh’s game was off today due to a frozen pitch. Day 330: Typing on day 331. It wasn’t a mad Saturday night but mad enough to not be up until gone midday. Another nice long walk, Walk and eat is all I really do nowadays. I can’t even muster any enthusiasm to do housework since I am going to be out of here soon. I called Posh Dave in the evening. It was good to chat and I think he appreciated the call. He’s on his own and struggling, I get the impression. He told me both Matt Baxter (bowel) and Adi Mowles (neck) are undergoing treatment for cancer.

the cauliflower experiment
the photo above is not colour corrected. that’s just how bright it is.
this follows the rule of curry, which is that it is best made the night before and reheated, so very easy to do in advance of something as a side dish or as packed lunches. it makes enough for six lunch servings or 8-10 as a side dish.
prep time: 40mins actual work, most of which overlaps with cooking time total cooking time: 2hrs, mostly unattended
olive oil 1 large onion 2 cloves garlic 1 large can diced tomatoes (800g) 2 heads cauliflower 2 medium zucchini 1/2c sliced or chopped almonds (optional but very nice)
to taste: paprika turmeric dried red chili flakes apple cider vinegar salt
a note on my palate: i use LOTS OF SPICES. i am not really in this for the flavour of either cauliflower or zucchini in and of itself, even though this is an excellent way to use unexpected quantities of both and exploits their juiciness nicely as a vehicle for other flavours. but this dish is malleable. if you want it to be subtle, start small. i eat this as a main and i think subtle is overrated. so when i say tablespoons, i mean tablespoons.
you will need: a large stock pot with a lid and a stainproof spoon, plus a cutting board and a sharp knife.
dice the onion finely, mince the garlic, and put them in the stock pot with enough oil to sauté on medium-high heat with the lid on until the onions begin to go transparent. if they start to brown or crisp, throw in some water to deglaze and keep it wet.
while the onions cook, remove all leaves and the bottom of the stem from the cauliflower, break roughly into florets or chop, and add to the onions. i usually break it right into the pot as it doesn’t hurt it a bit not to all go in at once. chop the thick stems as well, about 2-4mm thick, and throw them in. they don’t need to be skinned. stir occasionally as you go to keep the onions from sticking.
chop the zucchini into quarters lengthwise and then into slices roughly 5mm thick. add them and stir.
pour in the can of tomatoes. use enough water to rinse down the sides of the can (about 1/2c) and pour that in too. stir.
now for the fun part. this is a lot of veg! so if you are me you will season with about 1/2tbsp of chili flakes, 1tbsp of turmeric, 1 1/2tbsp of paprika, 1/4c of apple cider vinegar, and salt to taste (at least 1tsp). but you can start with whatever fractions of that you like. stir well to combine. put the lid on, turn the heat to medium-low, set a timer for 15mins, rinse your spoon, and go do something else.
when the timer beeps, come back, stir well, rinse your spoon, put the lid on, put the timer on for 15mins again, and go do something else. and repeat.
at the 45min mark, taste it and adjust seasoning as necessary. i usually add another glug of vinegar (1/8c or so), and usually also more salt, at this stage. then do one or two more 15-minute rounds with the lid on.
once the vegetables are soft and the cauliflower has mostly broken apart, the flavour should have begun to develop. you are aiming for tangy, not overly sour, with a mild heat and a bright spiced flavour. however! the full complexity will not come out right away. taste it now so you know what to aim for, but know that it will be infinitely better later. i am not kidding. please make it the night before. do it for yourself. do it for me. do it for the WORLD.
add another glug of vinegar, stir, and if the mixture is very wet you should take the lid off and cook for up to another 10mins, stirring often to reduce the liquid a little. or leave it soupy, it’ll taste good either way.
add the almonds now, if you are using them. they add a sweetness that really brings out the rest of the flavours, and will make you feel fuller as well, but if you are dealing with nut allergies then it’s absolutely fine without.
turn off the heat and stir thoroughly, then leave to cool for a few minutes. then put the lid on and stick it in the fridge (with a trivet under it).
the next day, nuke it and serve it up and bask in your genius. it’s even better the day after that.
nota bene: this stains like a mofo. keep it in metal or glazed ceramic or accept that your plastic containers will go yellow, wear black, and good luck if you get it on the linen tablecloth.

Tell us a little about yourself.
I was born and bred in Donegal and went to an all-Irish primary school. I went on to study Irish and Spanish in college and then did a Masters in translation after that. Before I went to college I also did a diploma course in TV Production through Irish in the Donegal Gaeltacht. I’m now living in Spain working as a freelance translator but hoping to move to Barcelona soon and get something a bit more secure!
When did you become a vegan and what made you decide to change your lifestyle?
I lived in Spain in 2012/2013 during my Erasmus year. It was my first time owning a smart phone and I took a liking to Instagram. I followed a lot of health and fitness accounts and took a big interest in health and wellness. One week in February 2013 I watched around 6 documentaries about food production, animal welfare and the links between a Western diet and all the most common Western causes of death (heart disease, cancer, diabetes, stroke). The Monday after that was the last day I ever ate meat. Over the course of that year I educated myself on how the meat and dairy industry have essentially paid their way into the food pyramids. There are so many deceiving scientific studies done and articles written to promote this kind of food and it’s tragic because that is the very food that’s killing us. When people from Asian and African countries move to Western countries and adopt the Western diet, they also adopt Western diseases that they wouldn’t have gotten if they continued with their traditional mainly plant-based diets. Learning bits of information like this just astounded me and yet it made so much sense. Never in my life have I understood something so well – the only thing holding me back from going fully vegan was our culture and society. Saying no to family members’ food and learning how to go without dessert in a restaurant is hard work and it takes time to get brave enough to do that! Eventually, within a year I was fully vegan – although at home and when cooking for myself I was always vegan. 
Throughout that year, I allowed myself to learn of the horrors of the animal agriculture industry. Not just the sick conditions of factory farms but standard, legal practices that are done on the most highly praised farms, such as pulling piglets teeth out and castrating them without anaesthesia, dehorning calves without anaesthetic, separating calves from their mothers so soon after birth so they don’t drink the milk meant for us humans, keeping sows in crates so small they can’t even stand up; I could go on. Standard farming and slaughterhouse practices are seen as “necessary and humane” but only because they’re part of the farming business. There’s nothing ethical about it. If someone shot a bolt gun through a dog’s head and then slit his throat and skinned him before he even properly died – the country would be up in arms about animal cruelty because it’s not normal for us to eat dogs. It’s “normal” for us to eat cows so we don’t bat an eyelid when it’s done to them. Knowing all this made going vegan an absolute necessity. I could never ever live with myself if I knew I was contributing to modern day slavery and torture of the most innocent and docile creatures on earth.
Who would you consider to be your biggest influence?
I really admire Dr. Michael Greger who runs the website nutritionfacts.org and wrote the book “How Not To Die”. His selfless contribution to the health of the world and sharing true and factual scientific studies has made it so easy for everyone to learn about food and how it impacts out health. He makes complicated scientific studies make sense to the layperson through his short and snappy videos on the NutritionFacts.org YouTube channel. He does all this for free and even the proceeds from his best-selling book went to back into the nutritionfacts.org non-profit.

 What would you consider to be the main purpose of your blog & YouTube videos?
To inspire people to go vegan or to assist people through their vegan journey. I want to educate people on the true effects of the food we’ve grown up eating. It’s not something you can learn about in the mainstream media (although slowly but surely that’s changing). I like the idea of leading by example so I just try to share my life experiences and show people what I’m doing and why I’m doing it – that way is the least “preachy” I find. People are always interested in other people, so, if I can get people interested in my way of life, they might end up saving their own life. Also, I feel it’s my duty to the animals. I can’t sit back and do nothing about their suffering. If I can get someone to buy a cruelty-free and vegan foundation the next time they are buying make up instead of an animal-tested one – I’m happy. If I can get someone to choose a soy milk latté instead of cow milk the next time they order a coffee – I’m happy. If someone tells me they’ve decided to cut out meat altogether – I nearly cry with delirious excitement.
Do you find it easy to maintain your blog while living your daily life?
Not when I’m working a full-time job -  it’s very hard to find the time to work, eat, sleep, blog and vlog. Often times, social interaction with friends suffers! But now since I’ve lived in Spain I’ve been working at home on a freelance basis. So, when the work is quiet that means I get more time to focus on editing videos and writing blog pots. However, it also leaves me stuck financially which in turn leaves me with no nice ingredients to make nice recipes! I’d absolutely love to be able to focus on my blog and my channel full-time. As well as being beneficial to people’s lives, it’s also really fun to do and I get to use skills I’ve always loved using as a child such as taking pictures, editing pictures, making videos and acting the eejit in front of a camera!
 Is there a particular vegan dish that stands out as being the best you have tried?
No – because there are too many. Think of all the vegetables in the world (not just peppers onions and carrots), and all of the fruits in the world, and all of the grains, beans, legumes, spices, and herbs. Now think of a combination of each and every one – we’re talking millions upon millions of options! I’ve made some delicious meals in my life but as soon as I’ve made them I move on and try something else. In restaurants (that serve vegan food) I always try and get something different. I absolutely love weird combinations of food. I used to put random things in sandwiches and my mum said I get that from my late Granda. My mum is the complete opposite to me though and makes the same dinners every week – all are fantastic. But I have to say her lentil shepherd’s pie is a winning family dinner. It really is delicious and nutritious. (recipe on the blog if anyone’s wondering!) The meal I had in Sova Vegan Butchers in Dublin was one of the best vegan meals I’ve ever had. They’re so innovative and creative and it’s such a good experience eating there. I had the “scallops” and a “schnitzel” – 100% vegan, 1000% tasty. Recently I was in London and that whole day of eating was probably the best day of eating I’ve ever had – from breakfast to brunch to lunch to dinner. The Ethiopian food I got at Spitalfield’s Market was phenomenal. I have a vlog on my channel from that day again, if anyone’s interested!
 Tell us a little about the fashion side of your blog. You mention you like to buy clothes that are not brand new and ethically produced. Can you explain that a bit more? 
Well I’ve always heard about sweat shops and child labor, all my life. I don’t think that side of fashion has ever been unknown to anyone, but we definitely do just turn a blind eye to it. I did most of my life, but then when I went vegan, I kept thinking to myself that I shouldn’t be ignoring the plight of these poor sweatshop workers. I didn’t know too much about it though, but it was on my mind. I shopped less in fast fashion places because of it, but, only in the last 2 years have I completely quit fast fashion. I decided to become a minimalist 2 years ago and with that I learned a lot about the environmental impacts of clothes production, the vast amount of waste and pollution it produces, and the working conditions of the garment workers.

The factory collapse in Bangladesh that made headlines should have caused a worldwide shift to ethical fashion but profits of the big companies actually went UP that year! Shocking. I would recommend anyone interested to watch the documentary “The True Cost” – it’s extremely interesting. Since I quit fast fashion I’ve obviously still had to buy clothes. My budget hasn’t exactly allowed for me to buy better quality and sustainably-made clothes because they tend to be more expensive, so, I tend to focus on second hand clothes. This is even better though because it reduces waste and doesn’t use any resources. I love using Depop and Ebay, and I absolutely love vintage shops like Nine Crows in Dublin. Etsy is a great place to get handmade and vintage items as well. My proudest purchases, though, have to be the ones I’ve found in local charity shops. It literally is a case of “one man’s trash is another man’s treasure”.

For people out there who are looking to start their own blog, what advice would you give them?
Being Irish I think we have a tendency to get embarrassed about promoting ourselves or speaking up online. There’s something about our culture that makes it slightly weird for us to see someone doing their own thing and being different in public/online. I’ll admit, even I find it strange sometimes if I see someone I know doing something a bit “different” online. It’s in our nature and I’ve no idea why. That said though – this is changing fast! One good thing about globalisation is that some of our very Irish ways are dissipating and more people are deciding to do what they want and put themselves out there. So, I would say to anyone who feels like they want to speak out through a blog or share anything through a blog, try not to be embarrassed or scared about what the ones down the road will think of you! If you have a good message to share people will benefit from it. I was terrified about putting myself out there – especially on YouTube – but I felt the message was too important not to share. Some people definitely thought I was mad, but I’ve had more people tell me that they’ve changed because of my blog/channel, or thank me for sharing what I’ve shared. So, you could be shocked at the impact you could have!
What is your proudest moment to date?
The Irish language is a big passion of mine and I love to promote it, so, when I was invited to be on Róisín on TG4 I felt like that was a big moment for me. Speaking Irish, working with the media, and promoting veganism all in one day – it definitely was one of the highlights! I also loved being in my local paper, The Donegal News, last year, as I grew up reading this paper every Thursday night when my Dad would bring it home. Plus, the title of the piece was “Champion of health” – that was cool! But, one of the best things that has happened since I started trying to spread this message was my family, one by one, ditching meat. My mum is vegetarian, my dad is vegetarian (sometimes pescatarian) and my younger brother is also vegetarian. Having that burden of worry off my shoulders is a great thing – now I only need to worry about my youngest brother whose diet gives me anxiety!
 Have you any particular goals for the future?
Get my youngest brother to go vegan! It’d do wonders for all his football injuries…No but really, I’d love to be able to work full-time on helping people go vegan. I’d love to take people shopping to Dunnes or Tesco and teach them all about what they can eat and what recipes they can make for their families. I find blogging and making YouTube videos really enjoyable so it’d be great to somehow be able to do it full-time. I’d love for veganism to grow massively in Ireland over the next 5 years and I’d really love to have some part in it.
