Plain Old Banana Bread
This is the time of year - just past Purim - when people who observe Passover clean out their cabinets (a good spring clean!), throw out stuff they’re never going to use or that’s past a “sell-by” date, give ingredients away and use up prohibited ingredients such as flour, cookies, bread and such.
I’m also always looking for ways to use up uneaten bananas. So, for me, one of the most delicious ways to use up the flour AND the bananas is: Banana Bread!
Like this very simple one to which you could add: chocolate chips, raisins, chopped nuts, crystallized ginger, candied orange peel (about 1/2 to 3/4 cups of any extra).
PLAIN OLD BANANA BREAD
2 cups all-purpose flour
1 teaspoon ground cinnamon
1/2 teaspoon freshly ground nutmeg
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
2/3 cup sugar
1/3 cup vegetable oil
1 teaspoon vanilla extract
2 large eggs
1/2 cup buttermilk
3 ripe medium bananas, mashed
Preheat the oven to 350 degrees. Lightly grease a 9”x5”x3” loaf pan. Mix the flour, cinnamon, nutmeg, baking soda, baking powder and salt in a bowl and set aside. Mix the sugar and vegetable oil together in the bowl of an electric mixer set at medium speed for 1-2 minutes or until thoroughly combined. Add the vanilla extract and eggs and beat them in until well combined. Add the buttermilk and bananas and blend them in thoroughly. Add the flour mixture and blend it in. Spoon the batter into the prepared loaf pan. Bake for about one hour or until a cake tester inserted into the center comes out clean.

Banana Bread, df/gf
I had a banana for breakfast, sweet potatoes for lunch, and banana bread for dinner. Now I need some actual protein because yeah my fiber intake is awesome but sweet jesus.
Oh, you want a df/gf banana bread recipe? OKAY! Here’s the official recipe:
Banana Bread
Wet:
3 mashed bananas
1/2 tsp vanilla
1 egg
3Tb oil
2 or 3 Tb honey
3/4C non-dairy milk (I used almond)
Dry:
1 1/4C almond meal
1C gluten free flour
1 1/4C oats (aka uncooked oatmeal)
1tsp baking soda
2 1/2 tsp baking powder
3/4 tsp salt
1/2 tsp cinnamon
dash of nutmeg
dash of any other spice you wish
Instructions:
1.Get the wet ingredients, and smash together well in a bigass bowl
2.Combine the dry ingredients, and add to the wet ingredients. CAREFULLY.
3.Add raisins, nuts (you heathen), or chocolate chips as you wish.
4.Grease a loaf pan really well, and bake at 350F for ~60 minutes
Remove when a knife into the middle comes out with crumbs, not goop. The top should be kinda golden-brown.
Now what did I do? I’m an improvisational baker.
I had frozen bananas, so I thawed out four frozen bananas in a sieve over a saucepan. It doesn’t matter once they’re baked!
When bananas thaw they release all their juice, so the banana juice dripped into the saucepan. I boiled down the banana juice and used the thick, golden, heavily banana-scented goop as the sweetener instead of honey.
I didn’t have almond meal, so I just used 2 1/4C gluten free flour.
I used about a cup of raisins, and added a dash of allspice.
I was also baking other stuff with it I ended up opening the over door a lot and baking it a bit longer than usual. idk, I just stabbed it with a knife a lot and pulled it out when it seemed done.
In short:
THIS BREAD IS BEAUTIFUL. IT SMELLS LIKE BANANA ORGASMS. IT TASTES DELICIOUS. I HAVE NO IDEA HOW I MANAGED TO DO THIS WHEN SO MANY OF MY BAKING EXPERIMENTS END UP AS BARELY-MITIGATED DISASTERS.

These Vegan Carrot Muffins are fluffy, moist and delicious.  Just like carrot cake, you can add in pecans or walnuts, raisins, dried currants, chocolate chips or coconut to give them some extra texture. Whole-wheat flour will make them even healthier, if that's a 'healthy' goal for your New Year's resolution.  We also really like this King Arthur White Whole Wheat Flour (Amazon affiliate link).  It tastes like all-purpose flour, but is a lot healthier.  You can also make them more lightened-up by not adding a vanilla glaze on top, but I like a little sweetness, so I love me some vanilla glaze on top. YUM! By drizzling some vanilla glaze on top you make these sweet treat dessert muffins and you can also control how much glaze you want on top!

Once the carrots are finely shredded, this recipe is so easy to throw together.  One large bowl and no mixer and most importantly, when mixing the batter, mix it until it is just combined. When you over-mix the batter, the air bubbles collapse and ruins the fluffy texture.  This is the golden rule when making most quick breads and muffins. Also, after removing the muffins from the oven, give them a couple minutes to cool off a little, and then remove them and transfer to a cooling rack.  Otherwise, they will continue to bake which may dry the muffins out. Enjoy a lightly spiced carrot muffin that the whole family will love for breakfast or snack anytime of the day. Drizzle some vanilla glaze on top to make them sweet dessert muffins. Vegan Carrot Muffins1 cup unsweetened applesauce or 2-3 bananas (mashed)1/2 cup maple syrup or ¾ to 1 cup brown or granulated sugar1 flax egg3 tablespoons vegan butter (melted or you can use olive oil, or oil of choice or 6 tablespoons of your favorite nut butter)1 teaspoon pure vanilla extract1 1/2 cups all purpose-flour (or whole wheat flour or gluten-free flour 1 for 1)1 teaspoon baking powder½ teaspoon baking soda2 teaspoons ground cinnamon1/4 teaspoon salt1 cup carrots (finely shredded or grated, 2-3 carrots)1/2 cup of your favorite mix-ins raisins (pecans, walnuts, or chocolate chips, or coconut)Vanilla Glaze1 cup powdered sugar1-2 tablespoon almond milk Preheat the oven to 350 degrees F. Line a 12-cup muffin tin with paper liners or spray tins with non-stick cooking spray.In a large bowl whisk the applesauce, maple syrup or sugar, flax egg, melted vegan butter or oil, and vanilla. Stir in the flour, baking powder,, cinnamon, and salt. Combine flour, bicarbonate of soda, along with salt in a separate basin.
Blend the mixture of flour into the whipped mixture thoroughly.

Note Cook one pan at a moment, on the center rack of the oven.
2. Recipe for Banana Oat Bread

Two bowls of oats
Half liter moderately sour curd
One tablespoon of mustard seed
One tablespoon of urad dal
Half a tablespoon of channa dal
Half-tablespoon of oil
Two teaspoon coarsely chopped green chilies
Two tablespoons coriander, coarsely minced One bowl of shredded carrots
Half-tablespoon of powdered turmeric
Two tablespoons of salt
Idli Recipe with Low-Calorie Oats
Dry roast the oats on a Tava till they become somewhat brown, then pulverize them in a mixer.
Incorporate oil, urad dal, mustard seeds, as well as channa dal into a skillet and cook until the mustard seeds sputter and the dals become golden.
Incorporate the minced chilies, shredded carrots, and coriander into this mixture.

On Oat Stew
I can understand on a very deep level the discomfort many people I love have with porridge. The name is almost onomatopoeic - it’s like, gloopy. I get it. But what I see in porridge (tender, stewed grains and oats) is a gorgeous base for delicious ingredients. Over the past couple of years, I have built up an arsenal of recipes for porridge, making free mornings something delightful. Porridge is your canvas for something incredible- you just need an open mind, babie.
Making your Oat Stew Sing

I personally don’t quite buy into the idea that milk or water will result in a different or “better” oat stew. Non-dairy milks in my experience are a little less forgiving because there are non-solubles present that just won’t absorb into the grains. It sometimes tastes almost chalky? My general approach is to use water, and then if it gets a little dry to top up with oat milk for a little more c r e a m i e n e s s
Go slow!
Oat stew is a stew and therefore must be cooked, gently, on a low heat, until it is beautiful and gloopy and coooooked. if you are cooking on the hob I truly advise against trying to blast it with heat- this will scorch your lil oats and make a big gross bowl of bad. Go slow and low. Let the grains soften and absorb the water/milk. My nana would leave them to soak overnight, so having them the next morning would be a simple matter of heating them up. I am not going to do that ever, because I truly love standing over my hob, bleary-eyed, staring into a pot of beige while my coffee brews (I’m paranoid about bugs getting into it in the night).
Go FAST!
That being said, there is also a lot to be said for microwaving your porridge. It’s faster, and might not be quite the same as hob-made (it loses a lot of texture when it’s microwaved) but if you add just a little more water than you need, stir often, and add in spices afterwards, it’s totally sufficient.
Use spices
Spices are what make porridge so beautiful. You can heap anything into it! My usual is a triad - nutmeg, cinnamon & ginger, all in powder form. Sometimes I steep star anise, or cardamom, and fish them out before eating. I read somewhere once that adding the spices in as it’s cooking can like, kill the flavour or something, so I usually add them in towards the end. This could be based on total superstision but it is my rhythm, and when you find yours, making this hot, comforting bowl food, might become a joyous part of your morning off.
Create Texture
At its best, every bite of porridge is a variety of flavour, texture and always a comfort. If you are not a Gloopy Guy, texture is key. This can be done with slices of crunchy apple, nuts & seeds, raisins, who cares, toss some lego bricks in there, I don’t care!
Nut Butters
I don’t fucking eat porridge if there isn’t some nut butter glomped on top. I don’t care which one, I just need it- it improves the overall Mouth Feel, crunchy varieties add texture, it keeps you full for longer. It can also switch up an old favourite - For example, I make a lot of banana & blueberry porridges, and before eating I do a glormp of Healthy Peanut Butter. But when I’m feeling Flirty I gloog some of the chocolate Harrys Nut Butter (fancy Nutella) on top and I close my eyes and I slowly lift out of my own body because banana, chocolate and blueberries is my favourite sweet combination in the whole wide universe.
Things I put in/on my hot oat soup
Microwaved banana + nut butter
A gentle, loving way to make use of your old nanas without committing to baking and then eating a whole ass cake. I got up one morning and looked around sadly, realising I had no bread, no eggs, no cereal and no fr- oh. I did have fruit. I had one very dubious-looking banana, well on its way out after a life hardly-lived. I stole this idea from Jack Monroe but put it in a porridge context which makes it new and also better.
Put your oats in the bowl you want to eat them out of. Cover the oats with water, and bonk it in the microwave for about 2 minutes. Add some cinnamon into it after to cheer it up. Your porridge is done! Congratulations. Slice up your overripe nana, out it in a mug and microwave the banana cup for about a minute. Stir it up and be so careful because sugar, when hot, is hot!
Top your porridge with your gloopy hot nana mess, and glomp some crunchy nut butter in there for good measure. This will take a matter of minutes. The result is a soft, sweet breakfast situation!
Caramelised pears, cardamom
This is a Fancy Lady Breakfast, one I make for my girlfriend on sleepy weekend.When you’re cooking your porridge, throw in a good pinch of ginger and about three cardamom pods per person (you will have to fish these babies out so just. Beware.) On a low heat, slowly warm some sliced up pears in a saucepan with a little honey, and some spices (I use cinnamon and ginger). Let them heat all the way through, and top your bowls of beautiful soft oats with the pears. They will let off lots of liquid in cooking, so pour over the remaining syrup. This is stolen from Anna Jones, who has such lovely, fancy recipes that I'm far too busy to actually make.
Berry pie porridge
This is my favourite seasonal switch em up breakfast- While my porridge is on the hob I take a punnet of blue or blackberries and I pour them into another small saucepan on a medium heat with some syrup and lemon juice. During this time I stare into these two saucepans, watching the slow, steady alchemy in silence. Stirring frequently, I like watching the berries swell and darken, popping them against the wall of the pot as the mixture becomes part compote, part jam. I usually grip a cup of coffee because my kitchen is bitterly cold. The heat from both rings and the fragrance of the food fills the coldest room in the house, and the space too, slowly transforms.
The berry mixture is done when it has been bubbling for a while and starts to thicken. I never quite make it to this part, because the smell of hot sugar and the vivid colour of the berries are so beautiful. As soon as the porridge is done, glomp it into a bowl, and spoon your compote on top. This is your base. Add nuts, seeds, or fruit if you wish. I eat it as is, or with some fuckin. Smooth. Cashew butter if I have some. I love keeping this breakfast smooth and sweet, like a pudding. It is so warming, so fortifying.

Seared Salmon with Braised Broccoli
Ingredients:
1 ¼ pounds wild Alaskan salmon fillet, skinned cut into 4 portions
1 tbsp chopped fresh rosemary or 1 teaspoon dried, divided
1 tsp salt, divided
2 heads broccoli (1-1 ½ pounds), trimmed
1 ½ tbsp extra-virgin olive oil, divided
1 small onion, diced
3 tbsp raisins
2 tbsp pine nuts
½ cup water
Method:
Season salmon with half the rosemary and ½ tsp salt at least 20 minutes and up to 1 hour before cooking. Cut the broccoli into florets with 2-inch-long stalks. Remove the tough outer layer of the stalk with a vegetable peeler. Cut the florets in half lengthwise. Heat 1 tbsp oil in a large wide saucepan over medium heat. Add onion and cook, stirring occasionally, until translucent, 3 to 4 minutes. Add raisins, pine nuts and the remaining rosemary; toss to coat with oil. Cook, stirring, until the pine nuts are fragrant and beginning to brown, 3 to 5 minutes. Add the broccoli, season with the remaining ½ tsp salt and toss to combine. Add water and bring to a boil. Reduce heat to maintain a gentle simmer and cook, stirring occasionally, until the water has almost evaporated, 8 to 10 minutes. Meanwhile, heat the remaining ½ tsp oil in a large nonstick skillet over medium-high heat. Add salmon, skinned-side up, and cook until golden brown, 3 to 5 minutes. Turn the salmon over, remove the pan from the heat and let stand until just cooked through, 3 to 5 minutes more. To serve, divide the broccoli among 4 plates. Top with salmon and spoon raisins, pine nuts and any liquid remaining in the pan over the salmon. Quick Chicken Tikka Masala
Ingredients:
4 tsp garam masala
½ tsp salt
¼ tsp turmeric
½ cup all-purpose flour
1 pound chicken tenders
4 tsp canola oil, divided
6 cloves garlic, minced
1 large sweet onion, diced
4 tsp minced fresh ginger
1 28-ounce can plum tomatoes, undrained
1/3 cup whipping cream
½ cup chopped fresh cilantro for garnish

Method:
Stir together garam masala, salt and turmeric in a small dish. Place flour in a shallow dish. Sprinkle chicken with ½ tsp of the spice mixture and dredge in the flour. (Reserve the remaining spice mix and 1 tbsp of the remaining flour.) Heat 2 tsp oil in a large skillet over medium-high heat. Cook the chicken until browned, 1 to 2 minutes per side. Transfer to a plate. Heat the remaining 2 tsp oil in the pan over medium-low heat. Add garlic, onion and ginger and cook, stirring often, until starting to brown, 5 to 7 minutes. Add the reserved spice mix and cook, stirring, until fragrant, 30 seconds to 1 minute. Sprinkle with the reserved 1 tbsp flour and stir until coated. Add tomatoes and their juice. Bring to a simmer, stirring and breaking up the tomatoes with a wooden spoon. Cook, stirring often, until thickened and the onion is tender, 3 to 5 minutes. Stir in cream. Add the chicken and any accumulated juices to the pan. Bring to a simmer and cook over medium-low heat until the chicken is cooked through, 3 to 4 minutes. Garnish with cilantro.
