राइस इडली रेसिपी / इडली बनाने की विधि / South Indian Idli Recipe
इडली चावल और दाल के बैटर से बना नरम, स्टीम किया हुआ नमकीन केक है। इडली हर दक्षिण भारतीय घर में बनाया जाने वाला एक पारंपरिक नाश्ता है। इडली सिर्फ भारत में ही नहीं बल्कि भारत के बाहर भी लोकप्रिय है। यह एक शाकाहारी, ग्लूटिन रहित रेसिपी है सांभर और नारियल की चटनी के साथ परोसी जाती है और हेअल्थी नाश्ते के विकल्पों में से एक है। इडली बनाने के लिए दाल और चावल को पहले भिगोया जाता है और बाद में अलग-अलग पीसा जाता है। दोनों बैटरों को एक साथ मिलाया जाता है और फरमेंट होने के लिए रख दिया जाता है . बाद में नमक मिलकर बैटर को पारंपरिक रूप से इडली बनाने के लिए इस्तेमाल किए जाने वाले बर्तन में स्टीम किया जाता है। इडली बनाने के दो पारम्परिक तरीके हैं जिनसे आप सामग्री को भिगोने, उन्हें पीसकर बैटर बनाने और फरमेंट करने की पारंपरिक विधि से इडली बना सकते हैं।आप बेसिक बैटर के साथ डिफरेंट टाइप की इडली बना सकते है लेकिन एक बेसिक, इडली सिंपल फरमेंटेड बैटर चावल या इडली रवा और उड़द दाल के साथ ही बनाया जाता है।

Idli Recipe | Soft Idli Batter With Tips And Tricks (South Indian Breakfast)

1 cup regular rice + 1 cup parboiled rice or 2 cups idli rice or 2 cups parboiled rice
½ cup whole or split urad dal - 120 grams whole or split urad dal (husked black gram)
¼ cup thick poha - 20 grams (flattened rice)
¼ teaspoon fenugreek seeds (methi seeds)
2 cups water - for soaking rice
1 cup water - for soaking urad dal
½ cup water - for grinding urad dal or add as required
¾ to 1 cup water - for grinding rice or add as required
1 teaspoon rock salt (edible and food grade) or sea salt
oil - as required to apply to the idli moulds
2 to 2.5 cups water - for steaming idli

Instructions
Soaking rice and lentils
Pick and rinse both the regular rice and parboiled rice.
Rinse the poha and add to the rice.
Add water. Mix well. Cover and keep the rice + poha to soak for 4 to 5 hours.
In a separate bowl, rinse the urad dal and methi seeds a couple of times.
Soak the urad dal with methi seeds separately in water for 4 to 5 hours.

“Vengaya Thokku” -  A south Indian style of Spicy, sweet and salty Onion Relish
“Vengaya” means Onion and “Thokku” means pickle or relish in Tamil. When I was a kid I used to hang out a lot at my friend’s place whose family was Tamil Brahmins from Chennai. They were our next-door neighbors so there was a lot of cultural exchange between both the families. Obviously, there was also an exchange traditional recipes. I must say, their pickles are some of the most flavorful. So here’s a recipe for Onion Thokku which is a great condiment for idli, dosa, rice meal, and Pita bread. 
Ingredients: 
3 cup red onions
22 garlic cloves
1/2 cup tamarind soaked in water
6 Kashmiri dry red chilies soaked in water
5 tbsp. oil
salt to taste
1 teaspoon Turmeric 
1 tbsp. Jaggery
1/2 tbsp Coriander seeds 
2 tbsp. mustard seeds 
1 pinch Asafoetida 
1 tbsp Fenugreek seeds
1 tbsp Bengal gram (optional)
1 tbsp skinned black gram/ Urad daal (optional)
6 to 7 curry leaves 
Method: 
1 - To a pan add Fenugreek seeds, coriander seeds, and only 1 tbsp mustard seeds. Slightly roast it till it gets brown. Grind this to a fine powder and set it aside. 
2 - Now to a mixer jar add onion, 10 to 15 cloves of garlic, tamarind and red chilies. Grind it into a paste.
3 - Heat oil in a deep pot and add 1 tbsp of mustard seeds, 1 tbs Bengal gram and Black gram. Let it change to a golden brown color. Now add left over garlic cloves and curry leaves to the oil and stir. Now add the onion paste to it. and cook for a minute. 
4 - Now add turmeric powder, salt, jaggery, and ground powder which you made in the first step.
5 - Sauté till it thickens and separates the oil. The color should change to a darker brown. Taste and adjust the salt according to your liking.

Every state in India has it’s own take on food and having grown up with a Tamil family I’m obviously a little biased towards Tamil food 😊. Oh! A pro tip for making perfect Dosa - if you do not want your Dosa to stick to the pan then make sure your Dosa batter is at room temperature. Also, brush your pan with half an onion before spreading the batter onto the pan. This will give you a perfect round Dosa every time. Enjoy this recipe and let me know your thoughts.
