I've been cooking a lot lately and I have really discovered the joys of vegan recipe sites. I'm a vegetarian, but I don't like the taste of eggs or milk or most types of cheese and I'm lactose intolerant, so while I'm not giving up the occasional pizza when it comes to cooking myself I tend to find things on vegan sites waaaaay more appealing than vegetarian or omnivorous sites. I made the most amazing dish tonight and it called for cashew cream and it was my first time making that and it was sooo good. It made the dish really rich and creamy without the gross milky flavor in actual cream based dishes and without upsetting my stomach. I feel like I have solved the secrets of the universe lol.

the other day @elodieunderglass​ made a lovely post about picking plums and making jam, and then some nearby plum trees went absolutely hogwild on fruit production and I happened to be out on a walk wearing my 18th c. tie-on pocket and this happened:

it’s a lovely colour, and sweet with just a bit of a kick to it, and I would like to offer my thanks for reminding me that a) it’s plum season b) you can make jam with them and c) you can put spices in the jam (cinnamon, cardamon, allspice and a touch of nutmeg)

people who write shit like “add oil, then season with salt and pepper and toss to coat” should not be allowed to write cooking recipes.
how the fuck do I toss something on a flat baking pan??? if you want me to coat something in oil and spices, it happens in a bowl or not at all.
what the fuck is “season with salt and pepper”? how much salt and pepper do I add? why can’t you just provide a normal measurement?
see, this is why I hate cooking: people just REFUSE to give simple, understandable directions.

I wanted to make a pasta bake tonight cuz they're the easiest thing I know how to make but my brother doesn't like the texture of pasta so I made a pasta bake the way I usually do but used gnocchi instead and it was kinda good? Could have done with a bit more garlic and probably more cheese to melt on top but 10/10 will be making it again.

No Knead Bread

Was it Good? Yeah!
I was experimenting with no-knead recipes for a friend and for when I don't want to buy bread from the store. This recipe is totally do-able without a Dutch oven too, if you don't have one (I used an oven-safe glass casserole dish and aluminium foil). It's a very convenient hands-off bread. You put the stuff together, let it sit a couple hours, then it just goes in the oven. The taste is nice, if you want something kind of sourdough-y without the work of sourdough. The shape isn't great for sandwiches or toast though, and neither is the crusty-ness of the crust. This kind of bread would go very well with soup, stew, or a dip like hummus, though. I might try it again but make it more oblong instead of circular. Mine's a little dark-looking because I accidentally left it in the oven too long.
