Back with some deliciousness (and made up words) !!!! 😝 Summer time Chi is approaching which means that it is officially BRUNCH season! 💜 🥞 This Very Berry French Toast is one of my favorite low-calorie brunch recipes from my upcoming meal prep cookbook! I love this recipe because: ✅ It’s delicious... seriously. ✅ The calories are excellent (258 cals). ✅ The macros are excellent (CHO: 24g PRO: 14g FAT: 10g) ✅ You can remain in your calorie deficit without depriving yourself of delicious food! I pair this with couple slices of Turkey bacon and/or soft scrambled eggs for some extra protein. Just An Easy Vegetarian Breakfast Whole meal yields 217 calories, 17 grams of Protein & 7 grams of Carbohydrate! Prep Time: 2 minutes Cook Time: 30 minutes Ingredients: -2 Large Organic Brown Eggs Hard Boiled -1 slice of Sweet Earth Plant-Based Benevolent Bacon -¼ cup of Spinach -3 Cherry Tomatoes chopped -2 tbsp of diced White Onion -2 tbsp of diced Green Bell Pepper -½ Lemon’s worth of juice -Dash of Salt -Dash of Pepper Steps: -Rinse & dry all vegetables. -Boil a pot of water, throw in eggs, reduce heat to low-medium, cover with a lid & cook for 15 minutes. -Once ready, place eggs in cold water and allow to chill for 5 minutes, then peel & slice in half. -In a small bowl, mix spinach, onion, tomatoes, green bell pepper & lemon juice. -In a small skillet, fry a slice of benevolent bacon for 5 minutes on each side. -Plate halved eggs, sprinkle with salt & pepper. Plate veggie bacon & side salad.
