Fact: The Koopa Kingdom is Bowser’s homeland and the greater location of Bowser’s Castle.
While the Koopa Kingdom is most well known for its rocky terrain, volcanoes and lakes of lava, it has also been shown to feature other environments, such as dead tree forests and plains.

How many King Boos are there?
King Boo is a reoccurring antagonist in the wider Mario franchise and the main villain of the Luigi's Mansion subseries. Some questions surround him, like if there are multiple of him or just one. This is because his design has changed somewhat depending on which series he appears in.
He debuted in the first Luigi's Mansion game, where he appears as a large Boo with a blue tongue, glowing eyes and a shadow over his eyes. This design would generally be followed in the other games in the Luigi's Mansion series, but outside it, King Boo received a tamer design. The second game he appeared in was Mario Kart: Double Dash!!, where he just looks like a large Boo with a more generic golden crown. This would go on to become King Boo's standard design outside the Luigi's Mansion series. Some believe these different designs are different characters and to complicate matters, a third variation with strange eyes and a long tongue also appeared in Super Mario Sunshine. So what gives?

One (true) King Boo
Right off the bat, I want to say that there is one "true" King Boo. Or in other words, the designs on the left and in the middle above are the same character. This is most blatant in Mario Kart Tour, where both designs appear and are considered alts of the same character with the same emblem and everything. Even characters that are evidently the same, like Cat Peach, Baby Peach and Peach, have different emblems at times. So that they have the same emblem seems a pretty open and shut case.
Beyond this, it is also noteworthy that in Mario Superstar Baseball, King Boo has bad chemistry with three characters: Luigi, Baby Mario and Baby Luigi. The bad chemistry with the babies may be riffing on the fact children are afraid of ghosts, but the bad chemistry with Luigi suggests a specific reference to the Luigi's Mansion series which would once again indicate both designs are the same character. In the sequel, Mario Super Sluggers, he additionally has bad chemistry with Mario, which makes sense given his anger towards Mario in Luigi's Mansion and his multiple kidnapping attempts. He also has bad chemistry with Yoshi in Super Sluggers, which is not a clear reflection of any known event.
If both designs are the same character, it does beg the question as to why they look different in the first place, aside from the differences in atmosphere between the Luigi's Mansion series and other Mario subseries. Some have suggested it is due to the crown King Boo wears in the Luigi's Mansion series, which is inlaid with a jewel and amplifies his powers. However, this does not work. King Boo wears two crowns throughout the Luigi's Mansions game: one with a red jewel in the first game and one with a purple jewel in Dark Moon and Luigi's Mansion 3. Only the second crown is said to amplify King Boo's powers. Furthermore, King Boo is seen in his Luigi's Mansion design without the power-enhancing gem at the end of Luigi's Mansion 3 and without any crown at the end of Luigi's Mansion.

Seán D. Walsh came up with the idea that in the Luigi's Mansion games (and by extension Mario Kart Tour), King Boo's appearance is different because he is angry. This would be in line with the appearance of Mad Boos and Mad Big Boos from Super Princess Peach, which have similar glowing eyes and a similar shadow around their eyes. It also fits since King Boo is generally angrier in the Luigi's Mansion series than he is in other games: in the first game due to E. Gadd capturing Boolossus and some past meddling of the Mario Bros. In Luigi's Mansion: Dark Moon and Luigi's Mansion 3 due to Luigi meddling in his personal plans (those unaffiliated with Bowser) multiple times.

This would mean that King Boo's design that first appeared in Mario Kart: Double Dash!! is his default state of being, and there is also some support for this. In Mario Superstar Baseball, it is said the gold crown he has in that design is his trademark one: "The king of the Boos. The golden crown is his trademark, and while he looks similar to other Boos, it's obvious that he's much larger than the others."
Furthermore, the ghost of Yikk in Mario & Luigi's Bowser's Inside Story + Bowser Jr.'s Journey also owns a figurine of King Boo in his tower. The figurine is of King Boo's design outside of the Luigi's Mansion series and given that Yikk is at least older than Bowser (since he isn't aware of Bowser), it seems that this is the appearance King Boo was most known by in the timeframe before Bowser's birth.

"King Boo" in Super Mario Bros. Wonder
Super Mario Bros. Wonder adds a wrinkle to this topic, as in several levels, a Wonder Effect happens wherein King Boo appears (in his design introduced in Mario Kart: Double Dash!!). At the end of the Wonder Effect, this King Boo turns into a normal Boo and its gold crown falls away. Does this suggest this King Boo design is fake in some way after all?

Not quite. The King Boos in Super Mario Bros. Wonder only appear under the influence of Wonder Flowers' power when the playable characters collect the flowers and their appearances are thus rather situational. While Wonder Flower effects can last for longer periods of time as is the case with Castle Bowser, there is no indication Wonder Flowers are a factor in any previous games. Thus far, they have only appeared in Super Mario Bros. Wonder and Super Mario Run. These are random Boos being transformed into fake King Boos and they return to normal once the Wonder Effect passes.
Boss Boo in Super Mario Sunshine
The final thing to address is King Boo in Super Mario Sunshine. He is fought once under the casino in the basement of Hotel Delfino. The thing is this boss isn't called King Boo in Japanese, but Boss Boo: ボステレサ or Bosu Teresa (the Japanese name for Boo). King Boo meanwhile is called キングテレサ or Kingu Teresa.
The other thing of importance is that King Boo appears to be made of paint from Bowser Jr.'s Magic Brush. A lot (but not all) of the enemies in Super Mario Sunshine are made from paint, as is evident when they melt away into goop after being defeated like Petey Piranha or leaving dirty paint splotches behind like Strollin' Stus.

When King Boo in Sunshine is damaged and defeated, particle effects appear that are similar to those that appear when balls of goop hit the ground. This indicates this King Boo is another fake, this time produced by the paint of the Magic Brush.

Conclusion
So, how many King Boos are there? One, technically three. The one that appears in Luigi's Mansion and most other Mario games is the same individual. The ones that appear in Super Mario Bros. Wonder and Super Mario Sunshine are fake King Boos, produced by Wonder Flowers and the Magic Brush respectively.

Where do the characters get the stuff they use In the Mario Kart Games from? And did the characters design the tracks that have their names?
I’m not quite sure what stuff you’re specifically referring to, but regardless, the answer is quite complicated. Assuming you’re talking about Karts and Items, the answer is “various places”.
Back in Super Mario Kart, while Mario was likely the one who organised, funded or at least initially proposed the event, Lakitu was the coordinator of the event, and ran the tracks. In the beginning they had more conservative rules surrounding the vehicles in use on the courses:
Hi everybody! Thanks for dropping by the Super Mario Kart race track. My name is Lakitu, I run this track. If you need my help, I'll be around. We race one seater, metal pipe frame go carts here. There are two engine sizes to choose from: 50cc or 100cc.

Mario Kart stated out a a fun recreational event with a handful of trophies. That’s the main reason the characters take part, and it has been the reason since the very beginning, in Super Mario Kart. Each one of the characters is competing due to their connection to Mario.

An adorable little kart racetrack has been built in the Mario world! Mario and his happy-go-lucky friends have gotten so enthusiastic about kart racing that they're already causing a ruckus! Even now, they're smack in the middle of a race! Let's take a quick peek at how it's going, shall we? Oh, it's just about to start! Even the usually cute characters look a little tense. However, in the years since it has become the Mushroom Kingdom’s premiere racing event and grown significantly. Racers from various Kingdoms take part resulting in an incredibly diverse audience. Mario Kart now has dozens of sponsors for each Grand Prix, extended tournaments, its own television network, branded tracks and inter-dimensional courses and guest racers.
Mario Kart 64 was the first major step in this direction, but Mario Kart: Double Dash!! brought things even further. From its manual:
THE MUSHROOM KINGDOM’S PREMIER RACING EVENT IS BACK! HOWEVER, THERE’S BEEN ONE MAJOR CHANGE TO THE RULES OF THE ROAD… THERE ARE NOW TWO RIDERS PER KART! NOW, RIDERS FROM THROUGHOUT THE LAND HAVE COME TOGETHER NO TEST THEIR DRIVING SKILLS. WHICH PAIR WILL PROVE THE FASTEST?

When Mario Kart started out, standard Pipe Frames were the only legal builds for the Mario GP. These models were likely built by Mario and his friends themselves.

However, with Mario Kart: Double Dash!! the Pipe Frames were retired in favour of a variety of Karts. Many of these karts were custom-made or modified pre-existing cars. Take Luigi's kart of choice in Mario Kart DS, for example: the Poltergust 4000. This Kart is part of the Poltergust series, a line of inventions created by Professor E. Gadd.
Another pair of examples are the Wario Car, which Wario makes use of in Mario Kart: Double Dash!! and Mario Kart Arcade GP 2, and the Wario Bike, which Wario makes use of in Mario Kart Wii. These are Wario's personal car and bike, which he uses in the Wario Land and WarioWare titles, and both were built by Wario's friend Dr. Crygor:

This odd genius lives in seclusion. He built Wario’s bike. Mona’s moped, Kat’s sword, and Jimmy’s cell phone. He wears a cryogenic suit that doesn’t protect his head.

The Standard Kart series of builds was then introduced as a replacement for the Pipe Frame in Mario Kart Arcade GP 2 and carried into tournaments from Mario Kart DS onwards. As a result of this, in later tournaments, custom or pre-existing vehicles were allowed to enter the tournament upon being modified to be legal for the Grand Prix. The Pipe Frames did eventually return in tournaments from Mario Kart 7 onwards, which featured more in-depth kart customisation.
Speaking of which, the Mario Kart events are sponsored by other brands Mario owns, such as Mario Motors, Mario Star, etc. These sponsors, as well as the many others not otherwise connected to Mario, likely fund the events and even provide them with parts and supplies.
It stands to reason that Mushroom Piston Engines provides engines, Fuzzy Battery provides batteries, Bob-omb Plugs provides spark plugs, Dream Gliders provides gliders, 1-Up Fuel provides fuel, Bowser Oil provides oil, 100% Organic Antifreeze provides antifreeze, etc.

Mario Kart Arcade GP 2 makes reference to a Grand Prix Committee, which sends letters to Cup winners to invite them to the Cup’s special Challenge stage. Their letters are closed with an “M” stamped seal. This would imply Mario is at least on this committee, if not the head of it. This is presumably the committee that organises the events and decides which participants to invite, what items will be used, etc.

As mentioned previously, all of the participants either know Mario directly or have connections to people who know Mario. The Super Mario Kart manual seems to call attention to how each of the participant racers connect to Mario specifically.
MARIO & LUIGI The Mario Brothers have pretty much the same abilities in cart driving. Mario and Luigi have had a friendly rivalry that goes back to their childhood.

PRINCESS & YOSHI At first, you might think that The Princess and Yoshi would have nothing in common (except their fondness for Mario).

While Toad and Koopa Troopa's descriptions don't specifically connect them to Mario, Toad is of course a long-time friend of Mario and servant to Peach, while Koopa Troopa is a minion of Bowser:

In short, Mario is what brings them all together - and in turn they each bring their own special items. The iconic Banana Peels thrown by racers in the Mario Kart series are actually from the Kong's Banana Hoard on Donkey Kong Island, having originally been brought to the races by Donkey Kong Jr. back in Super Mario Kart:

Because of Donkey Kong Jr.! He likes bananas, and the peels are slippery, so they got the okay.

In the original game, the only CPU-controlled character who throws banana peels is Donkey Kong Jr., which was a way to characterise the characters.

Despite Donkey Kong Jr. not appearing in tournaments after Super Mario Kart, it seems his son, the current Donkey Kong, continued to supply Bananas from Mario Kart 64 onwards. Donkey Kong and Diddy Kong even brought along some Giant Bananas in Mario Kart: Double Dash!!, Mario Kart: Arcade GP 2 and Mario Kart Tour:

Shells are common clothing/armour worn by Koopas, but seeing as the shells in Mario Kart are standard Koopa Troopa Shells, it stands to reason that the Koopa Troopa racer or perhaps Bowser brought the Red Shells and Green Shells originally used in Super Mario Kart.

These shells are worn by Koopa Troopas, both within and outside of Bowser's Army. We can even see one of Bowser's Airships in Super Mario Galaxy equipped with a shell dispenser:

The Green Shells and Red Shells even function how you'd expect - with Green Shells flying straight forward and Red Shells heading towards the nearest target!
However, with the expansion of Mario Kart in later titles the shells, which are mass-produced, appear to be provided by a company, with sponsors for "Green Shell Strike Equipment" and "Red Shell Strike Equipment" making appearances:

Koopa Troopa and Koopa Paratroopa seem to have their own supply in Mario Kart: Double Dash!!:

On the topic of items, Super Mario Kart used ? Panels to dispense its items. These panels are likely made by the same people in the Mushroom Kingdom who make ? Blocks. While they weren't used in later Mario Kart tournaments, they have still made a few other appearances since, such as in Mario Party 9.

From the Mario Kart 64 Mario GP onwards the ? Panels were replaced with the iconic Item Boxes, which were likely much more convenient for transportation and addition to the racetracks. But it wasn't until Mario Kart Wii where we actually learned where these come from, through the course Toad's Factory.

This is actually the Item Box Factory, as we can see not only from the trackside banners with the Item Box logo and giant sign of Toad with an Item Box, but from the shipping containers with items ready to go into the Item Boxes:

Inside the factory, we can even see the process of how Item Boxes are made. The Items are put inside standard Brick Blocks, before the Brick Blocks are placed on a conveyor belt with stamps of some sort. These stamps appear to be filled with some sort of magical rainbow liquid, likely sourced from Power Stars, which transforms the Brick Blocks into the Item Boxes, giving them their translucent rainbow appearance and their ability to float:

Circling back to the Kongs for a moment, Funky Kong is actually the one responsible for the construction of the DK Barrel Cannons featured prominently throughout Mario Kart courses.

We learn this when Donkey Kong mentions Funky in the context of their creation in Mario Super Sluggers:

This isn't all too surprising though, given Funky Kong's previous barrel-based mechanic work and his appearances in Mario Kart Wii and Mario Kart Tour, as well as the barrel-inspired Funky Stadium which he presumably also built:

Speaking of which, it's about time I discuss the stadiums, circuits and other courses and where they came from!
Mario is world-famous and incredibly wealthy from his adventures, businesses and sports stardom. Multiple of the circuits in the games are also clearly built by him or at least in honour of him. He‘s the only character with actual circuits named after him in Super Mario Kart:
State-of-the-art racetracks in the Mario world that are rich in variety. The effectiveness of the pipe obstacles is the key.

Mario Circuits have also been described as the primary circuits of their respective Grand Prix:
Mario Circuit This is the main circuit in Mario Kart: Double Dash!! Familiar denizens of the Mushroom Kingdom can be spotted here and there. The road's filled with curves, so this is a good place to practice drifting.

It stands to reason that most characters had a hand in designing the tracks that bear their names. In fact we know that's the case for several courses, such as N64 Wario Stadium:
That rascal Wario was in charge of the design and construction of this course. A fan of motocross races, he brought in major amounts of sand to fill this huge stadium in an attempt to build a course more suitable to bikes than Karts. Each lap's distance is extremely long, making it difficult to stay concentrated on the race.

Meanwhile the Bowser's Castle courses are modified from or otherwise based on the real Bowser's Castle:
Surprisingly, the Bowser's Castle has been transformed into a race ground! Because it's inside the building, most of the corners are tricky right angles. However, the most difficult part of the course is where the Thwomps are. They will block your path, and if you run into one, you will spin out. Should you be stepped by one, you'll find yourself squished flat as a pancake.

Bowser typically designs his courses with the help of his minions to be filled with traps in the hopes of beating Mario. This goes beyond the Mario Kart tracks and also applies to his Tennis Courts, Golf Courses, etc.:
Lord Bowser designed his course to defeat Mario, so it’s kinda full of lava and bombs and stuff like that.

Bowser enlisted his minions to create this course in hopes of defeating Mario with all the traps and hazards.

However, this isn't universally the case. For example, Peach Beach is merely Princess Peach's favourite beach resort in the Southern Isles, while Toad's Turnpike is on a public road in Toad City!

According to this interview about the development of Donkey Kong (1994), Mario’s eye wandered to Peach while he was still dating Pauline, and after he got famous, he dumped Pauline, making him look like a player and bad boyfriend and Peach a man-stealer. Thoughts?
To be fair, this interview is from 1994, and Mario's characterization has gone through quite a few changes since then. The same interview states that Donkey Kong was a gorilla Mario owned, and we all know that certainly isn't canon anymore.
A lot of other things have changed since the 90s, like Princess Daisy having a whole new personality since her debut, and The Koopalings no longer being Bowser's biological children.
I theorize that as games evolved past 8bit technology, and characterization became a bit more front-and-center, developers adjusted accordingly and put a bit more care into the lore they were building. I personally wouldn't take any factoids that came out before the year 2000 as gospel, but that's just me.
As for modern day Mario and Pauline, they seem to have a very amicable relationship. Even if we are to go with the assumption that they are exes, they're clearly still friends.

The concept of Mario and Peach's relationship is S O F U N N Y to me.
Like, you've got Princess Peach, who's a very good ruler and a badass princess and a generally competent person.
And Bowser, who might be a bit overthetop and has anger issues and is a little immature, but is also a competent ruler and a good and caring father and actually a sweetheart (underneath his gruff exterior), actively wants to marry her, which at the very least is a smart political move to ally their two kingdoms.
Not to mention that almost literally everyone in the Mushroom Kingdom loves Princess Peach and she could get literally anybody to marry her, both inside her kingdom and in neighboring ones (where at least not everyone is a mushroom, and that actually have some great and handsome heros).
But then this random stumpy Italian manlet plumber from Brooklyn stumbles out of the woods barely conscious and falls flat on his face
And she's like, yes, I want that one.

You were talking to one of the visiting nobles when Bowser walked up behind you, wrapping his arms around you from behind. He glared at the noble you were talking to.
“Bowser!” You exclaimed, “Hey, babe.”
Bowser grunted and leaned his heavy head on your shoulder, pressing his cheek against yours. His eyes flashed angrily at the noble. You chuckled and looked back at the noble. “This is my boyfriend, Bowser.”
“Your boyfriend?!” The noble repeated. “That brute?"
He looked Bowser up and down. Bowser growled, his grip on you tightening. You patted Bowser’s hand in an attempt to keep him calm. “Don’t call him that.”
Bowser clenched his teeth, rolling his eyes. He sighed. “Fuck off”
“Bowser!” You scolded, shooting the noble an apologetic look. Your boyfriend huffed and leaned away from you, crossing his arms. You turned back to the noble “I’m sorry about him.”
“I’m sure you won’t be with him for long." The noble scoffed.
Bowser narrowed his eyes, growling low in his throat. “Watch it..”
“You could do so much better than that brute." The noble sneered, winking at you, “Nobody wants to date a monster like him.”
Bowser grabbed you, sneering back at the man. He wrapped his arms around your torso, pulling you against him. You squeaked “Bowser!!”
“Shut up” Bowser growled at the man. His grip on you tightened as he stepped forward towards the noble. You tugged on his arm in a fruitless attempt to stop him.
“You have no idea how much pain you’d be in if my boyfriend wasn’t here...” His voice was dangerously low. “Do you understand me?”
The noble rolled his eyes and looked down at you. “How can you stand him? You’d be much better off with me, sweetheart.”
Before you could respond, Bowser had punched the noble. There was the horrible sound of bones breaking as you flinched away from the sight. Bowser snarled at the noble, who was clutching his now-broken nose.
“Get away from him." Bowser growled, glaring at the noble, “You disgust me.”
The noble glared at Bowser. “I could say the same for you.."
“What did you just say?” You hissed, “Don’t talk about my boyfriend like that!”
The noble rolled his eyes again. “It’s only a matter of time before he takes his anger out on you."
Bowser grabbed you, wrapping his arm around your waist, and pulled you away from the noble. He dragged you out of the ballroom and into the large garden.
“Bowser!” You exclaimed, squirming in his grip, “What the hell!?”
He led you to a gazebo in the middle of the garden. Bowser set you down on the path, releasing his grip. He sat down on the edge of the fountain, resting his head in his hands.
You watched him, worrying your bottom lip. It wasn’t uncommon for him to lash out like this, but you never knew what to do afterwards.
“Bowser…” You said softly, standing in front of him, “Are you alright?”
Bowser let out an irritated growl, glancing over at you before staring back at the ground.
“You want to tell me what happened in there..?” You sighed
Bowser snorted and rolled his eyes, turning away from you and crossing his arms. You frowned, sitting down beside him. He looked back at you, glaring. You put your hand on his shoulder, ignoring his glare. Bowser turned around and pulled you into his arms, pressing you against him.
He pressed his face into your hair, taking slow, deliberate breaths. “He was an asshole.”
You nodded and wrapped your arms around him. “Yeah, I know.”
“I don’t want him anywhere near you." Bowser muttered, kissing your forehead. “He tried to take you from me.”
You smiled, nuzzling into him. “It's okay, babe.”
Bowser pulled away from you and frowned. He took both of your hands in his, squeezing them gently. “Promise me that no matter what happens, you will always stay with me.”
"Promise.” You squeezed his hands back. “Try not to punch anyone else.”
Bowser gave you a half-hearted laugh. “No promises; I don’t appreciate someone trying to take what’s mine.”
You snorted and rolled your eyes. “Why do I love you?”
He grinned and pulled you into a kiss. “I love you too, sweetheart.”
He wrapped his jacket around you, peppering your face with kisses. “Promise me you don’t like him.”
“I promise,” you giggled, blushing. Bowser picked you up, still covering your face with kisses. “Mine, all mine.”
You squeaked and wrapped your arms around his neck. “Bowser! Put me down!”
“Nope” He grinned at you and started to carry you back into the castle. “I’m keeping you all to myself.”
You laughed and squirmed in his grasp, to no avail. He carried you up to his room and tossed you onto the bed. You let out a small shriek “Bowser! You bastard!”
Bowser laughed and shut the door before joining you on the bed. He wrapped you in his arms and pulled you under the covers with him. He nuzzled his face into the crook of your neck, his stubble scratching your skin.
“You’re lucky I love you.” You laughed, hugging him back.
Bowser pulled away to give you a soft look. “I really am.”

SPM Theory: Merloo is Merlee's Ancestor (and possibly Bestovius's as well):
Argument 1: Merloo's window in the Mirror Hall features a representation of the Sun, and Merlee's Japanese name and magic are both drawn from the Sun. This same symbol is also seen on the doors of Merlee and Merluvlee's locations in Flip/Flopside. Argument 2: In Merlee's Mansion, one of the pictures seen in the hallway depicts an eye symbol also seen in Merloo's window, providing another symbological connection between the two figures. Argument 3: Merluvlee possesses the ability to see into the future, something which Merloo was also capable of. Merlee also mentions that her ancestors have prophesied supplementary details to the Light Prognosticus regarding the four heroes. Argument 4: Also pictured in Merlee's Mansion are Merluvlee, who is known to be a relative of hers, and Bestovius. This may suggest that Merlee and Bestovius share an ancestor. Bestovius is noted as a master of dimensional magic, an area of expertise that Merloo shares, so if they do share an ancestor, that ancestor being Merloo would explain those parallels. Argument 5: In the Flipside Pit of 100 Trials, a presumed ancestor of Merlee who was trusted to guard the Yellow Pure Heart is depicted. As this Merlee ancestor who lived contemporary to Merlimbis is very similar in appearance to the Merlee of the current day, the likely candidate for the other ancestor would be the one who closest resembles her.
