When Anacostia first lays eyes on Necro Cadet Ramshorn, her only thought is, That girl has the smile of someone who died long ago.
“You’re going to have to have a better attitude than that during Basic, Cadet Ramshorn,” Anacostia warns her. “If you want to learn to be better, that is.”
Ramshorn doesn’t respond, just looks back up at her; eyes tracing up and down and lingering on her Scourge before traveling back to her face. For a moment, just a half of a millisecond, Ramshorn’s eyes flash with something that looks startlingly similar to hatred, burning and electric blue, like she’d very much like to sing Seed twenty-three and watch the flesh slowly melt from Anacostia’s bones. Like she’d enjoy it, were she able to.
Then the moment passes, and Ramshorn’s eyes are clear once more. As if it’d all been Anacostia’s imagination.
Anacostia’s—not sure if it was or not.

A series of conversations held from Army to Spree, orphan to orphan.
There's a bond there, and neither of them are particularly happy about it, but it exists.

Fish: The Meat (Wood Pellet Grill)
Tumblr media
Imagine a world where the taste of fresh seafood is never lost. A utopia for those who love it, and can't get enough. I grew up in Pacific Northwest where all kinds are readily available - from salmon to oysters or halibut steaks cooked on an open flame grill at your own beachside cabin retreat. The seven seas await you with these culinary creations that will make any day better than before, and if not then we've got some more pirate-themed activities waiting.  The ocean is a great place to find seafood. With such diversity in the variety and flavor, I've been able to explore many different types from all over land or in air-conditioned environments where they're sold at local markets near me. My absolute favorites are those Cajun flavors you find along Louisiana's coastlines as well as Baja California’s south beach town Los Cabos.
Salmon
I've been cooking salmon on a pellet grill since grade school. While other kids were learning about skateboards and keyboards, I learned about cedar planks and alder smoke. I know a lot about salmon. Wild Pacific Northwest indigenous people were crazy for it and so are we! When you smoke your favorite fish recipe on our pellet grill, make sure to throw in some wood chips from trees that have been specially selected by an expert smoker just like me who knows how important this ingredient really is when creating delicious flavors like no other. I might be going overboard here with all my expertise but let’s face facts: fresh wild-caught versus farm-raised - there isn't much difference unless they're being kept refrigerated. Tips & Techniques  The aromatic cedar plank is a great choice for smoking and barbecuing salmon. The cedar plank is so common today that you can find them at your local grocery store or even Walmart. Not only does this cooking technique allow the wood’s flavor and moisture to pass directly onto salmon, but it also helps prevent sticking. When grilling salmon, be sure to oil the grate beforehand. When you cook your fish on porcelain grates, the second time around it will stick and smell terrible. The salmon is best smoked after it has been cooked on the grill or in an oven. To get that delicious flavor, hit your fish with a flame and avoid overdoing it because this can cause flaking apart while cooking. A big spatula helps too especially when turning over pieces of meat so they don't stick together during the smoking process. Mayonnaise and Dijon mustard can help keep salmon moist. One of the most common ways to cook salmon is by applying a thin coat of mayonnaise or mustard before putting it in an oven. This will keep your dish from drying out and tasting weird.
Tuna
When I was working at the grocery store counter in college, everyone said that people only ate tuna out of a can. But one day someone came through my line with two beautiful pink steaks and they were so juicy. It turns out that all these years we've been missing out on delicious food because our minds didn't want us to spoil their image. The customer was a successful and knowledgeable man whom I respected. He explained to me how he planned on grilling his tuna steaks. That night, I bought my wife two steaks. The next morning we cooked up some delicious tuna — everything she expected and more. The next time I saw this customer, we traded stories. He told me how impressed he was by my ability to sear tuna steaks on a wood pellet smoker and actually bought the same one — from me. Tuna can be a delicious and healthy alternative to other types of seafood. However, the quality will depend on whether it's fresh or dried out - if you see any signs that your preferred brand has been frozen before being sold then avoid buying them as they won't taste nearly as good. Tips & Techniques  If you're looking to add a smokey flavor, try reverse searing your tuna. I don’t smoke my tuna steaks longer than 30 minutes to avoid the fishy flavor. Dill is the perfect complement to seafood, especially tuna. Dill weed is a fantastic spice to have on hand, but it's best when used for flavoring tuna steaks. Apply some dill seeds onto your plate before serving the dish up in order to get every last bit of flavor. It is important not to overcook the fish. Tuna steaks are always a treat, but if you’re not careful they can go from impressive to cat food really fast. They're meant for eating just as sushi-grade tuna should be - err on the side of rarer meat when preparing your dish so that each person gets their own piece with juice.
Tumblr media
Shrimp
When I think about seafood, shrimp always comes to mind. There are so many ways you can prepare it and not be disappointed in the taste. One way that stands out for me is how easy cooking them on a pellet grill is because they take less time than other types of fish or meats which makes our experience worth every second spent with this delicious food item on hand-held cuisine perfectionists like myself want everything all at once without too much hassle but still getting Their money's worth from each ingredient used during preparation.  Whether you're a shrimp lover or not, the grill is an excellent way to cook up some of these little guys. If possible try and find fresh never frozen ones to be cooked properly with all their flavor intact instead of using small packages that may have been sitting on store shelves since before Christmas. Tips & Techniques Of all the ways to cook shrimp, I think my favorite is Cajun or Creole Louisiana-style. But there are many different types you can try out on your pellet grill. When you're a pitmaster, there are many different styles of barbecue to keep up with. You can never be bound by just one style or method though - experimentation makes us all better.  Lemon is an excellent addition to shrimp. Squeeze the lemon in your cooking or after for an extra burst of freshness.  Grill baskets are a great way to cook shrimp and other small food items. To cook your shrimp, pick one basket up and put it over a direct flame or straight on the grill.
Oysters
Growing up in the Mid-Valley, it was always tradition to have seafood on Christmas Eve. The three different styles of oysters would be pan-fried or smoked before being eaten on their own with some hot sauce for dipping - but not too much because then you get that burning sensation all over your mouth. I prefer cooking these little guys medium size; they're easy enough so as long as I don't overcook them, which happens easily, everything should come out just right regardless of what kind/size grill/smoker you use. Tips & Techniques  I'll keep saying it until you listen, but the truth is a good pair of gloves will make your job so much easier. handling oysters on your grill can be tricky. You don't want to end up burning yourself or scalding yourself with hot shells, so use gloves.  Peek at your oysters often, but quickly. If you want to avoid drying out the oysters, then keep an eye on them and make sure that they are closed tightly. You also need a lid for when it's time to cook up your meal.  Speaking of needing your lid to be closed to cook, this may be the job for a smoker. The vertical pellet smoker is a great choice for people who want an easy and fast job. The window makes it much easier than other types of smokers, making this type ideal when you're in hurry or just have some time on your hands.

Pacific Rim AU Headcanons
Didn’t have the time to give them a full fic, so have some Trick/Trouble Pacific Rim AU headcanons instead for @shepherds-of-haven event. Got long enough to stick behind a cut to spare y’all’s dashes.
Trick is a former drifter and recent recruit who gained notoriety(and an offer to join the Shepherds) when she single-handedly took down a young kaiju. (It was a very young kaiju, and a very close call. And no one knows where it came from. Which worries the powers that be more than they admit)
Trouble’s last partner almost died in a fight, couldn’t shake the trauma to the point it was messing with their ability to Drift, and had to retire.
Trick’s paired with Trouble after the test markers indicate the two of them have an extremely high Drift Compatibility(98%), an assessment the two of them agree with within five minutes of meeting each other. The first time the two of them Drift together goes as smoothly as if they’d been doing it for years.
Their Jaeger is a Mark IV named Whiplash Gunsmoke. They nickname it Smokey(prompting an eyeroll from Blade bc “Jaegers don’t have nicknames” “Ours does, and shhhh you’ll hurt her feelings!”)
Their suits are primarily light grey, with dark red arms/gloves, so-dark-it’s-almost-black grey up the back of the legs and curling around front over the knees, helmets are black with a gold edge around the visor.
Smokey’s primarily built to annihilate anything before it can close distance,  so her arsenal includes but is not limited to: A Gatling gun on the right arm(Trick), plasmacaster on the left(Trouble), shoulder-mounts for what is equivalent to Mandalorian songbirds, and just in case, shorter versions of the Chain Sword that come out of each wrist(those require the hand bend back, blocking one of the main weapons, so they’re only for the unlikely event a kaiju survived everything else Smokey can throw at it and got in close.)
There’s one fight against a cat-III kaiju where Trick figures out a way to flush one of the head’s coolant vents to blow smoke off the Gatling following her kill shot(s), which Trouble thinks is just about the coolest thing ever, HOLY SHIT, Trick. That may be when he starts falling in love.
They spend the vast majority of their downtime together, not through any plan or anything, they just like doing a lot of the same things and wind up practically joined at the hip. There’s a lot of falling asleep on each other’s shoulder/eating off each other’s plates/playfully competitive sparring matches etc etc
Trick likes to hum/sing to herself, and more often than not after they spend time Drifting Trouble will catch himself humming the same song, or at least with it stuck in his head.
By the end of the first month after Trick arrives, there is a betting pool how long before they’re in love + realize it, with a bonus pot for which of them realizes first.
Good luck to all involved, bc these two are even more oblivious than in canon(if that’s possible??).
When they’re alone they’ll give each other shit for stuff they saw in the Drift, long as it doesn’t seem too serious/potentially traumatic a memory.
They both have pieces of the Serious Shit in each other’s past bc Drifting, but neither ever mentions it. Very “if they wanna talk about it, they’ll bring it up and I’ll listen.”
Lazu Reen is a Jaeger tech, and Trouble 100% still pounds his teeth in for making... Similar Comments to in canon about his and Trick’s relationship (paired with a “you really couldn’t find anyone better to [censored], Alder?”).
(Trouble gets an earful from Blade for fighting and a shoulder punch of gratitude from Trick for defending her honor while she helps him track down an ice pack. Worth It.)
They wind up fighting a cat IV kaiju named Fulcrum at one point that apparently has a really fast regeneration ability on top of being a tough bastard, bc it survives to get in close and starts trying to crack open the cockpit, like it knows they’re in there. Actually starts to pierce through on Trouble’s side before Trick just jams the Gatling up in its mouth and unloads(she’s terrified, why is she terrified?) while simultaneously Trouble flips out the Chain Blade under the plasmacaster and rams it in the thing’s gut. Basically it take two concurrent mortal injuries to take the thing down, and Smokey’s not in great shape afterward.
(Trick doesn’t realize she was screaming in panic rage the whole time until after, when she wonders why her throat’s so sore and she feels like she just had a good cry.)
Bc they were Drifting, Trouble knows just how scared she was during that fight, but can’t figure why; she’s one of the bravest people he knows. kaiju have never scared her before. So he does one of those general “You okay? You seem rattled.” checks while Smokey’s being repaired and Trick semi-forces a smile and a “Oh, yeah, just don’t wanna lose my sidekick” joke, which then devolves into a (near-giddy-we’re-alive-adrenaline-letdown) argument about which one’s the sidekick in this partnership. Trick wins bc she’s the primary pilot. They both sort of forget about the weirdness of whatever... that was fighting Fulcrum
Still gonna be an  Outside Forces Conspired to Make Me Kiss My Best Friend... and I (Kinda) Want to Do It Again. (or an even closer near-death experience) that kicks them over that fuzzy thin line between friendship and romance. Whether it’s Chase/Ayla/Briony going “WOULD YOU TWO JUST KISS ALREADY???” or mistletoe or a dare or kissing booth or whatever idk but after a day of being weird around each other one of them admits to the “kinda wanna do it again” part and the other’s like “...Yeah, me too.” and they do and it’s really nice and suddenly they’re making out all the time and “Would you two just kiss already?” turns into “OMG GET A ROOM”
(If it’s the even closer near-death experience version, the “ I’m alive! Even more importantly: You’re alive!” hugs somehow wind up involving a kiss(???) and they kinda stare at each other for a where did that come from?? second--Idk but I like it--and then start making out. There’s an actual conversation about it later that’s equal parts talking and the whole can practically read each others’ minds thing)
V important to stress(and this is true for them in any universe), literally the only thing that changes about their relationship once they’re a couple is the addition of kissing and sometimes sex. They’re already best friends and partners and all that wonderful stuff. They’re just adding an extra dimension now and holy shit now I can’t wait til they come to their senses in canon you dorks

Space YouTube Au with my travelers! I plan on making art for all of them eventually but rn I’m just gonna lay out what their channels are mostly about
🍬Amaranth: Fashion mostly, haul videos, outfit planning, probably some diy stuff as well. I also think they’re a bit of a geek about some of the historical/technical elements of it so there are probably videos where they make outfits inspired by or accurate to a certain time and place, etc
🩰Basil: ASMR channel mostly. I just see him making lots of concern with good, soothing vibes. I think he’d do lots of collabs and have plenty of live streams bc he just loves people
🍯Marigold: Historical/literature channel. Definitely leans more gothic themed hut overall she just loves that sort of stuff. Analyzing poetry and stories, rating the accuracy of period dramas, addressing common misconceptions about time periods and places. She probably has like “what your (x) textbooks didn’t teach you” videos
⚔️Magnolia: Magnolia is probably like, sports, fitness, lifestyle type thing. I think she’s a lot more inclusive and body/lifestyle positive tho. She’ll also do specific videos based on requests, for example someone might ask for a video specifically on what their daily routine should look like if they wanted to be a body builder based on their current circumstances and self and she’ll make a video specifically about that. She also brings in guests a lot bc she’s not everyone so having other people with different experiences brings more to her channel she feels.
❄️Iris: DIY channel vibes, she builds stuff, does crafts, bakes and cooks, makes clothes, gardens, etc. She’s not a cottagecore channel but I get the feeling she’d appeal to the cottagecore fans. She either has a voice over that plays the entire video with her speaking inbetween bits or she just speaks every once and a while and leaves a description of what happens in the video in the caption
👾Hawthorne: He might have one of those channels where he just builds random machines for laughs. He uploads a video and it’s just like “I made machine that will trim my house plants” and the thumbnail is like a massacred houseplant bc he’s very upfront about how his little experiments end.
💎Alder: He would probably have a mix of stuff. He just posts random shit, It’s like- Let’s play, let’s play, I copy poses in fireman calendars, Smokey eye attempt, let’s play, reaction video, vlog, drunk vlog, let’s play, etc. I get the feeling he’d do tons of challenges for charities and stuff. His three most recent videos are like, “Fundraiser tiers: If we get to the highest one I’ll literally eat my hat”, “Eating my hat”, “I went to the ER, don’t eat hats kids”

A lot of places are named after historical events, battles, and people, so keep that in mind. God/Goddess names tied to your world also work well. Places are also often named after things that the area is known for, like Georgia being known for its peaches.
My brain was fried by the end of this so feel free to add more!
I hope you find this reference helpful and good luck world-building!

VI The Chariot
What’s this?! Elf wrote something?!?!
Here is the first two chapters of book VI for my Arcana fic!
Ao3
The soft brush of lips against his own. The feeling of finger wound through his hair. The smell of sweet, smokey sent of alder hangs thick in the air. The dream comes to him the same as it does every night since he had fled the city three years ago. Perhaps longer though, if that was true the memories were now lost. “Be careful.” She hums between kisses, “The palace is a dangerous place.” He chuckles burying his face into her curls. He breathes her in, the familiar smell of saltwater and clove filling his nose. “Don’t worry about me.” He assues, placing a kiss atop her head, “With the palaces resources, I’m sure I’ll find a cure in no time.” “I swear if anything happens to you...” She bites her lip casting her gaze to her feet, “I- I just don’t attach myself to people, you know? I’m not built like that… But if I ever did… It doesn't matter. Forget it.” “I don’t think I’ve ever known you to be at a loss for words.” He tugs her closer. His heart aches to see her lips without that dazzling grin of her’s, “I suppose I just have that effect on people.” Still, her brows knit together they way they always did when she’s upset. Tears threatening to pour from her amber-gold eyes. He watches her reach into one of the pouches hanging from her hips. She produces a small sachet filled with delicate purple and white flowers. She takes his hand in her own, placing the sachet into his palm. “It’s a protection charm, angelica and heather.” She offers him a sad smile that feels too much like a goodbye, “Something to remember me by.” “I hardly think I could forget you.”
A sharp pain hits his temple. He winces, eyes squeezing shut. When they open he is in the palace dungeon working into the early hours of the morning. He glances over at the letters piling up on his desk. Reports from the city of the rising death toll. He’d been here for nearly six months and he’d yet to make any progress. He stopped responding to her letters months ago. It was better for them both this way. He couldn’t afford any distractions. She was beautiful and enchanting, with many options. He reminds himself that she had told him once that commitment wasn’t in her nature. She had told him many times before she had fallen into his bed of her many love affairs and casual dalliances. He closes his eyes imagining her on the deck of a ship once again. Grinning ear to ear as the sea spray hits her cheeks. How many times had he imagined her that way? Before he came to this dungeon of horrors he had always pictured himself with her. A lopsided smile tugs at his lips. They would have made quite the pair of swashbucklers. Perhaps they’d join Mazelinka’s crew? Or after the plague was nothing but a bitter memory, he’d buy her a small ship. She’d take him to all her favorite ports as he would her. The sharp feeling returns and he finds himself standing on the shores of Lazaret. He chokes on the heavy smoke. She stares into his soul her eyes dyed scarlet. Ash falls from the sky and clings to her shroud. Her face is sickly pale, her curls thinned. He tries to get closer. To call to her but she slips away. He feels the memory of her fading no matter how hard he fights it. Her voice, her face, her laugh all slipping away like sand through his fingers.
“Julian!” He wakes on the floor of Mazelinka’s hut, tangled in bed sheets. Cold sweat trickling down his neck, his breaths still short. Loss and longing pulling at his heart though he can’t quite recall why. “Julian, are you alright?” Fable rushes past the shabby curtain to his side, “It sounded like you were having a nightmare “Ah, that would be because I was having a nightmare.” She takes a seat beside him on the floor, tucking her legs underneath herself. She reaches over to the nightstand, producing a flask made of olive green glass from her bag. She uncorks it with her teeth before passing it over to him. The rum tastes of cinnamon and cloves, warming his whole body as he drinks. It’s stronger than he would have expected, more the kind of drink he’d expect to find on a pirate ship then in a ladies bag. He thinks back to when she had found him at the Raven, how at home see seemed despite her home in the nice part of the city. He glaces over at her, handing the flask back. “Why were you out of bed? I didn’t wake you did I?” She shakes her head, knocking back a swig of rum for herself. “No, I was already up.” She corks the flask and shrugs, “Couldn’t sleep.” “Oh? Hmm. Lucky for you, I’ve got some experience in the field of insomnia. Have you tried lying in bed consumed by ever mistake you’ve ever made? If that doesn't work you can try pacing and muttering to yourself. Or feverishly writing letters you’ll never send. They won’t put you back to sleep but they’ll pass the time.” He offers her a wishful half grin, “I wish we had more time. But I’m just being selfish aren’t I?” He pulls himself back onto the bed, eyes fixed on the ceiling. “Are you going to tell me what’s bothering you?” She inquires, golden eyes burning into him with a look that could strip him bare. “Ah can’t keep anything from that piercing gaze, can I?” He sighs, “Do you believe in forgiveness?” She arches a brow, “Forgiveness?” “Do you- Do you think even truly heinous things can be forgiven? Or are there some things you don’t get to come back from?” She sits silent for a few moments. He can see the gears turning in her head as she thinks over her response. “I think it depends on what and why.” She finally responds, “Sometimes life forces you to do things you don’t want to because it’s the only way. Some things are unforgivable but not many. I do know you can’t stay frozen though. Life has to go on.” “I just wish I could remember… then I’d know if I did something unforgivable.” “What will you do if you have?” She retorts fingers worrying the hem of the loss fitting shirt. “If I can’t make it right… I’ll take whatever punishment I deserve. Without question.” He shakes his head and lets out a dark chuckle, “Well isn’t this a dour conversation. Five cups of coffee and I’ll get the pep back in my step.” He patts the space in the bed beside him throwing the bedding back. Inviting her to join him. She crawls into the the sheets, tucking herself under his lean arms. “What’s the world like, outside of the city?” She asks, looking up at him though curly lashes. “Not had much cause for travel? I’m surprised honestly. You seem a worldly sort.” He pulls her a little closer, “I’ve been all over. What do you want to hear about the pirate ships that plague the Frozen Sea? Or maybe the priest lords of Firent? Ahh I could tell you the tale of the floating city of Hjalle-” His ears go red, “Ah, maybe not that one. It’s a little compromising.” She giggles, “I hardly think you could offend me.” She pauses for a moment, “Tell me about where you grew up?” “Nevivon, a little town south of here, in the salt flats. It’s known for its salt water hot springs.” His tone nostalgic, He absentmindedly runs his fingers through his hair “I haven’t been back in a spell and once Pasha left I didn’t have much reason to go back.” “Do you miss it?” “I suppose I do. Do you miss your home?” She is clearly not from Vesuvia. Her accent, her style of dress are distinctly forging perhaps somewhere southern? The points of her ears indicate elven heritage, a people not often seen in Vesuvia. “I suppose I must.” Her response is a bit hollow. Her voice ringing with uncertainty. He can sense the building tension. “How about I tell you about the time I stole a pregnant war elephant?” He watches the tension ebbed away with her laughter. “But only if you promise to still have some respect for me.”
She’d nodded off halfway through his second story. She now dozed softly beside him in the little twin bed. Her head resting against his bare chest, loss ringlets tickling his skin. He traces the line of her collarbone with his index finger. She was so small. Waking, her bold presence seemed to add a few inches. He watches the way her chest rises and falls with each slow breath. It’s strangely mesmerizing. He places a peck on her exposed shoulder. “Beautiful…” He whispers before placing a lingering kiss on the line of her jaw. He couldn’t remember ever wanting anyone this badly in all his life. She’d only been in his life for a short time, yet it felt as if she had known him for ages. She was fearless and strong and oh so painfully lovely. Panic seizes him. He can’t keep her… He was selfish to even consider asking her to stay. He should have insisted she take the bed and slept in the hole. He’d put her in danger by encouraging her advances. If the countess found out… A chill runs down his spine. He slips out of bed, untangling himself from her limbs. He needs air. He needs to be away from her. To shake himself free of his love sick haze. He slips his jacket and coat on glancing back at her sleeping form. Careful of the creaking floor boards he dips out of the hut.

The Morrigan Correspondences
The Phantom Queen as a whole
Morrigan is one of the great Goddesses of Ireland and is a multifaceted Goddess. She is one as Morrigan and many, a trinity as The Morrigan or the Morrigu. She is a shape shifter known for being a Goddess of war and battle, the cycle of life and death, and is also associated with wisdom and prophecy, magick and the land, among other aspects.
To truly gain a more insightful understanding of who Morrigan is, it is important to understand Celtic culture of that era. The Celts idolized warfare, and women were warriors up until 697 CE, often fighting in battle or helping the wounded. Protecting their families and their land (viewed as female) was a dominant aspect of the Celts pride and was reflected in the Morrigan.
Morrigan first appears in The Lebor Gabala Erenn (The Book of Invasions), dating back to 1150 CE, and is a pseudo-narrative of the history of Ireland that includes the arrival of the Celtic gods, the Tuatha De Danann, in Ireland and their later battle with the indigenous gods, the Fir Blogs. Interestingly, these stories were not recorded by the Irish Pagans. Celtic culture prized oral tradition and memorization, as it was an art form of storytelling. It was the Irish Christian monks, who were their descendants that preserved what they believed to be historical account.
Morrigan's origins can be traced back to the Copper age megalithic Cult of the Mothers (Matrones, Idises, Disit, etc.) whom appeared as triple Goddesses from narrative texts written by Irish monks sometime between the eighth and twelfth centuries, after Christianity had replaced Paganism as the dominant religion in Ireland.
Morrigan’s connection to battle and why Morrigan was important to the Celts and their culture becomes evident in these texts, although that is not all she represents. Morrigan’s name in history has varying spellings and translations, but in Irish her name was originally Mor-Rioghain, meaning great queen or phantom queen. The word Rigan, translates to queen and although Mor has several translations, grea” is the most accredited and accurate meaning to Morrigan. This meaning connects her to sovereignty as she was very much revered.

The Subtle Evolution of American Smoked Beer
Tumblr media
When faced with another long, cold, dark winter this year, many American brewers turned to smoky flavors to amplify new seasonal releases. Pulling inspiration from places and flavors around the globe, these creations ventured far beyond the traditional beechwood-smoked malts of Bamberg, where German rauchbier gets its bacon-like character. Instead, brewers from Boston to Bend, Ore., are expanding the spectrum of smoked beer flavors by using a variety of techniques and histories.
One of the more widespread smoked winter specialty beer releases this year came from a collaboration between Harpoon Brewery and Big Spruce Brewing, a Belgian-style ale brewed with oak and cherrywood smoked malts. It first premiered in December 2020 and is still going strong throughout the tri-state area. (On Untappd, it’s checked in regularly in Massachusetts and New York.)
“It’s a smoked abbey ale that we brewed with spruce tips and aged in Glen Breton [Canadian] whisky barrels,” says Al Marzi, chief brewing officer of Mass Bay Brewing, parent company of Harpoon Brewery. Named From Nova Scotia with Love, the inspiration for the Belgian-style ale is the close relationship between the city of Boston and the people of Nova Scotia: For more than a century, Nova Scotia has sent a spruce tree to be decorated and lit in Boston Common each winter as a display of gratitude for the aid Bostonians provided them after the Halifax Harbor explosion in 1917. Just like this heartwarming tidbit from history, Marzi says, this special release “will definitely warm you up on a cold night.”
The flavor profile of Jólabókaflód from Deschutes Brewery was also guided by northern inspiration. Assistant brewer Kyle Matthias set out to “capture the essence” of an Icelandic celebration in a beer.
Jólabókaflód translates roughly to “yule book flood,” the tradition of giving books as gifts and spending Christmas Eve reading with your family. To achieve a flavor reminiscent of that holiday scene, he used a blend of Special B malt, a dark and fruity Belgian malt; Victory malt, which brings toasty and nutty flavors; and oak-smoked wheat for just a touch of smoke to mirror the experience of reading by a fire while being cozy and warm.
A version of the beer has been made for the past several winters and is growing in popularity at Deschutes’ Portland and Bend taprooms. Matthias isn’t sure about Jólabókaflód’s future as a wider release, but says it will continue to be brewed for the taproom annually.
Although released annually as a winter warmer, the beer is dosed with fresh spruce tips in place of dry hops, a step that provides aromas of citrus and melon. Because of the melding of flavors from all of these special ingredients, the beer benefits from smoked notes without tasting like a “smoked beer.”
“The smoked wheat definitely provides a layer of complexity and nuance to the overall beer,” says Matthias. He also notes that the flavor intensity of smoked wheat is much more subtle than the smokiness of beechwood or cherrywood smoked malt.
He says “Jola” as the brewers call it, is still a great beer well after the holiday season because of the nuanced smoke flavors. “When it gets too cold outside for campfires, you can bring the smoke in with you and get a similar sensation to cozying up around a fire,” he says.
It was an idea closer to home that pushed Seedstock Brewing Company head brewer Jason Abbott to brew a smoked porter this January.
“It is inspired by my grandpa’s pipe. He was in Europe during World War II. He didn’t talk about the war much, but he did talk about the smokey beers [from wartime],” Abbott says. He also brought back a number of tobacco pipes that have been passed down through generations.
Abbott says the beer lands somewhere lighter than a porter but darker than a traditional rauchbier. It isn’t Abbott’s first time working with smoked malt and he’s comfortable balancing powerful flavors from the rustic malt. Seedstock has released a Gratzer, a traditional Polish style known for low gravity and clean smoked flavors, brewed with 100 percent smoked wheat malt, and also uses smoked malts as a twist in its Wee Heavy, a malt-forward Scottish style.
Because smoke can impart everything from meaty to roasted and even spicy flavors in beer, Abbott reminds his customers, “Smoked beers vary greatly, and just because you don’t like one smoked beer doesn’t mean you won’t like another.”
Our Mutual Friend Brewing Company may have made the most unique smoked malt profile of the specialty beers by using a single type of smoked malt for the entire grist.
The phrase “traditional smoked beer” often conjures visions of German brewing heritage and the rauchbiers of Bamberg, but Jan Chodkowski, Our Mutual Friend’s head brewer, was chasing a different historical style: the Stjørdalsøl of Norway.
Classic Stjørdalsøl is made with 100 percent alder wood smoked malt. To achieve this particular grist, Chodkowski teamed up with Colorado Malting Company to grow and malt its own barley and smoke it over alder wood. The result is a dark 9 percent ABV ale with “wonderful smoke character as well as toffee and dark fruit attributes,” Chodkowski says. Handcrafted malt is the star of the show here, so there are no additional flavors from other ingredients.
“Smoked beers are perfect for winter and cold weather because they can provide perceived body and warmth without added alcohol or sweetness,” says Chodkowski.
As the weather warms and customers look for brews made to enjoy in the springtime, Our Mutual Friend releases One Sunday Morning, a light smoked wheat beer with only 3.2 percent ABV — proving that smoke can bounce between cozy and refreshing.
