Mmmmmmm I made the best meal I've had in a while.

For the colcannon, peel and cut up a pound of potatoes and boil them in salted water until soft. While you're doing that, take at least four ounces of spinach and several green onions, and chop them up. Put a few tablespoons of butter in a pan, and melt them. Cook the spinach and green onions in the pan on medium heat for a few minutes, then add 3/4 cup milk. Let it come to a simmer, then turn off the heat. Drain the potatoes, return them to the pot, and add the spinach/onions/milk. Mash the potatoes. Taste and add salt and black pepper until you're happy. Congratulations, you have colcannon.

Earlier in the week, I found a big side of frozen salmon very cheap at winco. To prepare the salmon, allow it to thaw overnight in the fridge. Put it in a glass 9x13 pan. Salt the fish, let it sit for five minutes. Put any dry spices you like (garlic salt, black pepper, and italian herbs for me), the zest of one lemon, the juice of one lemon, and a pat of butter on top. Broil it for ten minutes, then check the internal temperature, you want at least 125 F. Pull it out and let it sit for a few minutes.

Put your salmon and your colcannon on a plate, with a nice pat of butter on the colcannon. Goes really well with strawberries

Been thinking of this song a lot lately in regards to Palestine. It's about the an Gorta Mór, the Irish Potato Famine, which wasn't a famine at all but a genocide of the Irish by England.

(Edit. Sorry if the lyrics aren't correct, I had to listen and put them in myself because I couldn't find them anywhere ‐ Colcannon is a bit of an obscure band. And I have a bit of a hearing disability.)

Is Colcannon actually good? Because my only experience with it is this truly heinous song I was forced to sing about it in choir in the 10th grade. And our director, who later had a nervous breakdown and left the school though the administration refused to tell us that leading some people to assume she died, cheerfully suggested someone make it and bring it in for the class and the entire vibe of the entire choir was like "look lady I'm taking honors algebra 2 this year and my parents are getting a divorce, I do NOT have time for this shit ok?"

Anyway fuck that song but maybe the dish is alright?

I had some red cabbage left after making the quick-pickle cabbage for the shrimp tacos on Saturday, and we’d bought some extra sausages and frozen them back in March; so I decided to do colcannon with sausages for dinner tonight. I found a recipe for potato-celery root-red cabbage (and caraway seed!) colcannon; couldn’t find celery root at the store, so I substituted it with parsnips.
