Packed back dinner from Feng Food (台湾味 “丰”) in Northpoint City. Yeah, the Guan Miao Mian with Specially Marinated Pork Chop (猪排关庙面) is for mum while I opted for the Sunrise Pork Chop Rice (日出猪排饭). Because of the orange egg yolk, they called this “Sunrise”. Added just a little of their super-hot chilli paste as it is really burning spicy.

Paczkę tortilli warto mieć w lodówce. To takie koło ratunkowe na sytuacje awaryjne.
Można do nich włożyć prawie wszystko: od najpopularniejszego smażonego kurczaka z pomidorem, cebulą i sałatą, przez ciepłe farsze z mięsa, fasoli i ryżu à la burrito, po wszelkie wariacje sałatkowe, i będzie smacznie. Od wersji skromnych, śniadaniowych, po sycące, obiadowe. Od wegetariańskich, przez rybne, po mięsne.
Zdarzało mi się - w chwilach napadu głodu i braku chęci stania przy blacie kuchennym - wpakować do środka resztki różnych serów, złożyć na pół, zapiec na patelni i nakarmić nimi córkę i siebie. Albo - nieco już podeschnięte pszenne lub kukurydziane placki - pokroić na kawałki, skropić oliwą lub olejem, obsypać przyprawami, ostrym serem, podpiec w piekarniku i schrupać jak chipsy.
Tym razem tortille posmarowałam częściowo serkiem topionym z czarnuszką, na tym ułożyłam liście sałaty kędzierzawej, a na wierzchu sałatkę z rzodkiewek, jaj na twardo, kukurydzy z puszki i ogórków konserwowych z dodatkiem majonezu.
Zjadłam tylko jednego zawijańca, choć miałam ambicje pokonać dwa. Mój wymyślony przyjaciel miał znacznie pojemniejszy żołądek. Nieoczekiwanie puste opakowanie po wrapach powędrowało do kosza.
Składniki (na 4 sztuki):
4 pszenne tortille mała puszka (170 g) kukurydzy 4 jaja 4-5 ogórków konserwowych 7 rzodkiewek 2 gałązki szczypioru główka sałaty np. kędzierzawej 2 łyżki majonezu płaska łyżeczka musztardy Dijon ser topiony (u mnie domowy - przepis wkrótce) czarny pieprz i sól do smaku
Wykonanie:
Jaja ugotować na twardo, obtłuc skorupkę, poturlać po stole, jak cytrynę i obrać (nie wiem, jak Wy, ale ja lubię ten proces). Pokroić metalowym sitkiem w kosteczkę.
Rzodkiewki umyć, pozbawić ogonków, liści i pokroić w niedużą kosteczkę. Ogórki odsączyć i pokroić w podobnej wielkości kostkę. Kukurydzę odcedzić na sicie. Szczypior posiekać drobno.
W średniej wielkości misce połączyć powyższe składniki z majonezem i musztardą. Wymieszać i dosmakować solą oraz pieprzem.
Tortille z jednej strony smarować niezbyt grubo serem topionym. Domowy można śmiało zastąpić kupionym, o ulubionym smaku. Na to układać liście sałaty oraz wzdłuż sałatkę. Zwijać tak, by końcówka tortilli była podwinięta, inaczej będzie wyciekał z niej sos.
Zazwyczaj od połowy długości zawijam wrapa w papier śniadaniowy lub folię aluminiową, wówczas ograniczam bałagan.

Smoked Salmon and Pickled Cucumber Sandwich

Warm days are upon us; they really are! And after a jolly good walk under a hot sun, across meadows and fields, there is nothing better than sitting down to a picnic with this Smoked Salmon and Pickled Cucumber Sandwich, a couple of glasses of ice-cold Chardie (just remember to bring lots of water, too, when you go hiking!), a good book and the blissfully scented shade of a black locust tree! Absolutely delightful, I assure you! A very good day to all!
Ingredients (serves 1):
a small Baguette Viennoise
2 tablespoons cream cheese
a pinch of freshly cracked black pepper
half a dozen to 8 slices Pickled Cucumbers
about 60 grams/2 ounces Smoked Salmon 
Halve Baguette Viennoise without cutting it through, gently opening it like a book. Spread cream cheese generously onto each side of the Baguette Viennoise. Sprinkle with black pepper.
Layer Pickled Cucumbers and Smoked Salmon slices into the Baguette Viennoise, and press gently to close the sandwich.
Wrap tightly in cling film, if bringing as a lunch or picnic. Keep in the refrigerator.
Enjoy Smoked Salmon and Pickled Cucumber Sandwich with a few Crisps, and a well-chilled glass of Pays d’Oc Chardonnay Vigonier or Marlborough Sauvignon Blanc.

Last night I finally decided I wanted to pickle the cucumbers and jalapeños I’d been holding onto. One of the jars ended up becoming a combination of the cucumbers and jalapeños that I threw some fresh cayenne peppers, dill, and Sichuan peppercorns into to see what it made. Hoping that it turns out tasty!

Opened by the ex-chef of Din Tai Fung, Feng Food (台湾味 “丰”) located in Northpoint City is popular for their pork chop fried rice. Brought mum along for an early dinner and some light shopping. Marked the selections on the order chit and proceed to pay at the cashier. My cup of Brown Sugar Caramel Milk Tea (焦糖奶茶) came first with the caramel sauce dripping on the inside of the cup. Just sweet enough with a hint of burnt sugar and so much cheaper (S$3.40+) than those selling at bubble tea stalls.

Mum as usual went for the S$12.80+ bowl of Guan Miao Mian with Specially Marinated Pork Chop (猪排关庙面). The handmade cuts of noodles is firm for al dente with a sliced-up piece of pan-fried pork chop over it. Over at the side, a few slices of pickled cucumber and spring onions for garnish.

My S$13.80+ plate of Shrimp & Kimchi Fried Rice (虾仁泡菜炒饭) came with a fried egg over the fried rice. Underneath were 6 to 7 crunchy and succulent shrimps. The fried rice is mildly spicy with sweetness and there are pieces of kimchi in it. Overall a pretty yummy plate of rice if you were to ask.

Pickled Cucumbers

These tasty Pickled Cucumbers are easily made and ready to add their bite, crunch and tang to your meat, fish, smörgås or crispbread in under half an hour!
Ingredients (serves 2):
1 1/2 heaped tablespoon caster sugar
3/4 teaspoon fleur de sel or sea salt flakes
1/4 teaspoon dried dill
3 tablespoons apple cider vinegar
1/3 large cucumber, rinsed
In a small bowl, combine caster sugar, fleur de sel and dill. Give a good stir. Stir in apple cider vinegar, until sugar and salt are completely dissolved. 
Cut cucumber into thin slices, and stir them into the vinegar mixture. Press the cucumber slices gently so that they are submerged in pickling mixture. Allow to sit, at room temperature, at least half an hour.
Serve Pickled Cucumbers with Swedish Meatballs, Poached Salmon,, Strömming Burgare, or onto Rye Bread.

Cucumber Salad
My garden isn’t doing too well this year. I have some green tomatoes, the basil is thriving and I have a few almost-ready habanero peppers. But the eggplant plants died and, even though I had lots of zucchini, squash and pumpkin blossoms, I have ZERO fruit.
Also, all of the cucumber plants withered.
So, when I wanted to make cucumber salad for guests recently, I had to get a cuke from the supermarket.
The dish wasn’t as emotionally satisfying as when I make it with a freshly picked cucumber. But it was still delicious. Also — the dill IS from my garden. That plant is barely hanging on. I had enough for this and one other recipe.
CUCUMBER SALAD
2 large cucumbers, peeled and thinly sliced
1 small vidalia or red onion, sliced
1/2 cup white wine vinegar
1/4 cup plain yogurt
2 tablespoons brown sugar
1 teaspoon salt
1 tablespoon chopped fresh coriander or dill
4 dried red chili peppers, optional (or use a few drops of hot sauce)
Place the cucumber and onion slices in a bowl. Mix the wine vinegar, yogurt, brown sugar and salt together and pour the liquid over the vegetables. Sprinkle with the coriander or dill. If using chili peppers, break them in half, remove the seeds and scatter the pods over the cucumbers. Toss the ingredients and let marinate for at least one hour.  Serve at room temperature or slightly chilled.  
Makes 6-8 servings
