Demona begins to test the waters. She probably should have found a way to keep an eye on his reaction as she tests out this sentiment on him to see how even this casual phrasing that is such a mild opinion by now to Demona comes off as such a shock to Goliath. He may not trust humans, but this does not mean the thinks their lives would be inherently worthless. To Goliath, to want no part of humans himself is not meant to be a reflection on them, but this is very much not the case for Demona.

But it's also important for Demona not to seem to interested in Goliath's reaction, so she does miss this. It's important he think she find it just simple reality and therefore not a big deal to make him feel weird about making it A Thing. It's an exercise in desensitizing him to the sentiments Demona harbors for humans.

Obsessed with characters who portray themselves as worse than they are. Who are lying to everyone including themselves about it. People generally assume if someone's lying about themselves they're trying to look better but sometimes they're trying to look worse. They attribute agency to where they had none, add intend to accidents, try to convince everyone that this is something they did instead of something that happened to them.
