As I said before, Thursdays has always been exclusively for pure vegetarian (no onion no garlic) cusines in my home kitchen. . Today, I've prepared Dalma. Dalma is a popular Oriyan cuisine. It is also prepared by Bengalis. Dalma is a traditional recipe of Orissa. There is a spiritual essence of Dalma in Odisha. Every day in Puri Jagannath Temple, Dalma is offered to Lord Jagannath as one of the main course cuisine for Bhog (Sacred Food offered to Lord as a ritual of worship)which gets distributed to the devotees and pilgrims as Prasada (Sacred Food). Such is the elegance and austerity of Dalma. It's indeed a simple cuisine with a historically profound spiritual essence. Innumerable vegetables can be added to prepare Dalma. Even, varieties of daal can be mixed together to prepare Dalma, however, I've used only Beulir daal (urad daal). I've added quite a few vegetables which are cut into cubes, like, raw banana, raw papaya, bottle gourd, narrow beans, broad beans, yum, baby raddish, brinjal, pumpkins, pointed gourds, green chilies, finely chopped coriander leaves and grated coconut. Ginger & green chili paste is a must. Dalma is incomplete without dry roasted spices made of cumin seeds, fennel seeds, dry red chilies, cinnamon and cardamom. . Like any other daal, Dalma also have an unique combination of spices for its sambaar . Its sambaar is made of ghee, pinch of asafoetida, paanch phoron, bay leaves and dry red chilies. Tuemeric powder, salt and sugar added to taste. Cheesecake but not a Cheesecake! Close to a decade ago, I walked into a small restaurant called Dalma in Koramangala, Bengaluru having no idea about Odia Cuisine. I pretty much enjoyed the Chingudi Besara & the khattas in the thali but what really captivated me was this caramelised gorgeousness in the glass shelf. One bite of it, I was in love with Chhena Poda. I would often request my college mate Sutapa Mishra to bring me some every time she would visit Bhubaneswar. Chhenapoda is believed to be an invention of Sudarshan Sahoo, when he set up a sweetmeat shop in Nayagarh right at the time we received our independence. Chhena based sweets are believed to be in existence in Odisha for a long time & to me they taste best. The number of sweetmeat shops around Jagannath temple, Puri is a class apart & I couldn't resist eating the Chhena Poda, the Kheer & the Rasagola there. Day before yesterday I decided to bake my version( Recipe: Veg Recipes of India). 2 litres of milk was split using lime juice to extract Chhena by hanging it in a muslin cloth. The whey wasn't discarded and was used to make sambhaaram. The cheese curds was then mixed with powdered jaggery ,a tsp of samba wheat semolina ,a pinch of baking soda & chopped cashews to a cake like batter consistency . The original recipe called for flavoring with cardamom powder. I instead used the pumpkin spice & some lemon zest . The traditional way is to bake it in sal leaves, but I used Banana leaves instead by heating them in flame to make it pliable. This was lined in a baking tray & baked to close to an hour at 200 degree Celsius till it became a bit caramelised at the top. I wanted to achieve more caramelisation but I was scared that it will go dry if I bake longer. The final product was moist and quite nice with a distinct banana leaf baked flavor. It's about last post which was the @abimilano twist on our Odia Dalma. Inspired by #pixar style #Ratatouille . In this post I will be sharing the steps I followed to show you guyz #whatsonmyplate yesterday. . #ingredients(2 portions) Toor Dal 1 1/2 Cup Roasted Moong Dal 1/4th cup(optional) Veggies (basically u can use anything u want ) Jaggery-1/2 spoon Hing Dessicated coconut (optional) Powder of roasted Cumin and red chilly 1 tspn. . For tempering: Cumin-1 spoon Ginger- 1 inch Julian Dried Red Chillies-4 nos Ghee Hing Procedure.: 1.Cut all vegetables in rounds like chips. 2.Mean while boil or pressure cook Toor and Moong Dal with turmeric , salt , jaggery and pinch of hing with very less water inorder to make a paste. 3.Cool the Dal and grind to make a very fine paste. 4.spread the prepared Dal or u can call sauce for Dalma Ratatouille, with a drizzle of ghee. 5.Arrange the Vegetable alternatively in spiral way. 6. Sprinkle Salt, turmeric , and desicated coconut and bake for 30-40 mins . Now for the Climax to the Dish. Prepare your tempering pan and add lot of ghee , just add 1 more spoon to what u think is sufficient for tempering 😀😉. Once its hot enough introduce cumin, chillly. Recipe of dalma with rentio toor dal
Buy rentio toor dal online and make this dalma recipe at your home. It is one of the popular recipes comes from the region of odisha in India which mix vegetables are used along with dal. One can be served this recipe with hot steamed rice.

Servings- 3-4
Ingredients
Rentio toor dal- 3 cups
Chopped drumstick- 1
Raw banana- 1
Big potato- 1
Beans- 10-12
Diced pumpkin- 0.5 cup
Brinjals- 2
Roughly chopped tomato- 1
Sliced onion- 1
Mustard oil- 2 tbsp
Panch phoran- 1 tbsp
Bay leaf- 1
Turmeric powder- 1 tsp
Red chili powder- 1 tsp
Cumin powder- 1 tsp
Chopped coriander leaves- 1 tbsp
Salt to taste
Water- 2-3 cups
How to make dalma?
Take a pressure cooker, add toor dal, water and cooked at least for 3-4 whistles. Here we have used rentio toor dal in this recipe; to get this dal you can opt to toor dal online purchase and delivered it to your home.
Now take a kadai, add cooked dal, water, turmeric powder and mix it well.
Add drumsticks, pumpkin, potato, raw banana, and beans.
Add salt as required, cover it, and cooked till the vegetables are half cooked.
Now add chopped tomato and cook till vegetables are cooked.
For tempering, heat a mustard seed, oil in a pan and add panch phoran spice mix.
Once the spices get started to crackle, add bay leaf and sliced onions.
Sauté the mixture till the onion turns to translucent.
Add red chili powder, cumin powder, and sauté it for 1 minute.
Now add dalma to the tempering and simmer for 5-6 minutes.
Add water if required, garnished it with coriander, and served hot.

Thanks a lot for showcasing the rich food culture of Odisha by Sweta Biswal.  She is a culinary comforter, who turns basic ingredients into soothing and carefully-crafted meals while showcasing the rich food culture of Odisha.  Her blog, Oriyarasoi – The cosmopolitan Odia’s kitchen, has been winning hearts through the stomach and it was recently nominated for the Indian Bloggers Awards 2017 in Lifestyle (food) category. Meet Odisha-born Sweta Biswal, who has been blogging about authentic Odia food since 2009. Her culinary journey began just before her marriage and became a passion with her husband’s love for food. “Initially, I would call up my mother, mother-in-law and other female relatives for recipes. Since Odia cuisine had largely remained undiscovered and there were not many websites on it, I thought of starting a blog of my own,” she said. The first recipe that she put up was the quintessential ‘dalma‘. “My husband can have dalma, five times a week,” she said smiling. Currently based in Bengaluru, Sweta slowly touched upon some traditional and authentic recipes of Odisha, giving them a cosmopolitan feel and look. From ghanta, ambula raee to enduri pitha, dahi-bara ghuguni, chuda bhaja and other cuisines integral to Odia festivals, the blog has them all. “I have posted almost 1000 dishes. The idea is to create simple dishes that one can easily prepare at home. The Odia ones are based on the concept of frugality, cooked with minimal ingredients to bring out maximum flavour,” she expressed. Since Odia dishes are low in colour, she garnishes them with greens, coconut and dry red chilli before posting them on her blog. “Visual presentation makes a whole lot of difference and the dash of green and red appeals to the senses,” said Sweta, who posts two cuisines every week.  For the ‘Sugar-free Dessert Challenge Finale’ hosted by masterchef Sanjeev Kapoor, she presented her mother’s recipe ‘Green Papaya Laddoos’ and finished third. “Everyone in my family is a good cook. So, I almost inherited it,” she said. Sweta has also experimented with a few Odia dishes and come up with Baked Malpua Tarts with Creamy Khira, Chuda Ghasa Parfait and Dahi Baigana Panna Cotta. “I owe this to my favourite chef Vikas Khanna and his show ‘Twist of Taste’, where he works around traditional dishes giving them a new look and taste,” she said.
