dunmesh anime and my subsequent reading of the manga happened at such a good time because my main Thing for the year has been food. I have a new years resolution thing that anytime i eat at a restaurant i have to try something I've never had before (or if the menu is rather limited, something I haven't had in a long time, or from this particular place). Last night I had lamb biryani from an indian place last night and it was really good! a solid new food! I also am trying really hard to cook as much as I can, and learn new cooking methods, buy new higher quality cooking supplies (next paycheck: brand new spices for my spice rack and a new sharp knife), etc. And it's just been nice having Laios and Co. going along on a food journey with me :)
Anyways, I'm baking coffee cake banana bread right now (I made this recipe last week as well) and it smells nice :) fed is best and making food personal can really really improve your relationships with it!

2. Lighter or matches? Depends on the purpose. I have a long lighter which I use for lighting Shabbat candles, and prefer fireplace matches for lighting fireplaces and fire pits.
32. Do you have a favorite towel? Yeah, I have an orange bath towel set which has a little fabric loop midway up the side of the towel so you can easily hang it on the hook right outside the shower. They're awesome. I got them from Target.
43. What's your take on spicy foods? Depends on the spicy food. I can do spice as long as there's not too much acid, too. I fucking LOVE biryani. A lot of spicy foods also have a lot of tomato in them, which doesn't sit well, but like... where I used to live in PA, Montgomery County, there's a lot of pharmaceutical companies (Merck, Teva, etc.), right? And they bring in a lot of chemists and bioengineers and stuff from India and Bangladesh and so on on H1 visas, those folx work for a few years usually and then either go home with their money and their experience or bring their families and stay permanently. So, as a result, we had a TON of Indian places where I used to live which were making biryani the right way, in the clay pots, and like, with their secret family recipe, and so much Indian food is made gluten-free by default that I could eat at a lot of the good, authentic places. Like, in this tiny-ass town of ~40K people we had at least six really good Indian places, and easily a dozen if you looked at the surrounding zip codes. I am fucking spoiled for biryani now.
Damn, now I want lamb biryani for dinner.

1/800 of biryani for 800: all in one pot sear lamb shanks, remove, caramelize onions, briefly sautee ginger garlic and tomato paste, VERY briefly sautee garam masala, coriander, chili, asafoetida, whole cumin, turmeric, paprika, add enough water to make pasty, add back in shanks, smear paste on, add ~an inch of stock + saffron, stew/pressure til shanks tender, remove all, strain liquid, add washed basmati + liquid to (cover + 1cm), add back in strained solids + dry fruit, cook to cook rice :D
Is it really an authentic recipe if it mixes inches and centimeters?

If Paul and Carlos are best friends (and I know you agree), what's a disastrous friend date they've had? Whose idea was it? What happened? Did it lead to a lot of inside jokes? Was it early into their friendship or later? Did TK have to bail them out?

Oh Tessa, thank you for this excellent question! Paul and Carlos’s first solo hang actually took place shortly after the night he and Carlos and TK went to the club! Paul was itching to make his grandma’s goat curry, however he was having trouble figuring out where to buy goat meat in ATX. In Chicago he always bought it at the Caribbean market in Humboldt Park (@freneticfloetry for the Chicago fact check) with the walk up counter for bomb oxtail stew and the spicy slaw that he still dreams about. But he’s still new to Austin and hasn’t been able to find any Caribbean or African markets yet.
After the club night Paul feels emboldened to approach Carlos on a scene, knowing he’s an Austin native and also a patrol officer, meaning he spends a lot of time in different parts of the city, he asks him if he knows of any West African or Caribbean markets where he might be able to buy the meats and spices he’s used to cooking his grandmother’s dishes with, the maggi and geera and culantro. And goat meat. And oxtail.
Carlos knows of a few places. He’s never been in them, never really had a reason to try West African food, but he’s always down for trying new foods. So over the next few months they explore the Caribbean and African markets and restaurants mostly in North Austin. They find a market that’s also a restaurant that serves all of Paul’s favorites: fufu, jollof rice with roasted lamb, Senegalese peanut stew, fried plantains and freshly fried meat pies. They fill up on food and rum punch before venturing into the market. Paul finally finds his goat meat and Carlos decides to buy some too. Lubricated by the rum punch he decides he’s definitely gonna cook a ton of goat recipes, so he buys nine pounds of it.
Paul and Carlos get home, still a little buzzed, and find a bemused TK waiting for them. When he sees the NINE POUNDS of goat meat he’s like, “…what on earth are you going to do with all of that goat meat, you don’t even have space in your fridge for that.” He’s right. He has to get TK to take some home and squirrel it away in the back of Owen’s freezer. He ends up making all sorts of goat dishes. He tries his hand at biryani and chanfana. But ultimately he uses it in soups, empanadas, chili… He even brings some over to Tía Lucy’s for a tamale party and finds it’s a hit with the family.
This is also how Carlos becomes Paul’s very eager taste tester in his lifelong efforts to perfect his grandma’s Trini goat curry.
