ONE POT CREAMY CAJUN SAUSAGE PASTA (Medium Spoons)

Adapted from this recipe to fit my needs. I often use recipes as a guideline to create my own recipe. I adapted this to be my own, but still crediting the inspiration. I definitely prefer the asparagus over mushrooms. Next time, I plan to add shrimp!
The OP claims it’s a 30 minute meal, and I’d like to draw attention to the fact that it took me far longer. Between washing things and prep, and cook time, it took a few hours. That’s the reality of cooking with disabilities and OCD, for those of you that haven’t experienced either.
So for this one, I definitely didn’t use gluten free pasta because I can’t do rice ingredients. I used a bag of tagliatelle that you’d find in the refrigerated pasta section. It cooks faster and uses less cooking liquid, so I adapted for that.
I love mushrooms, but wasn’t feeling mushrooms, and I definitely didn’t have the energy for prepping fresh peppers. Actually, I don’t even buy fresh veggies often because they always rot before I find time/energy to use them up. So the veggies I used were pictsweet grilling blend of peppers, onions, and asparagus. 
I have different steps than most people, probably, in that I wash all the packages of food as well. So rather than bothering with washing a plate and knife to cut the sausages on, once I washed the package, I ripped them apart by hand, since my hands were washed with the package, obviously. Clean hands, clean package. Saved me some time. I didn’t bother taking them out of the pot while the veggies cooked. I literally just browned the sausages, added the veggies until the liquid cooked down, added the tomatoes, pasta, and chicken broth (of which I used less than half of the 32oz container) and cooked the pasta down. Once the pasta was cooked, I added in most of an 8oz tub of whipped cream cheese. It definitely didn’t need more. I had no need to buy cajun seasonings after looking at the ingredients. I opted for some Montreal Chicken seasoning and chipotle powder. Season to taste, obviously. You do you.
I live alone, and cook just for myself, so I ate out of the pot with plastic fork and spoon. Whatever. Less to wash. Less energy wasted.
Ingredients:
1. Johnsonville Jalapeno Cheddar Smoked Sausages, broken/sliced up 2. Pictsweet Farms Veggies for Grilling: Asparagus, Sweet Peppers & Onions 3. 1 Can fire roasted Diced tomato 4. 7oz whipped cream cheese 5. Chicken broth (according to pasta’s need!) 6. Rana Green & Yellow Tagliatelle 7. Chiptle powder (to taste) 8. McCormick Montreal Chicken Seasoning (to taste)

Einkorn sour cream strawberry spread streusel cake recipe:
Streusel ingredients:
140 g organic all-purpose einkorn flour
100 g cold grass-fed butter cut into small pieces
1/2 cup (81 g) pure maple sugar
1/4 tsp sea salt
1 tsp vanilla extract
Instructions: Pulse all the ingredients of the streusel in a food processor and set aside.
Cake ingredients:
196 g organic all-purpose einkorn flour
125 g cold grass-fed butter cut into small pieces
1 1/2 tsp baking powder (aluminum free)
1/4 tsp sea salt
1/4 cup pure maple sugar
1/2 cup pure maple syrup
1/3 cup sour cream
2 organic eggs
1 tsp vanilla extract
1/2 cup strawberry fruit spread (I used St. Dalfour strawberry fruit spread)
Instructions: Put the flour, butter, baking powder, salt and maple sugar in a food processor then pulse until combined. Add the maple syrup, sour cream, eggs and vanilla extract then pulse until well combined. Pour the cake mixture into a 25cm round cake pan that has been buttered and floured. Spread 1/2 cup strawberry fruit spread evenly over the cake batter. Crumble the streusel over the strawberry fruit spread layer. Bake at 350°F for 40 to 45 minutes.

Einkorn yule log recipe Einkorn chocolate sponge cake ingredients:
1/2 cup organic all-purpose Einkorn flour ( I used Jovial organic all-purpose Einkorn flour)
¼ cup organic cacao powder (I used Navitas Organics Cacao Powder)
3 free-range eggs
1/2 cup organic pure maple syrup
1/4 cup water
1 tsp baking powder (aluminium free)
A pinch of sea salt
Filling:
2 cup Whipping cream
¼ cup organic cocoa powder
Any sugar of your choice (Sweeten the cream as you like, I used 1 cup BOCHASWEET sugar replacement or pure maple sugar)
Instructions: With a stand mixer fitted with a whisk attachment, whisk the eggs, maple syrup and water on a high speed until the mixture is fluffy. It will take 5 to 6 minutes with a stand mixer. Sift the einkorn flour, baking powder, cacao powder and salt. Fold the flour mixture into the egg mixture using a spatula. Pour the cake mixture into a (34.6 x 24.1 x 5.7 cm) rectangular cake pan that is lined with parchment paper. Bake at 375°F for 10 to 12 minutes. For the filling, Whisk the cream, sugar and cacao powder on high speed until stiff peaks form. After the cakes cool completely, fill the cake with cream, roll the cake into a log and cover the cake with cream. Cut an angled slice and place on the top of the roll. Apply some filling to the angled slice to attach it. Use a fork to carve lines into the frosting to create the appearance of tree bark.

Oven Baked Quesadillas
Dinner. They're not the most incredible quesadillas I've had, but they're fairly similar to the frozen ones from El Monterey. I didn't have the spoons to clean a frying pan so I toasted them in the oven. Two of them have chicken. I had these packages of shelf stable fajita flavored chicken. Good enough. It's food. I'm eating and that's what matters. And it was fairly low spoons given the oven method.
One day, with my friend's permission, I'll post authentic Mexican recipes she taught me. Her food is 🤤 hopefully I'll have that kind of energy soon. I've been craving real tacos. Haven't figured out the trick to nopales though.
