I wanted to make potatoes to go with my “steakhouse at home” dinner this weekend but it was late and I didn’t have time to do oven-roasted potatoes as I normally would. I knew we had some baby potatoes and figured I could find a way to do them in the Instant Pot. A quick Google search took me to this recipe. 

I didn’t bother to weigh my potatoes (this recipe calls for a pound) and thought I had more, so I added more water. Which ended up making the potatoes more steamed/boiled than crispy. But that was okay because I tossed them in the pan I’d used to cook pancetta and crisped them up a bit (and added yummy meat fat goodness).

I will likely try this recipe again and do it as written to see if I can get crispy potatoes. Will report back here if/when that happens!

Day 3 of Whole30 and I've already had a meltdown because I can't have ice cream. This is hard! I'm already getting headaches from the sugar withdrawal. I'm popping grapes like crazy to curb the sugar cravings. Michelle Tam (of Nom Nom Paleo fame) has been a lifesaver. I made her Chicken Duxelles (from her latest book) and it is FABULOUS! Of course, I wish I can have rice and banana ketchup with it, but alas. Having a successful cook encourages me to think that maybe I can survive the next 30 days. Wish me luck!

I took the first pic moments ago, several hours after it was cooked vs second pic, which was immediately after. The cold weather just won’t cooperate. The fat hardened faster than I could click my camera. I went on to check the gravy in the slow cooker and the tallow rose to the surface. Frustrated, I absentmindedly scooped it out and discarded it. (You cut short my photo mini session!)Yes, I DISCARDED A LOT OF TALLOW. And after I’m done with it, I felt like SCREAMING! What have I done?! I should have saved it!
