On today’s episode of the Coronavirus Cooking Diaries lets talk about Spatchcock chicken. After some of you get your mind out of the gutter, you will realize that Spatchcocking is a technique by which you cut out the back bone of a chicken, break the breast bone and splay the whole chicken flattened on a sheet tray while cooking. It is a simple process and you can use either a knife or a scissors to do it. You may not saying to yourself, why would I ever want to use this technique? It’s quite simple and many people say that the chicken cooks quicker, more evenly and stays juicy and delicious although that seems to be debatable. I definitely think the chicken cools quicker usually half the amount of time. Some days it’s ugly. I say it’s 2 halves of a chicken and really does cook faster, almost half the time instead of leaving the chicken whole. I put compound ramp butter the skin, heavily added salt and pepper to the top and bottom of the chicken, put herbs and lemon slices under the chicken and placed garlic tossed in oil over the bird. It cooked for 45 minutes at 425 degrees. Typically it takes twice that amount of time to cook by a bird this size. It came out delicious and the kids devoured it. What do you think? How does it look?
