The con to using erythritol is the intense sweetness that it imparts in anything you add it to. this was no exception. these go well with coffee or strong black tea.
they were also predictably semi-dense because that's what happens if you don't use frothed aquafaba and cashew milk yogurt to fluff them up.

I'm not vegan but I have family members who are so I wanted to share what I believe to be hands down THE easiest vegan cake/cupcake recipe.
I adapted the recipe I use from this one:
Here's the recipe I use:
1 陆 cup all purpose flour
1 cup granulated sugar
1 teaspoon baking soda
陆 teaspoon salt
Mix the dry ingredients together and then add to the same bowl:
1 cup unsweetened almond milk
陆 cup coconut oil melted
2 tablespoons white vinegar
1 teaspoon vanilla
Mix and pour into a pan or cupcake tins at 350掳F for about 25 minutes or until an inserted toothpick comes out clean.
For frosting do
1 cup soy free earth balance
3 cups powdered sugar
Cream those two together and add
2 tablespoons unsweetened almond milk
陆 teaspoon vanilla
Notes:
If you want chocolate cupcakes substitute a 录 cup of the flour with 录 cup unsweetened cocoa and make as usual.
If you want chocolate frosting I would start with about a teaspoon unsweetened cocoa powder and then add to taste.
If your frosting is too thin, add a little more powdered sugar at a time until it's the consistency you want. If it's too thick you can do the same with almond milk. Baking is mostly about ratios.
Personally I usually microwave a few frozen strawberries for 2-3 minutes and then cream those into the frosting instead of almond milk to make a vegan strawberry buttercream
This recipe is super customizable when it comes to flavor combos and is super easy to make. It's also super moist and super delicious. All the nonvegans I've made them for, myself included, enjoy them a lot. I've used this recipe for like 10 years it's literally fail-proof.

"vegan" cupcakes made with a dairy-free cake mix because I didn't have any cake flour. I used aquafaba, cashew milk yogurt and soy milk. well beaten aquafaba makes them really nice and fluffy like this.
The frosting was obnoxiously sweet, though.
