Life Lately 2023
Hey Tumblr, okay I know it took me about a year to post here… again. I am surprised that it’s already mid-2023. After surviving from COVID-19 on January 2022, I realized that I should enjoy life more. We surpassed the face shields era, the face mask season and even the countless swab tests. What I’m trying to say is I am grateful that I’m still breathing and doing the things that I like, some plans screwed up and there a lot of setbacks but hey, I’m just thankful to be alive. The rest of 2023 will be about self-love, getting back on track, improvement, doing the stuff that I really love. I hope you’re back on your “thing” too or you’re reaching your goals somehow.

“Christmas Oreo Balls: Cookies and Cream Truffles - 4 Ways”
INGREDIENTS:
28 pieces (266 grams) Oreo "Original" Cookies
1 cup (120 grams) Cream Cheese, room temperature
*Coating and decorating options:
1 cup (180 grams) baking chocolates or chocolate buttons (white, dark, milk chocolate, or semi-sweet)
Sprinkles: Christmas colors or theme
Powdered Sugar
Cocoa Powder
Desiccated Coconut
Yield: Makes 20 Truffles
What you need:
1. To crush the sandwich cookies, you have 3 options:
Food processor
Rolling pin and resealable food bag/zip-top bag
Hand/stand mixer (if you have one, use a flat or paddle attachment)
2. For mixing the cookie balls:
Wooden spoon or spatula
Mixing bowl
3. For chilling the cookie balls/truffles:
Baking tray
Baking paper or parchment
Refrigerator
4. Scooper or 15 mL measuring spoon/1 Tablespoon
5. For coating and decorating:
spoon and fork or dipping tools for chocolates

“How to Make Orange Chicken From Scratch”
A flavorful dish composed of crispy Chicken fillet with Orange glaze. Imagine a combination of sweet, savory and tangy taste.
Batter for the Chicken Tenders:
½ kg (1 lb.) boneless Chicken thighs or breast fillet
½ cup Cornstarch
1 ½ cup All Purpose Flour
½ Tablespoon Salt
½ teaspoon Garlic Powder
Pepper, optional according to your preference.
1 Egg
1 cup Water
2 Tablespoons Canola Oil or any neutral oil
3 cups oil for frying
How to Cook Chicken Tenders or Fillet/Chinese Chicken Fingers:
1. Slice chicken into cubes for the Orange Chicken and bigger chunks for the Chicken Tenders. Set aside.
2. In a medium mixing bowl: combine the flour, cornstarch, salt, garlic powder. Mix until well-incorporated.
3. Add the egg, pour the water, and oil until it reaches the consistency of pancake batter. Gradually add water until the you reach the right texture.
4. Add the chicken to the batter, stir well. Marinade and refrigerate at least 30 minutes.
5. Heat oil in a wok or heavy bottom frying pan.
6. Fry for 5 to 6 minutes until both sides are lightly golden brown.
7. Remove the chicken from the pan. Drain the excess oil. Transfer to a paper towel-lined plate.
Sauce for the ORANGE CHICKEN:
1 Tablespoon cooking oil
¼ teaspoon Red Pepper Flakes/Chili flakes
1 Tablespoon Garlic, minced (about 3 cloves, adjust according to your preference)
1 small Ginger, minced (equivalent to ½ teaspoon)
¼ cup White Sugar
¼ cup Brown Sugar
¼ cup Orange Juice
¼ cup White Vinegar
2 Tablespoons Soy Sauce
2 Tablespoons Water
2 Tablespoons Cornstarch
1 Teaspoon Sesame Oil
STEPS TO MAKE THE ORANGE CHICKEN:
1. Set a pan on medium- high heat. then add the cooking oil.
2. Once the oil is hot, add the red pepper flakes, garlic, and ginger. Cook for 3 to 5 minutes or until fragrant. Stir constantly.
3. Put the white sugar and brown sugar, and stir well to combine.
4. Pour in the orange juice and allow the sugars to begin to dissolve in the liquid. Texture should start to caramelize.
5. Add in the vinegar and soy sauce, continue stirring.
6. Make a slurry: Mix the cornstarch and water together. Add to the pan and stir.
7. Let the sauce cook until the consitency is thick like maple syrup. Stir until the right consistency is achieved.
8. Add the sesame oil.
9. Lower the heat. Toss in the fried chicken/Chicken Tenders.
10. Gently stir until the chicken pieces are completely coated with the sauce. Don’t over mix to maintain the crunchiness.
11. Transfer to a serving dish or plate. Best served hot.
*Optional: top with sesame seeds, spring onions, orange zest.

“Special Chocolate Chip Cookies: Recipe with Secret Ingredient”
This batch of "Chocolate Chip Cookies" is chewy and moist. There are added secret ingredients to the classic recipe. Each piece is more special with the right amount of walnuts and chocolates. Watch the tutorial video to know more.
INGREDIENTS:
Yield: 20 Large cookies
3/4 cup (1 1/2 stick) Unsalted Butter,
room temperature
3/4 cup (150 grams) White or Granulated Sugar
3/4 cup (150 grams) Brown Sugar
3/4 teaspoon (4 grams) Iodized Salt
2 pieces Large Eggs, room temperature
1 Tablespoon (15 ml) Vanilla Extract
2 cups (300 grams) All Purpose Flour
1 teaspoon (5 grams) Baking Soda
1 cup (175 grams) Dark Chocolate Chips,
1 cup (140 grams) Semi-sweet Chocolate Bar, chopped into chunks
1 1/2 cup (150 grams) Walnuts, chopped and roasted

"Chinese Sausage and Vegetables Fried Rice”
What you need:
Cooking oil
1/4 cup or 1 small Onion, chopped
1/4 cup (approx. 5 cloves) Garlic, minced
3 pieces (100 grams) Pork Mandarin Sausage or any Chinese Sausage
3/4 cup (1 medium-sized) Carrot, grated
1 1/2 cup green peas (canned or frozen)
2 bundles (1/4 kg) Bok choy or Pak Choi
6-8 cups cooked Rice (left-over/refrigerated 1-day old rice is okay)
2 eggs salt and pepper
scallions
For the sauce: 1/2 tsp sesame oil
2 tsp soy sauce
1 tsp oyster sauce
1/2 tsp. ginger, grated

“Banana Bread with Chocolate Chips and Walnuts”
What you need:
3 to 4 pieces or 1 1/2 cups very ripe Bananas, peeled and mashed
3/4 cup Canola Oil
3/4 cup Brown Sugar
2 pcs Whole Eggs
1 teaspoon Vanilla Extract
2 cups All Purpose Flour, sifted
2 teaspoons Baking Powder
1 teaspoon Baking Soda
1/2 teaspoon Fine Salt or Iodized Salt
1/2 cup Sour Cream
1 1/2 cup Walnuts, chopped and toasted
1 cup Chocolate Chips
Yield: 2 loaf pans, size 8 1/2 inches X 4 1/2 inches

250 grams pasta: Rigatoni or Penne, boiled according to package instructions
Cooking oil
3 Tbsp. Butter
1 small onion, diced
5 cloves Garlic, minced
1 small green bell pepper, diced
1 small red bell pepper, diced
1 cup (284g canned) button mushrooms, sliced
1/4 cup black olives, drained and sliced
2 cups (500 ml) tomato sauce
2 pieces large tomatoes, sliced
1 pack (225 g) cream cheese, room temperature and diced
1/2 tsp iodized salt
1/2 tbsp black pepper
1/2 tsp dried basil
cheddar cheese, grated for toppings

“Special Mango Graham Ice Box Cake a.k.a Mango Float”
“Mango Float” is the Filipino version of an ice box cake. It’s a no-bake dessert, few ingredients and easy to prepare.
What you need:
1 cup (250 ml) All Purpose Cream, cold and whipped
1 can (168 ml approximately 3/4 cup) good quality, Condensed Milk
20-24 pieces (200 grams) Graham Crackers
2 cups (2 pieces) ripe Mango, peeled and diced.
*Optional: 1 cup (1 bottle 320 grams) Mango Jam
**I used a 9 inches x 9 inches pan for this recipe.

This recipe is called "Chunky Apple Muffins" because it is loaded with ingredients and different textures.
INGREDIENTS: Yield: 12 pieces
2 pieces (2 cups) small apple, peeled and diced
1 cup mixed nuts: walnuts, cashews, pecans, peanuts, hazelnuts, almonds
2 pieces eggs
1 1/4 cup white or granulated sugar
1 teaspoon vanilla extract
1 cup vegetable oil or any neutral oil
2 Tablespoon fresh milk
2 cups all purpose flour, sifted
1 teaspoon baking powder

How to Cook “Tinapa Pasta”
Sharing with you this fast and easy Puttanesca recipe with a twist, what you need:
(Yield 4-5 servings)
1/4 cup extra-virgin olive oil
6 cloves garlic, sliced thinly
1 cup or half bottle of tinapa flakes
(smoked fish flakes)
1/2 cup black olives, pitted
1/4 cup capers
1 tsp. dried basil
1/2 tsp. red pepper flakes
1/2 tsp. salt
6 pieces tomatoes
500 grams fusilli/rotini, any pasta of your choice
water with salt, to cook the pasta
Parmesan cheese

Ingredients: (Servings 3-4)
*500 grams chicken breast fillet
*Marinade and coating for the chicken:
1/2 teaspoon Salt
1/2 teaspoon Pepper
1/2 teaspoon Garlic Powder
1 Tablespoon Oyster Sauce
1 piece Egg
2 Tablespoon All Purpose Flour
For the Sauce:
1 cup Water
1/4 cup Lemon Juice
1/4 cup Honey
1 teaspoon butter
2 Tablespoon Cornstarch
*Garnish:
Lemon, sliced
Sesame Seeds
Onion Springs or Leek
