Manuka Honey Glazed Ham

Our Sunday Lunch today takes inspiration from my recent journey across Aotearoa New Zealand. The pièce de résistance, this beautiful Manuka Honey Glazed Ham, was one of the meats I ate when we lunched at Te Puia in Rotorua. It was most excellent, and I vowed to recreate the recipe at home. I also loved the Hāngī lamb and chicken, but digging an umu (earth oven) in the garden is little more complicated, especially on a rainy day! Happy Sunday, mates!

Ingredients (serves 4 to 6):

1 onion

2 small carrots

1.4-kilo/-pound ham on the bone (uncooked, and preferably not smoked)

1/2 tablespoon juniper berries

1/2 tablespoon whole black peppercorns

1/2 tablespoon coarse sea salt

1 litre/4 cups water

1 large garlic clove, minced

1/2 teaspoon dried rosemary

2 heaped tablespoons good Manuka Honey

Peel onion, and cut it into quarters. Peel carrots, and cut them into thick chunks.

Add onion and carrots into a large Dutch oven and place the ham onto them. Sprinkle liberally with juniper berries, whole peppercorns and coarse sea salt. Cover with water (the ham doesn’t need to be completely submerged as it will cook in the steam). 

Place Dutch oven on the stove, over a high flame, and bring to the boil. Then, cover with the lid, reduce heat to low, and simmer, one hour.

In a small bowl, combine minced garlic, dried rosemary and Manuka Honey. Give a good stir until well-blended.

Preheat oven to 200°C/395°F.

Once the ham is cooked, lift it out of the Dutch oven, and onto a roasting or baking dish. 

Carefully remove the skin from the ham, so you are left with a thin layer of fat. Using a sharp knife, score the fat in a criss-cross manner.

Generously spread Manuka Honey mixture onto the ham. Place baking dish into the hot oven, and roast, at 200°C/395°F, for 20 to 25 minutes, until golden brown on top, occasionally basting it with its fat and the Manuka Honey glaze.

Serve hot, with its roasting juices and Manuka Honey and Thyme Roasted Kūmara. A Waiheke Island Pinot Noir, or a French Beaujolais Nouveau would pair nicely with it!

the "strange place" could be a private wildlife collector? i know the buying and selling of wild animals as pets can be pretty bad in the uk (or at least it is w/ birds of prey? that's abt what i know)

OH that's a good idea, that's going to be one of my top choices for if I DO end up needing to change the "twoleg den" in the upcoming super edition. Private wildlife collectors are a HUGE problem because the laws on simply owning exotic animals (as long as they're not covered by the Dangerous Wild Animals Act) are suuuuper lax in the UK, and the Zoo Licensing Act only applies if you accept general admission.

(and even then, specifically, you can take admission a limited amount of times a year. James Wellington's Animal Welfare Nightmare Extravaganza, beloved winter tradition, £25 each, kiddies of edible height get in free)

Birds in particular are a huuuge issue because there's big oversights in the laws surrounding the keeping of birds of prey. You don't actually need a license to own any birds except ostriches and cassowaries, or one of the five destructive invasive birds. Your pet eagle just needs to be registered so they know you didn't snatch it from the wild. Licenses will only apply if you're breeding, selling, or using it for falconry.

Maybe I could even tie this hypothetical antagonist guy to Sharptooth/One Eye/The God of Summer's previous human incarnation, on some off-chance the series ends up using this villain again. That could be kinda neat.

Ok, I've kinda had this idea for a while but a precious ask about the clone dad Danny brought it back to the surface.

What if YJ season 1 Connor meets a 16-17 yo Danny after a bad mission and just starts venting to this small town super? Like he's tired of everyone trying to play nice when he's angry and wants to punch something and instead of trying to make him feel better he just listens. And it works. Conner goes back to the mountain feeling lighter and less grouchy and the rest of the team just think the night air cleared his head some?

But then he does it again the next time they have a bad mission, and then the next, then eventually he starts visiting Danny just to talk about things he's learned and stuff he wants to ask about but can't with the team.

Eventually the team is like "where does he keep going?" Cuz every time he comes back from a walk he's in a good mood, so they follow him and find him and Danny in a park in some small town just stargazing.

It doesn't have to be a romance, could just be a friendship, but I just think it'd be an interesting way for Kon to get his feelings out and for Danny to be introduced to the team that isn't by collective adoption.

Oh this is very sweet.

This could absolutely just be a Danny and Kon just being two pals who use each other for mental support.

It absolutely also could be the start of a slow burn romance. Kon is slowly learning how to healthily vent his anger and Danny is just really happy to have a friend who has no other ulterior motives. Danny uses a bit of the psychology information he gained from Jazz to try his best to help give Kon some tips and ideas on how to properly interact with people and how people work in general.

Monday Fight Rankin (possibly an ex-name) - Ghost Town

Based on the lore around spirits. The main characters are chilling in a once-abandoned village (possibly fishing-based, but I haven't decided.) now inhabited by spirits called Ghost Town (literally). Mostly hidden from the rest of the world to prevent disruption of their peace, but regularly interact with the regular human-inhabited village nearby.

Rainworld: Hearth AU

Set around/after the Saints campaign, a still living iterator managed to move on from the Triple Affirmative, now taking care of a slugcat and scavenger colony, and is trying to rally other groups under her since y'know, the world is a freezing wasteland now.

Undertale- Tingetale

A hidden monster village on the surface managed to survive due to the power of said tinged souls but ended up getting discovered after the underground monsters were freed, now they have to adapt to modern society, or rather had.

Homestuck- Aphtraldis

Trolls are a bit different now, especially the hemospectrum/caste system, part of a group of species called Cinerians and are related to Carapacians through this.

Traditional trolls mostly exist in folklore only, as the Duskhorned.

Solarballs- Rhamnousian System

Set in the far future, in a red giant system, if you check the etymology of Rhamnousia, there are extra hints for lore. Otherwise, they are just chilling as the universe slowly dies.

Flatland- 6 Pals Perspective

Over many years in the past, some flatland refugees managed to escape the 2nd dimension, eventually accumulating. This resulted in the first flatlander village in the 3rd dimension being founded. The story is from the perspective of 6 kids in this village of varying shapes, from a triangle to an octagon. The biggest difference here is the saying "once a line, always a line" no longer holds in the 3rd dimension, the once lines collapsing into simply slimmer versions of shapes (painfully if they weren't born that way), like an in-between of Flatland the Movie and the Film, and everyone is somewhat irregular due to not being built for 3rd-dimensional gravity. Clinical irregularity, (not important anymore either, unless related to something like scoliosis or developmental issues) starts around a 10° deviation but also depends on side amount, basically if it looks lopsided enough, it's lopsided.

Dayshift at Freddys - N/A

Not quite a full AU but an idea where everything stays around the same, except there's a character that can interact with and get possessed by the kiddie ghosts willingly. She has to avenge their deaths or get pestered by them for the rest of her life, which would've been cut short already had The Incident leading to the ghost-seeing been successful.

DND - Whatever the DM (my classmate) calls it

Not my au, just characters but I'd like to spill how ridiculous mine are

The characters I've played as so far are:

A goblin ex-cleric monk (who became a monk because of going through the grilled cheese dimension) named Ooga Booga with freakishly high stats.

And my personal favorite, a tabaxi warlock named Dog who is JUST A KID and WORSHIPS A RAT, he hasn't been used yet actually but guy is literally a poor little meow meow, I got some sad lore for the two of em (even the patron) but I'll reveal that eventually ;) ALSO IN THE GROUP HES IN THERE A GUY THAT SACRIFICES CHILDREN SO PRAY FOR HIM-

Warrior Cats - Fellowship(s) of the Ming(ming)

OH MY GOD HOW COULD I FORGET THIS MY WHOLE SHTICK IS CATS-

Cats live in groups called Fellowships, which are further divided into smaller groups called Sects. There are only two Fellowships, those who live in the west of a mountain called the Nightlongers (not the final name including the other one, it's called that because the mountain blocks any sight of the actual sun for a while), and those who live in the east part are called the Daybracers (I think you can connect the dots)
