I understand the rules for gods and their hierarchy, but do we know how the hierarchy and rules for demons work? I understand that there are demon kings, and could we say that they have their own territories and subjects? Do demons always walk alone? They have clans or groups? How do female demons differ from male demons? Or do you know articles or people who know more about it? I understand that Wukong was like on a political mission to talk to the demon kings and have a good relationship with them, right?
I would like to know more about how their "society" (their politics?) works in JTTW and other legends and stories.

It's hard to pinpoint ranks in Yaoguai society per se, but from what we can tell they follow a similar structure to heaven based on their military ranks. They have Kings, Generals, rear generals, soldiers, servants, and carriers. This is most likely to reflect how the military was structured in the same time period as well.
Royalty or Yaoguai with Princess, Queen, or King in their name are often the heads of their armies, with both soldiers and servants under their command. We see this often in Xiyouji where Demon Kings are in charge of their forces and depending on the demons directly interact with servants or soldiers. It should be noted that for Women Demon Queen/Princess they only had other women servants as that was considered proper in human society as well at the time and it reflected in yaoguai standards of what is 'proper'.
I understand that there are demon kings, and could we say that they have their own territories and subjects?
Each Demon King has their own Cave. As you would notice that many caves owned by Demon King have titles to their names, Wukong for example has the Water Curtain Cave. And with a Cave often as their own Moutain. I can't say if EVERY Demon King has a Mountain, perhaps they have a valley or plains, but every Demon King certainly has a Cave and the surrounding area would be their territory.
Do demons always walk alone?
Are you asking if demons travel in herds? No more than humans do. Demons often group together under a King for both security under their king and said power. But demons can be by themselves, making them more vulnerable to attack but this could be for training purposes, undercover work, or they are trying to integrate into human society. In most cases Demons are alone, they are trying to either cultivate or trying to trick humans, so the fewer people, the better. But in most stories, we see demons either being a King and thus having subjects that follow their command or demons are the subjects of a King. It's similar to why humans form villages or nations, security in number, and organization under a military leader. In stories where a demon is alone they are often trying to tick/attack humans and this can be considered part of them trying to cultivate, perhaps trying to get stronger without being limited by being a subject to a king.
They have clans or groups?
I cannot say if they have clans as most demons cultivate to become what they are. FEW demons are biological families as we see a reoccurring pattern that Sworn Brothers are far more common. We only see two examples of demons having children in Xiyouji, that being DBK and Iron Fac having Red Boy and Yellow Brows Demon taking on a human as a wife. It is far more common for demons to steal both male and female partners to be their wife/husband rather than demons marrying each other. For whatever reason I can assume it is often that demons find humans irresistible whether for a human's life force or beauty (or even that they were in love in a past life, revenge on the human's spouse, power, maybe actually true love, etc.) but we don't see a lot of demon with other demons romantically. And fewer pure demon-born children such as Red Boy. White Snake and her husband are an example of having a half-demon child for example. This makes it harder for 'clans' to form.
A good example of a demon 'family' is that the Nine-Headed Lion Spirit adopted around 8 lion grandsons to be under his protection. Rather than having them as subjects he calls them family. Similar is that Wukong did the same with his entire mountain, adopting 47,000 monkeys and naming them after himself as the Sun Clan. I have never seen another demon do such a thing and would not call it the norm, rather Wukong being the exception to the rule. Wukong has been depicted as more eccentric than most demons with his power and charisma.
It could be that demons have a harder time creating children with one another, and perhaps it is easier to create children with humans or have more human (therefore more life force) in the child. It is VERY hard for demons to reach the form where they have a humanoid state, despite how MANY demons we see in Xiyouji, demons finally reaching the human statue takes thousands and thousands of years, so it could just be hard for demons to both reach that state AND then cultivate a child within their bodies if they do not have enough power to spare to keep their human form. This could be another reason demons are more inclined to have human spouses as they would be given their demon spouse the needed qi naturally rather than having to create so much qi themselves.
A rare example of this is like with Jade Face Princess, she is the daughter of another fox king who was 10,000 years old or so but we never see in the novel. It is hard to say that if she is his bio daughter (most likely) and that is how she inherited her wealth but that she could and would still end up so weak in battle. She shows that her true form is a fox, so it is unlikely she is half-human but also hard to say if he was a born demon as well. We so see an example of adoption in the same like as White-Face Fox was adopted by the White Deer Spirit as his direct daughter, despite them being two different pieces. This is just another thing to consider when it comes to how these demons create bond with one another, their godfather/godmother to their god-son/god-daughter being stronger than alliances.
How do female demons differ from male demons?
Females and male demons are pretty easy to differentiate in that the demon will CHOOSE how their physical form will look like. As a reminder demons are animals, plants, and objects that have gained cultivation and thus their physical forms are illusions. They are allowed to choose how the world sees them and thus once they gain a humanoid form (which takes a very long time) they can choose how to look and thus how they with the world to address them as. Green Snake is a good example of this as she was a male snake in her animal form and was able to choose to present as a woman so that she could stay close to White Snake when they cultivated into humans.
Or do you know articles or people who know more about it?
I can recommend a few books if you wish to read but I cannot say if there are articles about this subject.

Wukong was less taking a 'political mission' and rather Demon Kings came to HIM. When Wukong showed off the power of the staff.

Wukong explored many areas in his time and found a lot of friends but that was for his own sake of having fun, rather than trying to make political connections. Rather Demon Kings understood that Wukong was far more powerful than any of them and all 72 made sure to come and pay respect to him to get on his good side else they would be killed like the Demon King of Havoc. This is why you see in some media Wukong be The King of the Demons, as in he isn't just a Demon King but THE King of all Yaoguai. Out of the 72 demon kings, 6 were able to impress him enough to be his sworn brothers. I personally feel that the demon kings were the ones to refer to Wukong rather than Wukong trying to make alliances himself.

From what we can see it is to be expected that Yaoguai society works similarly to human society. Heaven is to be a reflection of human society with ranks, servants, and duties and Yaoguai appears to be the same. But Heaven is supposed to be the prime of example of a perfect society, and rather Yaoguai rather have the "might is right” methods. to show the flaws of society. Demons that are particularly powerful, such as demons with humanoid forms, are the ones in power. The stronger a demon is, the more powerful and influence they will have. Kings are not born, but rather made when a demon has cultivated enough and gained a large following, and thus they are able to claim a Cave and Mountain of their own and their subjects. From there demons are either terrorizing humans or even being able to form diplomaice relationships with humans. We see this with the Nine-Headed Lion Spirit trading with humans are a regular basis (until his grandsons stole the pilgrims' weapons and ruined their relationship with their neighboring kingdom). Powerful Demons turn into Kings and thus have subjects, so it is fair to think that when demons are on their own and interacting with humans so much they are more likely trying to cultivate to gain more power. Weaker demons are either under a Demon King or interacting with humans to eat them to gain enough power to be a Demon King perhaps.
I don’t see a lot of demons interacting with each other if they are not sworn, I would imagine that there is a lot of postering and a lot of double-edged sword dealings. Demons are always run by their own desires, similar to humans but to the extreme, they don’t consider consequences or express empathy more often than not (there are exceptions to this rule just this is the norm I have seen). Demons can form relations and close bonds but as we have seen with DBK and Wukong these relationships are not concrete, as when Wukong was no longer a warlord and was no longer in a position of power over DBK, DBK saw no reason to help Wukong in his plight. Nor do we see Wukong's other sworn brothers after he loses his warlord status. This can be assumed that these relationships are only as strong as long as individuals are useful, but if any of them lose power or status then the relationship will dissolve when it is no longer profitable to keep them. There can be goodwill and we have seen more genuine care between demons such as White Snake and Green Snake but that seems more of a familial relationship over a political alliance.

White-Face’s working name is Snow and her theme song is Brutus by The Buttress
Jade-Face’s working name is “Jade” and I don’t know much about her yet since her role in JTTW isn’t as…heavy I guess? But yeah! In Eclipse Apprentice, the two are sisters, until stated otherwise. I’m not fond of the design I gave her and intend to try again when I’m on my computer

So will Jade faced princess ever be mentioned in your au? Since LMK kinda goes "Don't trust history" I like to imagine she was just Red's babysitter and people assumed she was a mistress
Oh man I went down a fox-hole with this. I find her potiential as a character so good for the LMK verse. She could be a villain, an ally, a general, or in my personal fave idea: Ultimate Auntie. (One of my fave interpetations is by @harveylikestoart).
So my idea for Princess Jade Face / Jade Faced Princess / Yu Mian Gongzhu is this:
Birth name is Ruan Yu (soft jade/nephirite), but goes by Jade to her friends, and Auntie to anyone she deems younger than her.
Appearance wise: she's a humanoid fox spirit/Huli-Jing with dark green hair, pale skin, and big green eyes. Loves wearing really old fashioned long-sleeved hanfu that trail behind her (mostly to shield her tails without glamour), and is hyper-feminine. Wears obnoxiously patterned cheongsams while out and about.
Has a "feral" form of an eight-tailed dark green fox. She mostly shifts into this form for comfort. Think of the shapeshifter equivalent of taking off your bra after work.
She's a minor royal of a big family of fox demons. Same family as Jin & Yin's (+ Lin the accountant's) mom actually! She likes visiting them whenever she's in the city.
Knew DBK long before the Brotherhood days. They were childhood best friends in the Underworld who got mistaken for a couple a lot (cus "a guy and a girl can't just be friends" obvs /sarcasm). When PIF came along, Jade was one of DBK's biggest hypemen.
Her dynamic with DBK and PIF is essentially an older Traffic Light Trio, with her as the Mei. Green coded, high energy, and adored mutually by the others.
Because of her chill nature and hyper-fem style, people assume she's dumber than she actually is. She plays up her more "Barbie" qualities when she's tricking people/gaining information.
She's ridiculously good at handling babies and toddlers since she grew up with so many little nieces/nephews/niblings. When baby Red got fussy, a little visit from Auntie Jade immediately perked him up.
Wasn't an "active" member of the Brotherhood back in the day, but was a big supporter and intelligence gatherer. She almost got charged with treason after Sun Wukong's imprisonment, but PIF covered for her - despite their first impressions not being so great. She offically left the Brotherhood after Princess Iron Fan and Demon Bull King's engagement.
Was really sad alongside PIF and DBK when Red Son/Boy got taken to the Southern Seas by Guanyin to rein in his emotions. The "affair" mentioned in JttW wasn't an affair at all, but a human misinterpetation of how DBK was helping out his homie emotionally. Jade never forgave the writer for branding her as DBK's mistress.
Is extremely doting and embarassing to Red Son even when he's an adult. She's practically his second mother. Cheek pinching, calling him "kit", saying that he needs to eat more food, sharing baby photos with his friends etc...
The "Jade" in her name is not only a reference to her dark green hair/fur. Her family are Rock/Earth-type demons. She was so good at handling Red as a baby since fire doesn't bother her as much. She also owns a fox mask made of literal jade that she wore back in the Brotherhood days to hide her identity she thought looked mysterious and dramatic.
Doesn't have an actual spouse or biological kids of her own. She's happy being the best unmarried Auntie she can to all the kids.
Will def appear later in the "Monkey King and the Infant"-verse as Red's fave Auntie. Once PIF has "picked up" (read: kidnapped) Red back from the Southern Seas, Jade is immediately called in for babysitting backup.
She and Macaque became friends again on accident while working at the theatre together. She's part of the costume and makeup department, and it took them a few crossed paths to finally recognise one another. She is def partially to blame for Red's flair for dramatics.
Has a particular grudge against Zhu Bajie for whacking her with the rake. Has a nasty scar that starts on the back of her head down to her shoulder blades from the fight. Was extremely cold towards Pigsy before she realised (very embarassed) that he was just Bajie's decendant.
Initially disliked Sun Wukong when they reunited, but quickly it became clear that the the two's more loud, reckless natures bounced off one another. Are rivals for the title of "Best Babysitter".
Spoils baby MK and the other kids rotten. Doesn't matter if the baby is a mystic monkey, dragon, cat demon, human, or demon bull calf; baby is baby.
Takes an obscene amount of luggage with her no matter where she goes. Is "hairdryer in her purse" kind of prepared.
Yips when she's excited/happy. Also chirps in response to Baby MK's monkey chirping. The language crossover of fox and monkey sounds is surprising.
Voice claim: Diane Morgan/Philomena Cunk. She has a softer British accent compared to her related demon niblings. Red Son may or may not have developed his accent from her.
Gosh I love weird women characters.

I think that surely more jttw characters will appear as new characters or in flashbacks, personally I would bet that Erlang Shen could appear

I'm really dying to see what kind of character Lego Erlang Shen is, what kind of complex character he can be, will he be a villain, an antagonist or maybe an ally? Will being a demigod be important for his character? what will his relationship with Sun Wukong be like? They will be like sworn brothers or enemies
guanyin goddess of mercy

I really want to know what the lmk writers will do with Guanyin, how important his role would be in the series, taking into account his importance in Journey to the West, I think it would be great if it turned out that all this time Guanyin was secretly watching over MK and his friends helping them without them knowing. I mean, she always helped the pilgrims on their journey and could do the same for mk and his friends. I also wonder if his relationship with Red Son exists in lmk.

I really want Ao bing to appear, I don't care how or why. basically because I think it would be cool for the fandom to see that Monkey King isn't the only one with skeletons in the closet. It would also be interesting to see Nezha face someone from his past that he thought was buried and that he would never see again

I know the writers wrote it off for Strong Spider, but it would be great to see the spiders again. Maybe as an idea here the character of Spindrax wants to revive the spider queen or maybe avenge the spider queen, the writers could use to spindrax to show us spider queen's past and also give mei a badass biker rival (cough girlfriend cough)

I know that many think that the macaque is practically redeemed, if they think that that is perfectly fine. but in my opinion I do not agree with that, because the basic thing in a redemption is that the character realizes his mistakes and repents of his bad actions, Yes, Macaque helped defeat the bad guys and everything. but he has no regrets for the damage he did to mk and his friends I thought it would be great for Macaque's future redemption arc to have him face his own past mistakes and what better way to do that is face the little versions of himself who want revenge of you and they won't hesitate to hurt your loved ones in the process just to see you suffer (cough karma cough)

I really wanted to see Lady Bone Demon's army in the specials, They are literally the only villainous army not to make an appearance in the show and which I think is a big waste imagine that the mayor was not the only follower of lbd, if there were other followers and allies of her, plus it would be interesting to see more spirits or demons like LBD, besides I love his designs I mean who doesn't like skeletons with hoods.

Can I get some MK kissing Red Son a LOT like just a BUNCH of kisses
“Thank you for coming,”
“It’s no problem!” Qi Xiaotian looked around at the palace as he followed Jade Faced Princess. He hadn’t met her before the event that had ultimately led to her getting custody of Red Son, and he could already see the differences between her and DBK and Princess Iron Fan. 
While their palace had been dark and filled with lava with long echoing hallways that felt empty, hers was brighter. Windows were open to allow in the sunshine and the sight of a massive garden. They passed by servants going about their daily tasks and thousands of foxes, relaxing in the sun or following them.
“It’s just…Red Son understands why I had to take custody of him,” Jade Face said. “And I understand that, even though he understands, he would still be upset with me. However, he’s been in his chambers all week and refuses to leave. I just figured a friend-”
Xiaotian chuckled. “Don’t worry, your highness! I’ll do what I can!”
The older woman chuckled. “Please. Just call me Jade Face.” They stopped at a set of grand doors carved with the Samadhi symbol. Jade Face opened the door and poked her head in. “Kit? One of your friends is here!”
Xiaotian stepped inside and the door shut behind him.
He stood inside what looked like a sitting room. At least, it would if it wasn’t overtaken by boxes and all the shades were closed. A Bull Clone was standing next to an open box and waved when they made eye contact. “Red Son?”
Something from another room.
Xiaotian slowly and carefully made his way through the boxes, eventually entering a bedroom. This one looked to be put together. At least the bed was, a massive lump curled up under the sheets. “Red?” he called. “Hey…I brought cookies?”
There was another noise, but this time he could make it out to be an unimpressed grumble. It was a good sign. Probably. He settled on the bed with a sigh. "Are you okay?"
Silence.
Xiaotian reached over and pushed down the blanket. A hand shot up before his face was revealed. However, his hair was visible. An idea sparked to mind.
"If you don't say anything, I'll kiss you."
He expected Red to burst up, yelling about not having his filthy peasant lips on him or something. But the lump only curled up tighter. The silence drew on.
"Okay then."
It was a brief gesture, more on Red's ponytail than anything else, but it worked. The lump exploded into a blur of blankets before Xiaotian was face to face with a flustered fire demon.
"What was that?!" said fire demon yelled, his hair sparking into a smolder. He looked like he hadn't slept in days, and his eyes were red, but at least he was up.
"A kiss!" Xiaotian said, trying his best not to sound smug. Based on how Red's eyes narrowed, it failed. "You like it? I can kiss you some more." He leaned forward, expecting his face to be shoved back.
But...no.
Instead, Red froze, allowing Xiaotian to peck his chin. Xiaotian continued to kiss all over his face, keeping an eye out for any signs of being pushed away. But the fire demon didn't seem to...
He felt him take a deep breath.
Then Red was leaning forward.
Xiaotian blinked but froze himself as Red kissed his lips. There was a little sigh as he pulled away. The fire demon smirked.
"I can do the same thing, Noodle Boy."
