Снова про кофе

Снова здарова. Могу себе позволить повторяться. В восхищении, тем паче. Мой блог же.

Так вот - восхищение кофем. Или кофеём?

С тех пор, как я погрузился в мир specialty-кофе минуло немало времени (пара месяцев). Не знаю сколько, но денег потратил я на кофе прилично. По крайней мере раньше столько я на него не тратил.

Что же это за такой specialty-кофе и чем он отличается от “обычного”? Сейчас постараюсь рассказать, а заодно и сам разложу эту информацию у себя в голове.

Если объяснять быстро и просто, то specialty-кофе - это тщательно отобранный кофе, который закупается у особых поставщиков в Колумбии, Бразилии и прочих кофейных странах. Есть специальные организации, которые представляют спрос на высококачественный кофе и фермеры, которые занимаются его выращиванием, подстраиваются под этот особый рынок “снобов” (типа меня).

Весь процесс происходит так. У фермера в Руанде (например) есть большая плантация где-нибудь в низине и он там выращивает Арабику и Робусту. На такой кофе есть спрос у всяких Jacobs и Starbukcs. По большей части им важно скорее количество, а не качество. Остальное за них сделает маркетинг и молочко в напитках. Это сегмент Coffee To Go. Когда ты бежал на работу, заскочил в ближайший Starbukcs, схватил свой латте и побежал дальше.

specialty-кофе - это не так. Этот кофе произрастает на определенных высотах, за ним по другому ухаживают, его иначе обрабатывают. Это как с вином. Можно просто выращивать виноград и делать вино в тетрапаке, а можно делать дорогое вино, правильно ухаживая за лозами.

Но итоговый вкус кофе зависит не только от фермы и обработки, но ещё и от обжарки и от того, как бариста его заварит. Оказывается, за 20 лет в России выросло целое поколение классных обжарщиков кофе. Есть компании, которые делают это великолепно. WEST4, Rockets, Сварщица Екатерина и ещё много разных, которых я не успел попробовать. В Москве и не только, есть specialty-кофейни, которые покупают и заваривают такие элитные сорта от российских обжарщиков. Именно поэтому удовольствие недешёвое - пока всех попробуешь. Колумбия или Эфиопия у разных обжарщиков разная. Хочется пробовать и пробовать.

Если говорить о цене, то в среднем этот кофе даже дешевле, чем в Кантате, а качество и вкус заметно выше. Например, какую-нибудь мытую Эфиопию можно купить по цене 700 руб. за 250 гр. Это хорошая цена за отличный кофе.

Но поговорим про вкус кофе. Чем он отличается от привычного нам горького кофе? Во-первых это 100% арабика и в ней есть кислотность. И в большинстве сортов она очень выделяется. Но вместе с тем в кофе есть совершенно не предназначенные для этого напитка вкусы и ароматы. Например, можно почувствовать клубнику, малину, чернику или целый спектр цитрусовых вкусов и ароматов. И это всё с плавными или резкими переходами в кофейную или шоколадную горечь. На самом деле это так невероятно, что тот самый, горький напиток, который мы так давно пьём, может показать такой большой и красочный спектр вкусов.

Сейчас я покупаю у разных обжарщиков разные сорта и готовлю дома на воронке Hario V60 и пытаюсь найти для себя самые вкусные и яркие из них. Уже есть фавориты. При этом ребята всё время экспериментируют с кофе и предлагают покупателям очень обширный ассортимент. В общем есть ещё куда смотреть.

Теперь я точно не слезу с кофе.
