Busted out the wok and made the original fast food, stir fry. This had both peppers from my garden (yes I still have peppers and tomatoes growing) and some I bought at Trader Joe’s. I also added broccolini, fresh green beans, ginger, a clove of elephant garlic (my favorite garlic) black garlic, also from trader Joe's, some swiss chard from the garden and snow peas from the garden that I was unaware was even there until this morning, those suckers blend in so well. Added noodles, some toasted sesame, and soyaki sauce I also got from trader Joe's. Oh and green onions from the garden. There is also shredded carrots in here. Toped with kimchi and a sprinkling of black garlic. This was also vegan, which you might be seeing a lot more of as my oldest has expressed their desire to be vegan and I'm all for that if that's what makes them happy. Made an amazing lunch and took around 10 minutes...

Here are the homemade Hawaiian rolls from the video of the dough. I didn't make them as sweet as the original recipe called for and I liked them way more to be honest. This recipe makes a monster amount of rolls. I made 12 originally and they were huge so if you like smaller rolls and not adult large hand fist sized rolls, make 24 out of this dough.
So here's my version.
1 tbsp yeast 1 1/2 cup water 1/2 cup pineapple juice 1 tsp salt 2 tbsp sugar 3 eggs, one reserved for brushing the last few minutes of baking. flour ( remember , I don't measure my flour entirely but you should start with 2 cups here and add to in increments of 1/8th cup)
Add the pineapple juice, sugar, water and yeast into your mixing bowl and let the yeast bloom for a few minutes
beat in the eggs, salt and start with the 2 cups of flour. It's gonna be a sticky mess for a few minutes until you get the right amount of dough. I really recommend using a stand mixer if you have one for this but I know thats not a reality for some.
Your going to keep adding in flour 1/8th cup at a time until the dough is smooth, soft and stretchy but not sticky. You want it a hair tacky but not much at all. It takes some practice but once you get that texture down, its easy peasy from there on o9ut making bread.
Once you get it to that texture, divide it into 12 ( for large bun like rolls) or 12 normal rolls. Different people do it different ways but I usually oil my hands real well, them roll and fold into balls. ( if you don't oil your hands you will need to oil them in the pan)
Put them spaced evenly in a baking pan and tent with a damp kitchen towel or paper towel. Let rise for 30ish-50 minutes (will vary due to kitchen temp)
Remove towel and bake for 20-30 minutes. On the last 10 minutes, brush with the reserved egg..
I know it's hard, but let them cool a little bit before indulging.

Who says your medicine can't taste good too? I have allergies, Lots of allergies, which sucks cuz sometimes it can make life absolutely miserable. So lately I've been working on an herbal tea mix to help with them because I don't want to be stuck on pharmaceuticals the rest of my life with risk of any one of the dozens of permanent issues that can come along with those. The tea itself surprisingly doesn't taste to bad for what it is, and herbal tea with mushrooms in it, but I had a thought this morning, what about coffee? So I took a scoop of my current favorite coffee flavor, cinnamon dulce, and added it to my pour over filter along with my herbal mix for allergies and brewed away. I poured it over ice (because I love iced coffee not matter what time of year), added some pumpkin pie creamer (yes I am a pumpkin spice sucker) and it tasted really good. Now I'm still working on tweaking this recipe but as of right now it has the following in it: Stinging nettle Broadleaf plantain Rieshi mushroom Chaga mushroom (which is really good in coffee on its own, I even have a chaga hot cocoa mix) Anise seed Astragalus Feverfew Mullein Rose hips I wanted this mix to be more than just allergies since I also have asthma as well, So this has a good amount of lung health herbs as well. I had a dear friend of mine move out of state, and decided to gift me the instant pot we used all the time when I worked with her at her meal prep and catering business. Outside of work, I never really felt the need to have one of these. I have several slow cookers and they all serve me well.... that was until I got this thing home and realized, I had been definitely been missing out. So for the last 3 days, all the dinner meals have been made in it. The First day was a standard pot roast. The second was a herb and butter pork loin. Today I was feeling pretty good ( if you have known me for any length of time really you know summer just isn't my jam. It's too hot & it just makes me uncomfortable and cranky. There are days where it's so hot, that if I eat, there's a good chance it's gonna make me sick) It was only 101° and that's a tolerable temp for here, so I decided to try my slow cooker sweet and spicy garlic chicken. Normally this takes at least 4 hour in the slow cooker. Took under an hour with the instant pot. All I did was take: *3 lbs of chicken breast (I feed a small army, so feel free to scale this down) *3 bell peppers of various colors (the sauce hides them but they are there) *1/2 white or yellow onion sliced thin *2 cups low sodium soy sauce ( I know I know, it seems like a lot but again, small army) *1/2 cup chicken stock *1/4 cup sugar (brown raw or white, doesn't matter. I prefer brown but didn't have any) or you can use honey / agave *10 cloves of garlic minced or 1 1/2 tbsp powdered garlic *2 tbsp sesame oil (i used chili sesame oil for the heat factor) *2 tbsp garlic chili paste (usually comes in a clear plastic jar with a green lid unless you make your own but that's a different post) 2 tbsp chili flakes (less or more depending on heat tolerance) *Throw it all in the instant pot, press the chicken setting and time up to 45 minutes After it's done and pressure has released, Open it up, ladle some liquid, add 2 tbsp corn starch, whisk, add back in and stir. Decided to make the post mainly because I'm tired of seeing peoe argue over this, and also, as a homesteader, know your agriculture energies...... These are beetles. Now I'm my experience everyone likes to call every beetle a Japanese beetle but it's not correct. In the top picture we have your standar June bug or beetle depending on where you are from. It's scientific name is Phyllophaga spp. Everyone, or at least almost everyone, has seen one of these in Thier lifetime, they are pretty common, more so in certain parts of the country than other. In the bottom left, we have the Green June beetle. These obnoxious suckers are large, heavy and really seem to love to buzz around your head. Most commonly seen in the evening and night. It's scientific name is Cotinis Nitida. I call them chicken food, because if it buzzes around my head and isn't a bee or wasp, it's gonna be chicken food more often than not..... Which leaves us to the bottom right. The infamous Japanese beetle. These lil shits have gained a ton of notarity the last few years as we see them more and more ( luckily, I haven't seen any in my area yet) these are the crop destroyers and they come.in by the thousands.. Thier scientific name is Popillia Japonica. They are not one in the same. And while the green and brown June beetles can do damage to crops, they are more obnoxious than detrimental like the Japanese beetle is. First successful potatoes harvest. The vines are still growing. These are what I was able to reach down in the barrel and pull out. About 2 1/2 pounds worth. Washed them up and now they are in the pot boiling. I'm gonna smash them down and saute them in bitter when they are done. So excited. Potatoes have been a struggle for me because gets so hot where we live that the vines just give up and die off. Made steering wheel covers for my truck. I happen to live on the surface of the sun 🥵 and if you don't have these on your vehicle, you absolutely can end up with second and once or twice I've seen third degree burns from grabbing the steering wheel or seatbelt buckle in the middle of a heatwave. So it's either this or pot holder, which I will admit, I've used on more than one occasion...🤣 I may be offering these in my shop at some point, haven't figured out for sure or not. Hollyhock seeds! Ty @ominouswizardbox :p there's sooooo many. I love hollyhocks. Sprinkling these suckers everywhere. Thinking about doing a seed give away too when I reach 1k, which seems to be creeping up quick. Thinking I will do a flower🌺 set or a veggie🍅 set. Winners choice. Will post more details once I hit that mark. Did you know hollyhocks are part of the mallow family and can be used interchangeably as you would marshmallow, the only difference is hollyhock is a bit woodier making it less palatable but useful none the less. Mallows can b used for irritation of the mouth and throat, dry cough, and bronchitis. It is also used for stomach and bladder complaints and to treat wounds. We got out first blackberries off our vine that I've been growing for 2 yrs now. These ones were a smidge tart but the rest were good. Had to pull off a little early because the birds have now discovered my berries... Also onions blooming, squash getting loaded with blossoms and purple green beans! The onions that are blooming were onions that had been thrown out by a store for not being good enough. They were fine, I pulled off the outer layers, planted the 5 sections it had and yada. Did ramen bowls for my oldests birthday, Asian food of any kind is Thier favorite food type. They'll be 14.....😳damn time flies.... This has ramen on the bottom layer, then a panko breaded fried pork cutlet, stir fried peppers and kale, with a runny fried egg and chili garlic sauce with a spicy teriyaki main sauce. Was devoured promptly by everyone in the house. It's missing some green onions but I just trimmed them yesterday for dinner so I didn't have any for today. Still amazing.
