My landlady in Toronto, Linda, is from Trinidad. And as I’ve been away from my adoptive city for far too long, I miss her and her daughter Racheal heaps. I miss our conversations when we’re both in the kitchen, cooking our meals. Or enjoying a bottle of sparkling wine on a sunny day. Or watching Home Alone or old variety programmes on telly on cold ones... I’ve only ever been to two Caribbean islands, but these were such wonderful trips, I’ve always wanted to return; Jamaica has always been a dream, my Dad having worked with so many reggae singers who call it home, and after meeting Linda, Trinidad is on my wish list too! Until I get there, and because the hotel where this cocktail was invented closed decades ago, I’m sipping a Queens Park Swizzle now, in the sunshine, thinking of dear friends and future trips... Happy Saturday!
Ingredients (serves 1):
a dozen to 15 large ice cubes
8 to 10 leaves fresh mint + a sprig for garnish
22.5 millilitres/3/4 fluid ounce (1 1/2 tablespoon) Simple Syrup
1 small, ripe lime
60 millilitres/2 fluid ounces (4 tablespoons) good quality Caribbean Rum (I used Ginger and Lime Rum)
4 dashes Angostura bitters
Crush the ice (if you’re doing this by hand with an ice crusher, it may take some time, so keep crushed ice cool in the freezer whilst you go through the dozen or so ice cubes!)
Tear the mint leaves into a Collins or other tall glass. Add Simple Syrup, and muddle thoroughly with a muddler.
Thoroughly squeeze the juice of the whole lime, and pour into the glass, along with the Rum. Muddle again to mix.
Spoon in crushed ice until it half fills the glass, and swizzle with a bar spoon until frost forms on the outside of the glass. Fill the glass with remaining crushed ice, until it comes slightly over the top of the rim.
Top with 4 dashes Angostura bitters. Garnish with mint sprig.
Enjoy Queen’s Park Swizzle immediately, preferably lounging in a deck chair in the sun...

2 oz. aged rum
0.75 oz. lime juice
0.75 oz. demerara syrup
8-10 mint leaves
Add mint leaves to a tall glass. Add simple syrup and gently muddle mint into the syrup. Add crushed ice two-thirds or so full and agitate (either swizzle back and forth with a swizzle stick or a bar spoon, or else just stir) until the glass begins to frost. Add crushed ice to fill and decorate the top with two to three dashes of Angostura Bitters. Garnish with a mint sprig and serve with a straw.

I never knew how versatile, delicious and even medicinal Angostura rum and bitters was, with a vast interesting history behind it, until we headed to Cottons restaurants and rum shacks in London to find out. They’ve collaborated with the spirit to hold a #SoulofAngostura campaign tour, showcasing inspiring cocktails and recipes that were showcased at the annual Cocktails in the City last week.

Queen’s Park Swizzle
There’s nothing more sensational to sip on in the summertime than an icy cold drink that contains mint and rum. If you’re a fan of the classic mojito, then consider trying its cousin, the Queen’s Park Swizzle. It got its name from the Trinidadian hotel where it was first invented in the 1920s. The Queen’s Park Swizzle combines demerara rum, rich simple syrup, fresh lime juice, a bouquet of fresh mint, and several dashes of Angostura bitters. It’s a tall, boozy, tiki-esque rum concoction that Trader Vic famously said in 1946 to be “the most delightful form of anesthesia given out today.” I’ll have what he’s having! 😉
Queen’s Park Swizzle, serves 1 2 ounces demerara rum (like El Dorado) 1 ounce lime juice 3/4 ounce rich simple syrup (2:1) small handful of mint 2-4 dashes Angostura bitters mint sprigs for garnish crushed ice
First, make your rich simple syrup. Instead of using white sugar to make the simple syrup, we’re using demerara sugar like Florida Crystals. Demerara sugar is not refined so it has a creamy, rich, bold flavor with a hint of molasses. Combine 2 cups of demerara sugar in a saucepan with 1 cup of water and simmer on stove until sugar has dissolved. Let cool completely and store in the refrigerator for up to 2 weeks.
To build your cocktail, add mint, lime, and simple syrup to a cocktail shaker and then muddle. Next, add your rum, then give it a quick shake and dump into your desired serving vessel. I recommend using a tall highball glass, pilsner glass, or even a tiki mug. Press the mint into the bottom of your glass and fill the glass with crushed ice. Use a bars spoon or a swizzle stick to swizzle the drink. You can do this by gently twirling the spoon or stick between the palms of your hands until a frost forms on the outside of the glass.
Add 2-4 dashes of Angostura bitters and top with additional ice. Garnish with a generous bouquet of mint. Finally, sip and enjoy!
Swizzles are tall, frosty, ice-capped cocktails that are the ultimate summer beverage to cool off with. The Queen’s Park Swizzle has simple enough ingredients and is not nearly as complicated as it looks. It doesn’t hurt how visually stunning this drink is to make it even more delicious!
