Every now and then I get asked if I cook (especially some of the pics)...ABSOLUTELY I cook! Always a treat to be home and eat my mom’s cooking!! Quoting my mom @cja_from_dallas “After having Spiral Diner & Bakery's Christmas sides for Christmas, I took the homemade seitan I made for Christmas, and deep fried it in a ginger beer batter, and then made seitan parmesan. We had calzones stuffed with shitake mushrooms, spinach, and Miyoko's smoked mozzerella. Instead of eggs, I used sourdough batter to make traditional Norwegian Krumkake, and used a vegan cannoli filling recipe (that used a potato as a binder) for the filling. I loved making an herbed tomato bread recipe that you bake as bowl for a salad (filled with artichokes, marinated mushrooms, olives, pomegranate seeds, chickpea croutons, roasted garlic, and tomatoes). The wild mushroom pie with puff pastry topping was really special (with hen of the woods, oyster, shitakes, and Chanterelles, mmmm)! Fresh Vegan Smoked Tempeh, Lettuce, Tomato and Avocado Sandwich. With the weather warming, it’s nice to enjoy a sandwich on the lighter side with fresh farm produce. Slice tempeh thin and marinate for 10-15 minutes with soy sauce, brown sugar and liquid smoke. Place on a grill pan on the stove over medium-high heat and sprinkle with smoked paprika. If you have a weight plate, place it on top. Grill for 3-5 minutes on each side until you get some nice grill marks. Lightly toast the bread and brush on some vegan mayo. Add lettuce, thick sliced tomatoes and sliced avocado. Season with salt and pepper. Top with grilled tempeh. For our lunch, we’ve made homemade potato chips and pickled our own cucumbers. This week flies by fast, any plans for the weekend? Today, I am sharing another party friendly recipe you will 💖 - NACHOS!! Inspired by @isachandra recipe, I have modified it over time depending on my mood.😂I often make this queso but never had a chance to post it until now. . Recipe: ~ 1.5 cups cashews, soaked overnight until soft or in hot water for 30-40mins ~ 3 cups vegetable broth ~ 1 tbsp avocado oil ~ 1 small yellow onion, diced ~ 6 cloves garlic ~ 3 tbsp roasted bell pepper, chopped ~ 1 jalapeno pepper, diced Spice mix: ~ 2 tbsp ground cumin ~ 1 chipotle pepper in adobo sauce, chopped ~ 2 tsp ancho chili pepper and ground paprika ~ 1/2 tsp cayenne pepper (omit if you prefer less🌶️) . ~ 1 tbsp white miso (optional, adjust with more salt) ~ 2-3 tbsp nutritional yeast (start with 2 tbsp) ~ juice of half 🍋 ~ salt to taste Using a high speed blender, blend cashews with broth until creamy and smooth, set aside. In a heated pan with avocado oil, saute onion, garlic until soft, add in all peppers and spices, cook for 2-3mins. Turn off heat and pour this into your cashew mixture, add miso, nutritional yeast and lemon juice, blend on high speed until well combined. Season with salt, add the remaining nutritional yeast for a more cheesy taste. Using the same pan, pour mixture in and cook until it boils. If it's too thick, add more broth. Serve with chips and topped with fresh tomatoes, jalapeno pickles, and cilantro. I usually add beans, quinoa and salad to make it a complete meal. You may refrigerate the sauce for up to 3 days. .
