BREAKFAST
Easy Basic Overnight Oats from Brittany Mullins on eatingbirdfood
Modifications: i use maple syrup instead of honey; instead of adding fruit, i use cinnamon; used unsweetened vanilla almond milk and low-fat vanilla yogurt; did not use sea salt
Rice Cakes, Peanut Butter, and Yogurt from me
2 Caramel, Chocolate, or Apple Cinnamon Rice Cakes
Spread 1 tbsp of organic peanut butter on each
Take one container of strawberry-banana yogurt, spread half on one and the other half on the other
Enjoy!
LIGHT MEALS
Baked Halibut and Asparagus from juliasalbum
Modifications: i do not garnish with parsley
Sesame Soba Noodles from foodiecrush
Modifications: i use mirin instead of rice wine vinegar; i use brown sugar; i use olive oil instead of canola oil (this was made to use excess soba noodles, i didn't have a lot of the stuff lol)
Buckwheat Soba Spaghetti from thedishonhealthy
Modifications: I was not successful with this roasted tomato sauce, the sauce i made is down below
Tomato Sauce from Canned Tomatoes from Getty Stewart
Modifications: used olive oil instead of canola; used stewed tomatoes; did not use tomato paste; did not blend, used a potato masher lol
DINNER
Filipino Chicken Adobo from Corinne Domingo on the food network
Modifications: i usually use about half the amount of chicken while keeping the rest of the measurements the same.
Creole Jambalaya from Lauren Miyashiro and Lena Abraham on delish
Modifications: i do not always use shrimp
One-Pot Cajun Chicken Pasta from the food network
Modifications: I double to triple the amount of cajun seasoning

Take 2 packs jello vanilla pudding mix, whisk in 2 cups of half and half or heavy whipping cream, and 2 cups of whole milk
whisk until completely smooth

It’s vegan, gluten-free and the quinoa packs in a good amount of protein.  Ingredients 1 cup unsweetened vanilla almond milk 1/2 cup uncooked quinoa 1 teaspoon cinnamon 1/2 teaspoon vanilla 1/2 Tablespoon chia seeds (or ground flaxseed) 2 Tablespoons raisins 1 Tablespoon peanut or almond butter maple syrup + banana slices for topping (optional) Instructions Rinse quinoa and drain. Place milk and rinsed quinoa into a small saucepan and bring to a boil. Add cinnamon and vanilla. Reduce to a simmer and cook about 15 minutes, or until all liquid is absorbed. Watch the pot carefully and stir often because it has a tendency to want to boil over.
