Food today:

I feel good about these choices- cucumber, eggs, buffalo ranch salad, shrimp alfredo, turkey sausage, strawberries n yogurt.

Worked about 10 hours. Read that chapter. I am toast.

Korean Style Cold Tofu Shirataki Noodle Salad with Shrimp

Ingredients:

2 tablespoons rice vinegar or lime juice

1 tablespoon reduced sodium soy sauce (gluten-free or tamari for gluten-free)

2 teaspoons toasted sesame oil

2 teaspoons gochugaro (Korean chili pepper flakes) or aleppo pepper or red pepper flakes

2 teaspoons sesame seeds, toasted

2 cloves garlic, chopped

1 teaspoon honey or sugar

1 green onion, finely sliced

1 (8 ounce package) Miracle Shirataki Noodles, drained and rinsed

8 ounces cooked shrimp, peeled and chilled

4 cups lettuce, shredded

1 cup cucumber, julienned

1 cup carrot, julienned

1 cup red cabbage, shredded

1 yellow pepper, julienned

1/2 cup kimchi (optional)

1/4 cup green onion, sliced

Directions:

Mix everything.

Assemble the salad, toss in the dressing and enjoy!

Once I figure out how to draw a dragon's head, I'd draw the full dragon form of my sona (with more scales. i love drawing the scales the most it's so calming but gayum rendering each one is mindbreaking but it's so fun to draw).

Sweet Miso Fettuccine

INGREDIENTS:

1 package Miracle Noodle Fettuccine ½ cup frozen broccoli florets 3 oz ham, cut into 1-inch pieces ½ tablespoon Smart Miso 2 laughing cow garlic cheese wedges 1 green onions, finely sliced salt and pepper 

DIRECTIONS:

1.) Drain, rinse, and dry half a package of Miracle Noodles. Set aside.  2.) Microwave frozen broccoli until steamed and tender. 3.) Chop ham into ½ inch cubes. Spray a medium skillet with coconut oil spray and place over medium-high heat, add ham and cook until browned on all sides. 4.) Toss noodles and sliced green onions (reserve top of green onion for garnish) into the pan and warm for 2 minute. Remove pan from heat and add miso and cheese, stir to combine. Lightly toss in cooked broccoli. 5.) Garnish with green onions. Enjoy!
