Cacio e Pepe: From My Mothers Kitchen
(Cheese and Black Pepper Pasta)
In Rome, the eternal city has four main pasta dishes: Cacio e Pepe, Pasta Alla Gricia, Carbonara and Amatriciana. These pastas are truly of Roman origin.
The history of Cacio e Pepe like many things in Italy is shrouded in mystery and fable. The origin of this pasta dish is not really known, and many historians have different theories as to its beginnings.
Some food historians believe that Cacio e Pepe was invented centuries ago by sheepherders grazing their flock in the meadows of the Apennine Mountains. Legend has it that they carried dried pasta, pepper and cheese with them during grazing season which was easy to transport and resistant to spoilage. However, many believe that this dish originated with the poor low-income families that once lived and worked in the mines and factories in the Lazio region that encompassed Rome. . . . . .

Ingredients
16 ounces of spaghetti
8 cups of water
Salt for pasta water
1 Tablespoon of Black Peppercorns (Crushed)
7 Ounces of Pecorino Romano cheese (finely grated)

Method
Crush the peppercorns with a mortar and pestle and then Grate the Pecorino Romano very fine.
Bring the water to a boil, season with the salt, and add the spaghetti. Stir gently at the beginning to keep the pasta from sticking to the bottom of the pot.
In a saucepan add the crushed peppercorns and then add 3 ladles of pasta water and bring the water to a boil then down to a simmer. When the pasta is half cooked transfer it to simmering pasta water. Reserve the remaining pasta water.
Transfer another ladleful of water to the pan and continue to cook the pasta until it is almost cooked. It should be almost al dente but not quite (cooked “to the tooth”)
When the pasta is al dente, remove the pasta from the heat. There should be some starchy cooking water left in the pan. Wait 30 – 45 seconds and   begin to slowly add the pecorino mixture to the pan stirring quickly with tongs and shaking the pan to coat the sauce evenly. If needed, add more of the starchy reserved pasta water to the pan to help the sauce come together. If done correctly a creamy consistency should form between the pecorino cheese and the pasta.
Sprinkle more finely grated Pecorino Romano cheese and black pepper corn on top and serve immediately.

okay so we've determined the wammy boys favorite pasta shapes but what sauce would they use
sorry gjshfdgjsdhgsd this is DAYS late. my brain went into The Void. having considered this i think most of them would have fairly broad tastes but let me just opine for a minute and see where it leads me. thank you for this ask btw it is!! very fun <3
Matt is perfectly fine with cheap sauce. Ragu, Prego -- he is not picky or bougie about this. I think in his late 20s he learns how easy it is to make decent sauce from scratch and will maybe do a slow-cooker version sometimes when he's feeling fancy but he still has a deep fondness for the cheap stuff.
Mello I think would have a wide and somewhat sn palate. On the occasions that he uses jarred sauce, Victoria's or Rao's; imo he would normally make marinara from scratch, but might keep shelf-stable sauce around for lazy evenings. I think he loves pesto but is snobbish about it and also will not purchase it jarred; he frowns on using a food processor for it [MORTAR AND PESTLE ONLY!!!]. He knows how to make a mean arrabbiata & puttanesca and these are perhaps his go-to quickish dishes for if he has dinner guests and not much time to prepare something impressive.
Near's faves are cacio e pepe, aglio e olio, and spaghetti al limone (except w/ linguine subbed in for spaghetti) and various simple pasta + veggie dishes. He cannot make any of these things but thankfully he lives in New York City and has devoted employees who will without complaint drive 30 minutes in traffic to get it from the place he likes best, which was close to the original headquarters that got attacked by Kira fanatics.

hello nero my beloved soulmate!! <33
i’m back and i am already suffering from severe PHD (post holiday depression, i decided it is a thing). my friend left last night and i hate this. it’s so unfair that we live in two different countries and we can’t see each other as much as we would like to. i’ll probably see her soon, i should have another week off in august and we were talking about me visiting her this time so hopefully i’ll be able to go.
anyway, on to the trip!! it was so cool!! i mean the first week we stayed in tuscany, we went around florence and a few other cities around here, and we got tattoos!!! i told you about this already but they are so cute!!! our little irish dinosaurs (they’re irish because we met in ireland <3 they’re named saoirse and niamh).
then for the second week we went to rome!! oh it was so nice!! we found the perfect weather. it was always sunny and warm enough to go around in shorts, but never too hot not to be able to explore. we went for the usual places: the colosseum, the pantheon, the squares and fountains, all that. but also we accidentally found ourselves into the roman forums and they were amazing!! i’d never been in them, only seen them from above, but they are so big, you can see a whole city. but the highlight was ostia antica. it was this archeological site near rome and it’s so quiet because not may people know it. it’s an 84 acres site where you can literally walk into houses and shops and temples and theaters from the roman period. and it’s amazing because usually rome is very protected, like there are fences and barriers everywhere, you can’t get too close to a lot of stuff, but in ostia antica we could literally touch the ruins, walk through them and find our way back in a maze of doors and corridors. it was so cool!!! also that’s where i found the cats!! they were so cute and friendly 🥺
last thing before i close this letter. the food!!! oh the food. we found this little restaurant on the very first night, which was actually so close to the trevi fountain, and it was so cheap and good (very rare combination to find in the middle of rome). they had some of the best spaghetti i’ve ever tried. also we kept going back there in the next days so they recognized us and they were so nice because they offered us appetizers and wine and they always remembered that we liked to order three plates of pasta to share between the two of us. they were so nice!!
i really needed this trip. i needed to be off work for a few weeks and just disconnect from all the drama and stress. and the good food and wine helped a lot with that lol. but seriously i’m so happy, it was an amazing trip and it was so good to see my friend again after so long <3
but enough about me now!! how are you doing nero?? what have you been doing these last two weeks??
also, about our last letter, i am very happy that you are following my orders and planning a very relaxing trip :) you deserve to not even think about uni when you’re on a trip. and it’s gonna be so fun to dance to that kind of music!! can’t wait to hear all about that one!!
and i’m very happy you’re obsessed with me getting tattoos because this is turning into a sickness. i can’t stop now :’)

you definitely needed that trip!! just a refresh is sometimes all you need, and good food and wine are recommended to help relax by doctors actually 😌😌😌 but i’m so happy you got to see your friend after so long and i’m so glad that you enjoyed yourself!!!!
i’ve been doing alright!! i had my trip to sydney and my twice concert, and it was so much more fun than i thought it would be!!! so i took my best friend and a family friend of mine, and my manager from work came too, but we all booked our concert tickets together so it was me and my friends, my manager and her brother and his partner. (don’t even ask me how stressful buying six tickets was)
the japanese place opened up again, and we were staying somewhere even closer to it. we basically walked everywhere, because the train station is in the shopping centre next to the japanese place, and that was only ten minutes away. so i took my friends to eat more ramen than we could see and we shared a bottle of soju (my friends are lightweights and it was VERY funny to watch. i had to finish the bottle off though)
and then we did lots of activities on the tuesday before the concert and we went to that album shop and book shop again and i spent way too much money, cece’s orders 😌😌 i spent so much money in the album shop they gave me a free album and preorder benefit photocards (which are really rare!!) and i had to show my id in the book store because i bought a level one restricted novel (actually banned in my state, but my professors made me too curious), which was quite funny
the twice concert was so fun, literally everyone in the audience were dancing and singing, and i was gay panicking and it was wonderful! each of the members of twice also had a solo performance and they did so well! one of them, momo, had this dance where she HAD A POLE?!?!? AND SHE HAD NEVER POLE DANCED BEFORE?? she was so good, i will save your eardrums by not sending the video i took 😌
anyways, here’s the photo they posted at the end!! we are in the centre and slightly to the right <3 (i’m sure you’ll see me 😂😂)

and then we actually got the chance to go to the harbour bridge and the opera house, which are in the same place, so we didn’t waste too much time there! and then we went to this room of claw machines near the eateries and i managed to win two things!! (one of them i spent way too much money to grab out, but he looked so lonely and i had to get my son out 😭😭) and then we had gelato mochi, which my friend found. so they get a scoop of ice cream and wrap it with mochi! we all got two, because none of us can make a decision and it really was a good end to the trip 🥺
other than that, i am running a little behind on uni, but i decided to use some of my leave and take the week off work. i’m just going to smash out the essays i have due (and overdue) and i’ll probably be able to rest better during the big exam session 😌
i’ve been looking forward to seeing these two and you didn’t disappoint! the rainbow one is adorable and the font for the script on your ribs is beautiful!!! i think i might be addicted to your tattoo addiction 😂 (yay!!! i’m so excited!!)

More Fun Thedosian Food and Drinks Facts
So, a few more fun facts to tide you all over while I finish my food posts. (Also some snide commentary of my food frustrations at the end.)
Part 1
The Inquisition soldiers stationed in the Western Approach, Griffon Wing Keep, eat quillback and occasionally varghest. Which, considering they’re predators and you want to cook that all the way through means a lot of stews, soups, roasted, and other means.
Orlesians drink almond tea.
They also have punch, which can be both alcoholic and non-alcoholic.
When needed Thedosians will sweeten yellow wine with honey and spices.
Thedosians, Nevarran and other nations alike, eat dragons. Which isn’t entirely surprising but I mean they salt it, dry the blood to use as seasonings, all of it. Which, honestly, I appreciate them using the entirety of the animal.
Thedas has caviar, which implies sturgeon - unless Thedas has it’s own caviar making fish, but until noted otherwise you can assume sturgeon as most Thedosian food follows real world sources.
Thedas has both the dessert and savory forms of pudding. Which threw me for a minute when I came across Varric’s dialogue suggesting they put gravy on pudding.
Qunari have their own type of ale.
Avvar have their own type of mead and it is supposedly better than lowlander mead. Though, Amund might be a bit biased.
Both Avvar and Fereldans eat harts.
With the existence of Cacio e pepe, there is the implication that spaghetti and pevorino romano cheese exists in Antiva/Thedas. In Tevinter Nights it is implied that the Imperium makes it wrong meaning they uses butter, oil, or another ingredient aside from the cheese, pepper, and spaghetti.
Thedas has ale, beer, lager, and drafts, but since those things historically haven’t always been made from hops, it’s hard to say if hops exist. Hops in Thedas are theoretical, like waffles and lettuce.
Waffles aren’t mentioned as a food. Hawke’s nicknames are actions so... likely not a food. But open to headcanon, cause I ain’t here to rain on your parade.
There is not a single mention of salad or lettuce in Thedas but there are objects labeled “salad bowls” and I have intense feelings about this. Especially since the foods referenced range up to the 1900s. Let there be lettuce Bioware. Please.
The Bioware devs seem to like just saying “root vegetables”, “cakes”, “teas”, “fruits“, ect. instead of specifying which leaves a large gap and hurts my heart. Cause honestly I would love to know more veggies they used or even to see more foods unique to Thedas.

things i need in no particular order:
griffen in an oversized 80s shawl-collared coat with the black fur trim because not only does he need to steal lucas' style, he needs to one-up him while they're abroad.
the sanders family spaghetti recipe. (it's the worst version of cacio e pepe you've ever had in your life)
griffen making lucas attend some of his shows by forwarding the trade-off location for the heists through autographs.
which means: a signed promo still from one of griffen's shows with an optional illegible signature, but a clearly written and cryptic message for lucas. (sometimes it's just an invitation to dinner) (lucas attends every one he deciphers)
griffen is disappointed in his brother not because he's in jail, but that he's in jail for FORGERY. which means: a) he was peddling art b) it wasn't even good art. (griffen just smiles in that closed-lip way when jester brings up it was his milf GF's idea)
whenever griffen is asked to lift something after The Injury he just looks at lucas pointedly and says "Sorry, bad knee." (it's why he left the body)
the failed heist that silently ended his dancing career was intended as a romantic celebration.
