Grocery store rotisserie chickens. We all have bought one at one time or another. Some of buy them all of the time, and why not? Those chickens are an easy option when you’re in a rush to get a meal on the table, when you’re too tired to cook, and they are a relatively affordable mealtime option.
As a chef, I don’t often rely on a grocery store chicken, but I do enjoy them as a treat every so often. For me though, when I pick up a rotisserie chicken, the chicken serves as a short-cut for a meal I’m craving, but I want to eat it NOW!

I make tacos, buffalo chicken dip, chicken salad, flautas, or a super creamy alfredo pasta made with fresh noodles from the near by deli section in the grocery store. I would say however, that my favourite thing to make out of a roasted supermarket chicken is a pot base filling. I might use that filling in a premade pie crust that I top with tater tots and cheddar, or stuff them into puff pastry for an unreal pot pie pop tart, or this glorious chicken pot pie poutine.
The sauce comes together in about the same time as it takes to cook up some oven fries. I do recommend waffle fries for this dish; it just holds the sauce and cheese curds in just the right way. If you have an air fryer- definitely cook up the waffle fries (or other frozen potato product of choice) in there.
I use cheese curds for this poutine... I think for this specific dish, it’s a must. To help thicken the sauce there is no cornstarch slurry or a cooked roux of any kind. I rely on the thickeners that are present in a block of cream cheese. I melt the cream cheese into the sauteed mirepoix, and thin it out with whipping cream and chicken stock to get the perfect consistency. I like to season the mixture with summer savory and nutmeg, but if you prefer poultry seasoning, or a simple addition of rosemary and thyme- you do you!

Rotisserie Chicken Pot Pie Poutine Chef ILona Daniel Serves 4-6
3 cups frozen mirepoix mix, thawed ½ cup butter ¼ teaspoon dried summer savory 1 package cream cheese, cubed 1 sodium free chicken stock tetra pack (3 cups) 2 cups whipping cream 1 tsp nutmeg, ground salt and ground black pepper to taste 3 cups cooked chicken, shredded or chopped into cubes 1 cup frozen vegetable medley, thawed 3 tablespoons chopped fresh parsley Waffle fries- 4 portions, cooked 1 cup cheese curds
Over medium heat in a large saucepan, sautee the mirepoix mix, summer savory in the butter.
Stir in the cream cheese and as it starts to melt, add in cream and stock; bring to a boil.
Stir in chicken, nutmeg, and vegetable medley into the pot and once the mixture is heated through thoroughly, stir in parsley.
Scatter the cheese curds over the freshly cooked waffle fries and cover with pot pie sauce.
Garnish with additional chopped parsley or hot sauce as desired.

My fried chicken with dried black lime masala. Turned out so delicious! The dried lime flavour was amazing! It is a unique tasting spice blend that I made by blending together black dried limes (after discarding the seeds) roasted cumin, dried red chillies, black pepper, black and green cardamoms I sautéed the garlic cloves and dried red chillies, crushed then together with a little salt and kept them aside. To the remaining oil in the pan I sautéed the onion till it turned golden. I pounded the garlic red chillies and onion together to a fine paste. I marinated the chicken with the dry and wet spices for a couple of hours. Then steamed it on medium heat till almost cooked. Then when they completely cooled down, I deep fried them all. Finally tossed them in the chicken juices left over after. We love to see you #enjoyscout and when the @thesardinfluencer shares his lobster egg sando vibes, we head right to the kitchen. @thesardinfluencer SIMPLE TINNED LOBSTER EGG SALAD SANDO ⠀⠀⠀⠀⠀⠀⠀⠀⠀ I whipped up this creamy umami bomb featuring @scoutcanning's tinned lobster a while back and never posted it, instead sharing my moules frites because I thought that recipe was more photogenic. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Battling my perfectionism can be hard on IG and as a result, there's a lot I don't put out there. But given that I'm currently away from my home kitchen as I explore tinlandia (aka Portugal), I knew this was the perfect time to pluck this delicious sando from the sharkives. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Creamy, pillowy soft, and rich in lobster flavor, this one is smelt in your mouth delicious. And the best part is, if you have the hardboiled eggs on hand it comes together in less than five minutes. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Tingredients: ⠀⠀⠀⠀⠀⠀⠀⠀⠀ • 1x tin @scoutcanning lobster • 2 slices fluffy white bread or milk bread • 2 eggs, hardboiled, shelled • 1 tbs @kewpieusa mayonnaise • 1 tsp @greypoupon_us Dijon mustard • ¼ tsp smoked paprika • flaky salt, to taste ⠀⠀⠀⠀⠀⠀⠀⠀⠀ 1. In a small bowl, mix the yolks with the @kewpieusa, @greypoupon_us, smoked paprika and salt to taste. 2. Slice the whites into small pieces and gently fold into the yolk mixture. Tourtiere is a traditional Canadian pie. Pie made of layered crispy dough with potato and meat filling. The taste is whole and balanced. There are notes of garlic, oregano, saffron and thyme in this dish. This recipe is made from ground beef, there are options with salmon, or pork, or lamb. The pie was brought by British colonists in the middle of the 18th century. The colonists cooked it in French. Further, the recipe has undergone a number of changes, but the basis remains the same. The name of the dish comes from the dishes in which it was cooked this dish. This dishes can now be called a flat frying pan without a handle.

Easy bake bread with cheesy cranberry dip. So good for a weekend brunch in winter. Recipe: 3 cups flour 1/4 tsp yeast 1/2 tsp salt Luke warm water Method: 1. Mix everything together with a wooden spatula till you get a sticky dough. 2. Rest dough for 30 mins then knead by hand by adding flour a little at a time till it comes together. 3. Leave to rest for 1 hour 5. Shape into a round and let it rest on parchment paper in a bowl for another hour. 6. Meanwhile preheat the oven to 450°F. Leave your cast iron pot with the lid on in the oven while it it preheating. 7. Transfer the bread with the parchment paper into the hot cast iron pot carefully. 8. Bake covered for 30 minutes. 9. Then remove the lid and bake again without the lid for another 10 minutes or until nicely browned and crisp. 10.
