How do you prepare sushi rice?
Preparing sushi rice requires a specific technique to achieve the right texture and flavor. Here's a basic guide on how to prepare sushi rice:
Ingredients:
- Short-grain sushi rice
- Rice vinegar
- Sugar
- Salt
- Water
Instructions:
1. Rinse the rice: Place the sushi rice in a fine-mesh strainer and rinse it under cold water until the water runs clear. This helps remove excess starch and ensures the rice cooks evenly.
2. Cook the rice: In a rice cooker or a pot, combine the rinsed rice with water using a 1:1 ratio (one cup of rice to one cup of water). Let the rice soak in the water for about 30 minutes before cooking. Then, cook the rice according to the instructions of your rice cooker or on the stovetop until it's tender and cooked through.
3. Prepare the seasoning: While the rice is cooking, mix rice vinegar, sugar, and salt in a small saucepan over low heat until the sugar and salt dissolve completely. You can adjust the ratio of vinegar, sugar, and salt based on your preference.
4. Season the rice: Once the rice is cooked, transfer it to a large, shallow bowl or a wooden sushi rice tub. While the rice is still hot, gently fold in the prepared seasoning mixture using a wooden spoon or paddle. Be careful not to mash the rice; instead, use a cutting motion to distribute the seasoning evenly without breaking the grains.
5. Cool the rice: Fan the rice while gently mixing it to help cool it down to room temperature. This process helps remove excess moisture and gives the rice a glossy finish.
Your sushi rice is now ready to be used for making various types of sushi rolls, nigiri, or sashimi bowls. Remember to cover the rice with a damp cloth to prevent it from drying out while you prepare the rest of your sushi ingredients.

Note
this may sound stupid but how does one make coconut rice?
my tried and tested recipe is as simple as soaking 1 and a half cups/roughly 500g of thai jasmine rice in (cold) water for half and hour to an hour (to remove the excess starch and make it softer and more absorbent), draining it, then putting it in a pan over a medium heat and adding a tin (400ml) of coconut milk and about a tablespoon of water, a teaspoon of salt, a teaspoon of soft brown sugar, and bringing that all to a boil (stirring regularly to prevent sticking) and then lowering the heat and letting it simmer (still stirring regularly) until most of the liquid is absorbed by the rice and the rice is soft and sticky but not soggy or chewy. that makes enough rice for 3 or 4 meals/people.

I chose to sell Chicken Rice because it’s a simple dish consisting of four components; rice, chicken, broth, and sauce. It may have only four units yet everyone’s definition of ‘delicious’ differs. Some love to eat chicken skin. Some love chicken thighs. Some don’t eat it with the sauce at all. Some love the hot broth. That’s what makes this simple dish stand out. I see people eat Chicken Rice every day. And they enjoy their Chicken Rice in their own way.

What makes Thai jasmine rice so unique?
Thai jasmine rice is renowned for its distinctive characteristics that set it apart from other varieties of rice. Here are some key factors that make Thai jasmine rice unique:
1. **Aromatic Fragrance:** One of the most notable features of Thai jasmine rice is its natural fragrance. The rice emits a subtle, floral aroma reminiscent of jasmine flowers when cooked. This aroma not only adds a pleasant scent to the rice but also enhances the overall dining experience.
2. **Long Grain and Soft Texture:** Thai jasmine rice has long, slender grains that remain separate and fluffy when cooked. The texture is soft and slightly sticky, making it easy to eat with chopsticks or a fork. The grains don't clump together, contributing to a light and delicate mouthfeel.
3. **Subtle Flavor:** Thai jasmine rice has a delicate and mild flavor that complements a wide range of dishes. Its subtle taste allows it to pair well with various cuisines, making it a versatile choice for both savory and sweet dishes.
4. **Cultivation and Geography:** Thai jasmine rice is primarily grown in the fertile plains of Thailand, where the combination of soil, climate, and water sources creates optimal conditions for its cultivation. The specific geography of the region contributes to the unique characteristics of the rice.
5. **Cultural Significance:** Thai jasmine rice holds cultural significance in Thai cuisine and is often considered a symbol of quality and purity. It is a staple in many Thai households and is commonly used in traditional dishes such as green curry, and stir-fries, and as a side dish for various main courses.
6. **Export Quality:** Thai jasmine rice is a popular choice in the global market, and Thailand is one of the leading exporters of rice worldwide. The demand for this rice variety is not only due to its unique characteristics but also because of the high standards maintained in its cultivation and production.
In summary, the combination of its aromatic fragrance, long grain and soft texture, subtle flavor, specific cultivation conditions, cultural significance, and export quality collectively contribute to the uniqueness of Thai jasmine rice.
