Bought a roast - seitan with roast potatoes, carrots and parsnips with mustard mash, yorkshire puddings, stuffing and gravy. It was OK, but we had to wait a LONG time for it to arrive and it was quite salty. I also had to do most of the cooking anyway... like the roast veg I had to cook from raw. The yorkies were also quite dense.

We had a glut of strawberries on the allotment so I took the opportunity to make shortbread and bought Elmlea Plant double cream. SO GOOD! I whipped it up :).
Shortbread was Delia’s, except I used stork block instead of butter.

Vegan banh mi with quick carrot pickles, cucumber, lettuce and aquafaba mayo, fry’s vegan chicken strips and topped with sriracha mayo :). I also served with some miso aubergine which was a bit too much miso - whoops.

Broccoli quiche with homemade pastry using delia’s recipe https://www.deliaonline.com/recipes/type-of-dish/pastry/shortcrust-pastry. However, instead of lard and butter I used 50g stork block. It works really well.
Filling is onions, garlic, broccoli and gram flour mix with black salt, nooch and some seasoning like pepper, onion powder, garlic powder.

Carrot cake muffins with cashew cream cheese frosting topped with orange zest. The first picture is the cream cheese frosting WITHOUT whipping - it was MUCH better when I whipped it up a bit!

Using up the cupboard: dried mushrooms and risotto rice to use up. I added fresh mushrooms from the veg box and frozen peas from freezer - topped with olive oil, seeds and nooch!
