Lime Salmon 4 (6 oz) skinless salmon fillets 3 Tbsp olive oil, plus more for grill 2 tsp lime zest 3 Tbsp fresh lime juice 3 cloves garlic, crushed Salt and freshly ground black pepper, to taste
Coconut Rice 1 1/2 cups Zico Coconut Water 1 1/4 cups canned coconut milk 1 1/2 cups jasmine rice, rinsed well and drained well 1/2 tsp salt
Avocado-Mango Salsa 1 large mango, peeled and diced 3/4 cup chopped red bell pepper (1/2 large) 1/4 cup chopped fresh cilantro 1/3 cup chopped red onion, rinsed under water and drained 1 large avocado, peeled and diced 1 Tbsp fresh lime juice 1 Tbsp olive oil ✔️Instructions: For the salmon: ▪️ In an 11x7-inch baking dish whisk together olive oil, lime zest, lime juice, garlic and season with salt and pepper to taste (a fair amount of each). ▪️ Place salmon in baking dish, cover and allow to marinate in refrigerator 15 - 30 minutes, then flip salmon to opposite side and allow to marinate 15 - 30 minutes longer. hello!! yes here are some very easy, low effort low prep recipes i love. the bolded ones are the ones i find myself making most often when i am like wow i do NOT want to cook but if i must do so, i wish to make the easiest thing ever.
shakshuka (all recipes are basically the same! i make it with canned tomatoes to cut down on prep, add a sliced jalapeno to make it spicier, and top it with feta and cilantro. if you are not crazy about eggs my sister often makes it with chickpeas and no eggs!)
thai peanut noodles (you can make as-is but i often add roasted broccoli and air fryer tofu if i have time!)
ricotta pasta with roasted broccoli and chickpeas (i roast the broccoli rather than broiling it as i am afraid of broiling lol but it's very easy and delish)
creamy corn pasta (my beloved)
spaghetti with onion-"bacon", corn, and basil
roasted sweet potato tacos (roast sweet potatoes, warm black beans on the stove with spices, and make easy quick-pickled onions if i have time - then you can add avocado, sour cream, cilantro, and any other toppings you like!)
potato egg and cheese breakfast tacos (i roast or air-fry small-cubed potatoes, scramble eggs, melt cheese into the eggs, and top with the salsa of your choice!)
migas breakfast tacos
tortellini with pesto and roasted veggies
caprese toasts (toast bread of your choice, then add pesto, sliced mozzarella, sliced cherry tomatoes, basil if you have it, and balsamic glaze... my all-time fave easy/no-cook meal)
pesto pasta with frozen peas (another super easy one i make when i want to barely cook at all - you boil the frozen peas in the pasta pot for the last three minutes of the pasta's cook time. then add pesto, grated parmesan, a squeeze of lemon, and halved cherry tomatoes if you have them)
easy asparagus soup (thinly slice a leek and cut 1-2 bunches of asparagus into half inch pieces. melt 3 TBS of butter in your pot, then saute the leek plus 5-6 cloves of garlic for 8 min. add asparagus pieces and 4-6 cups of veggie stock, bring to a boil, salt and pepper, and simmer for 30 min. transfer it all to a blender and blend, then add 1/4th cup grated parmesan and the juice of half a lemon. serve with crusty croutons and sliced chives)
roasted sweet potato & figs dish (you can also make with dried dates if you can't find figs!)
easy chana masala
nectarine, arugula, and feta salad (best in the summer when it's nectarine season but delish all year round... you can also use peaches. i usually serve it on a bed of quinoa so it's more filling/more of a main dish. the basil dressing is to die for i could eat it with a spoon)
avocado & egg sandwich (you can make this on a bagel, english muffin, or bread... just toast your bread, mash avocado onto the bread & sprinkle with red pepper flakes, and then scramble or fry eggs to your liking and put on top)

Hi Adira!
Last week and next week I am living the life of a paid musician (pit then orchestra) and I am fried. Seeing as how you’re familiar with the professional performer life, I was wondering if you have any advice on how to make it mentally and physically sustainable?
I am hoping that more of these opportunities will come my way and I want to be able to do it without spending a week in bed afterwards…
Ooof. I've been there. I mean, you gotta do the basics--sleep, good food, water. I also rely on copious amounts of coffee.
But the thing that usually gets me through a prolonged show-mode slam is plan ahead and then literally taking it one. day. at. a. time.
Don't look down those calendar days and wish for Friday. It's only going to make you burn out on Tuesday. Literally living in the moment saves my ass every time. Assess what you need from moment to moment. Are you hungry? Need a snack? Just sit and rest? Got a couple of hours but just exhausted? Don't worry about the "other stuff." That will be waiting for you at the end of the week. Just do what you need to that day to feel rested in your mind and body. Even if it's just zoning out to tv; don't feel guilty about that. It's just for this moment. There will be productive moments later. This one is for Narcos.
This is not to say you shouldn't plan ahead. Get your laundry done before the big week. Make big batches of good food you can eat on the go or take very minimal time to prepare for a meal so you don't stress about food prep or fall into the trap of fast food which will zap your energy and time and moneys.
One of my biggest events of the year is a two-week period where I'm literally at the office at 10am, participating in the evening events from 5-11pm, and then co-hosting an after-event until around 1am. When you factor in drive time and showers, that leaves me just enough time to sleep. Sometimes.
So I make sure to do my laundry right before. I'll even maybe organize my closet in a way where I can just pull out clothes without thinking too hard. Take an assessment of your groceries/toiletries and make sure you have what you need, because nothing will frazzle you more than not having it and/or having to squeeze in time to get to the shops. (If you do have to have something, mail order.) Make a go-bag for the week with anything you might need (including an extra change of clothes if you need it).
And if there's anything you can put off until after the big event, PUT IT OFF. Just mentally prepare yourself for big focus on the performing for that short burst of time.
When my big event is coming up, this is an example of what I do for food:
Bag of nuts and/or trail mix to keep in my bag.
Bag of carrot sticks I can keep in the fridge at work and a jar of peanut butter at my desk specifically for them. Fk spooning that shit out, dip your sticks in it.
I will boil up an entire family-sized package of Buttoni tortellini, dump in a whole container of the brand's pesto sauce, one whole chopped bell pepper, three whole packages of sprinkle tomatoes (or one package of halved cherry tomatoes), a whole package of peas (steamfresh microwave packet), and half a chopped red onion. MIX. That will give you a pasta salad for at least a week that you can eat cold right out of the fridge or warm up real quick and has a ton of veggies. And if you need protein, you can fix your meats separately and just add them in when you fix up a bowl. The key is to pack it full of tasty veggies you like that will balance the oils/fats of the pesto and turbo charge the carbs for lots of energy. (Pro tip: get a pair of really good kitchen scissors if you're like me and bad at chopping veggies or have terrible knife skills or terrible knives. So much quicker to cut.)
Starbucks via packets are a life saver if you have access to hot water and don't have time to make/grab coffee.
Laugh when you can. Step outside and focus on one thing--one flower, the way the sun hits a stop sign. Let your brain be simple for a little bit every day--I call this "letting it hang to get the wrinkles out". When you've been stationary too long, stretch. And when you feel stressed, close your eyes and imagine Pedro gently placing a finger on any spot that is tense until you let it go.

The Pro-Ana Diet : 8 Different Meal Plans to Follow

The Lunabelle Diet
The Lunabelle diet is a condensed version of the Ana Boot Camp diet, which is 40 days instead of the usual 50 days. It has more fast days and calorie variations. This is a more “doable” diet, as it comes with higher calorie restrictions, with days you consume between 100 to 800 calories. There are double fast days, though, so you have to prepare yourself for these. If not, you can consume 50 or 100 calories to stay safe if you aren’t able to fast this long. After 40 days, you will be able to lose up to 20 pounds or more!
The Rainbow Diet
This is a pretty interesting diet, as it entails you to consume one color of food per day, except for every Wednesday. Here is the meal plan:
Monday (white) :
Breakfast: Half an apple
Lunch: Half an apple
Dinner: One cucumber
Tuesday (yellow):
Breakfast: One banana
Lunch: One banana
Dinner: Half a cup of corn
Wednesday: Fast
Thursday (orange):
Breakfast: Half an orange
Lunch: Half an orange
Dinner: One carrot
Friday (red):
Breakfast: Half a cup of strawberries
Lunch: Half a cup of strawberries
Dinner: Half a red pepper
Saturday (purple or blue):
Breakfast: Ten blueberries
Lunch: Ten blueberries
Dinner: Ten raspberries
Sunday (green):

The ABC Diet
If you have been following the pro-ana lifestyle of quite some time now, then you’re familiar with the ABC diet, which is known as the Ana Boot Camp. This is one of the most popular diets to follow, as it’s extensive and incredibly useful. However, it’s very challenging, and not many people pass it.
This grueling diet will yo-yo between 50 to 500 calories a day, with a fast every few days. The extreme calorie restriction will have you lose at least 20 pounds once you are done with the 50 days. You can eat anything in this diet, but make sure that it sticks to your limit.
The Five Bites Diet
Think of it as a mental gastric bypass surgery, where people staple their stomachs to feel full after just a few bites. This will take a lot of self-control, though, as you will only be consuming five bites of whatever meal you have.
I recommend that you follow this diet:
Breakfast: Five bites of oatmeal
Lunch: Five bites of a sandwich
Dinner: Five bites of pasta
It’s best to consume a lot of water or zero-calorie drinks to stay energized and hydrated while doing the diet. Freshly-squeezed lemon juice can work great, too!
The Vegan Model Diet
The vegan model diet is another effective and restrictive diet suitable for those who follow the vegan lifestyle. Think of it as the usual meal plan models would follow to get a flat stomach without any meat products!
Breakfast: One reduced-calorie bread and two cups of black coffee with zero-calorie sweeteners
Lunch: One large apple
Dinner: Eight baby carrots
The total number of calories consumed is only 200 calories. Follow this for a week, and you will be able to lose weight quickly. You can substitute meals with different fruits and vegetables if desired. Add your meal diet with some healthy powders. Check the green superfood powder to know more.
The Ana Atkins Diet
This is a personal twist on the Atkins diet, which is similar to the keto diet. Just make sure that you avoid any keto diet mistakes and consume too many carbs from fruits!
Breakfast: Three-egg white omelet
Snack: Baked white fish fillet
Lunch: Roast Chicken drumstick and a cup of salad leaves
Snack: 50 grams of prawns with garlic and chili
Dinner: Grilled Sirloin steak and a cup of salad leaves
You might think that this is a lot to consume, but it’s quite useful in burning fat quickly. By day three, you have less appetite, and your body is using ketones for energy.
The Russian’s Gymnast Diet
Irina Tschachina is a 5’6 Russian gymnast who only weighs 99 pounds. Wonder how she does it? Here’s a diet you can follow for ultimate weight loss and health. Those who follow this diet for a week can lose up to ten pounds!
Breakfast: A glass of apple or orange juice
Lunch: Fruit salad with a glass of fruit juice
Dinner: Green apple and a glass of non-carbonated water
Make sure that your fruit juices are freshly squeezed and free from any artificial sweeteners.
The Baby Food Diet
This is a pretty exciting diet, as it entails you to consume baby food, which is rich in vitamins and nutrients. I recommend that you purchase organic and vegetable-based baby food, which has fewer calories and more vitamins.
You can have baby food for breakfast, lunch, and dinner. Or, you can have an average healthy breakfast and consume baby food for lunch and dinner. Make sure that you get the 80-gram jars, which are made for weaning babies.
But do take note that these are only short-term diets that should not be done as a lifestyle change. There are many different side effects to pro-ana diets, as you are consuming fewer calories than your body needs, which causes some health risks in the long run.

• Small meals throughout the day are also recommended, which can have the body think that you’re eating enough to stay satiated and energized throughout the day.
• These are aggressive diets, and you will be deficient in many nutrients from the calorie restriction. Because of this, it’s imperative to take in vitamins. These will compensate for what you don’t consume.
• Sleeping is essential to gain energy and level out your cravings and appetite. If you sleep less, it can lead to a lack of energy and hunger, as well as a slow metabolism!
• If you want to stay encouraged while following a diet, then it’s best to find a diet buddy or to look in the mirror, which keeps you motivated!
• You can keep track of your macronutrients with online macro calculators to ensure you’re eating the right foods, in the right ratios, for optimal weight loss.
Pro-ana diets are aggressive but possible with the right tips and healthy food consumption. That way, you won’t have a problem with keeping the pounds off in the long run !

05.02.24 - It seems pretty clear to me I need to go out and buy new button-down shirts for my work outfits. Still feel cute though; haven't worn this Hello Kitty skirt for a while. It's gorgeous outside; might go shop on my lunch break.
Work - I have to continue to fight NYM regarding adding players to cases, but other than that I left no work for myself; I'll have to do whatever comes in, and since I'm in the office the chances of me doing actual work is higher, but it has been pretty quiet so I'm not worried about being overloaded.
Background Noise - Back in the office, so back to YT and focusing on pop culture and popular media; I do have a few lists and discussions saved back that the goal is to watch today.
Seven videos off on not only a DVR day but a non-cooking day is great!
Study - Thursday is book day, and I'm still counting pages over chapters. This is because the chapters are getting a little longer than my attention can really handle; so if I read a couple pages, then a news article, then come back and read a couple more pages, I make more progress. At least, more progress than re-reading the same lines over and over again.
I got eight full hours off the DVR yesterday, including a couple of educational videos so I did very good on my studying yesterday.
Extras - It is Thursday, so I need to take the trash out of the house and to the curb; it's also the day I go back to cooking so we have Italian sausage on the menu for tonight. We're not doing the traditional pasta and sauce though; we're doing the summertime thing of grilling them with peppers & onions and serving it with a potato salad. Three more episodes of Turboranger tonight (only 5 episodes total left!) and another episode of Freakazoid before bed. Mini-essay was done quick today; I'm actually going to try and finish a full essay and post it during the course of the day today.

Okay so I’ve listened to Joseph Quinn’s episode of the podcast Off Menu like 3 times now and the absolute chaos of this man is incredible. Literally listening again as I write this because it makes me so happy. Anyways, things I loved:
- First of all, the three most giggly boys on the planet - and I don’t blame them, I was laughing my ass off the entire time
- Joseph’s goddamn voice. (I don’t think this needs elaboration)
- Surprising Things: Joe’s new low budget tv show where he jumps out from behinds things to surprise people
- Him talking about being so far down the rabbit hole with his American accent that he had to talk to Keery about if it sounded okay
- The way he said “eat it” about picky eaters
- His whole speech on how sparkling water is bad for you when this man creates a fucking 7 course meal with a pasta course
- The commentary on how Americans speak (“I know I’m good, I’m just sorry”)
- The way he yelled bread 5 times like he says I don’t know when people ask him about Eddie coming back for season 5
- This man’s absolute devotion to bread
- The fact that he probably does save a little bit of all parts of his meal for his last bite
- “Carry the 1, divide the 2”
- “I’ve already eaten”
- His entire imaginary scenario where he’s sitting alone on a bench in a shack across the street from the dream restaurant eating oysters with a portable table he brought himself. Every time I listen to this, imagining this scenario kills me
- “Road oysters???”

- The juxtaposition of “We can get through this, we’re close” and “I don’t think we’re done yet” Let him into the restaurant my god haha

- The sexy motherfucking way he says “Do you like that?” in the discussion of Eddie flipping his guitar onto his back (“Drilled it” ughh)
- “See?” “What do ya mean see? Why’re you looking at me like that?” and the giggling that commences
- The goddamn PASTA COURSE. MARRY. ME.
- The chorizo broccoli pasta that must be discussed (the fact that they are bursting with laughter the entire time)
- “How’s the shape indescribable?”
- “Sausage is a sausage”
- “It’s the whole black pepper thing that just gets on my tits” and the fact that he still doesn’t send the pepper people away
- Dustin as his waiter (I’d pay money)
- “You gonna fuck it mate? You gonna fuck the Caesar salad, are you?”
- The fact that he wants a “bang average glass of white wine”.. “chilled and totally forgettable, like me”
- The giggling after “big buttery fish”
- He’s talked in multiple interviews about how he loves sharing food with friends. A darling *chef’s kiss*

- “I know what you want.” / “What do I want?” Sorry but I personally love when people know exactly what I’m talking about without me specifying because they get my vibes
- About the fish skeleton: “And then you take it home” and everyone just pausing after he says it. Plus the game he plays with his flatmate
- The absolute and unwarranted defamation of Ariel
- “It’s not feeling like a dream meal now”
- The leveling up of the wine and the whole missed wine/philistine pun

Cheap Meals
So, I've got to shopping today because my fridge is literally empty. And I googled cheap meals to kind of inspire me and try not to buy the same five things every single week.
But whenever I do this I'm reminded how the word "cheap" is not always the same. And how often times cheap also means extremely high effort which isn't compatible with many lifestyles as well as people struggling with mental illness or physical illness...
So here are the meals that got me through some really difficult times (these meals aren't all healthy, they are simply healthier than skipping meals constantly which is what I did for a long time):
1.- Popcorn, where I live three bags cost one euro, that's 33 cents a meal that is hot, has flavour and just needs throwing in the microwave. Perfect to stop yourself from skipping a meal.
2.- Humus. A cheap blender, preferably the type uses for making juice is honestly the best thing ever. For humus you just throw chickpeas (I always use jarred) into said blender with whatever spices you like (I usually do salt, pepper, comino and curry powder), you blend and done! It can be eaten with nachos, on toast, or just on it's own. Takes five minutes is super cheap.
3.- Eggy bread, (basically French toast without the cinnamon) you just throw some egs in a bowl, mix them, add spices, dip the bread in and throw onto the pan. Takes barely any time, good hot meal, cheapest thing ever.
4.- Toast, obviously, having just some jam at home that can be spread onto some toast is another good way to avoid skipping a meal.
5.- Porridge, oats are super cheap, you just mix them with some milk, throw in the microwave and ta-dah! I add honey because honey is super cheap here but I know some areas it's more expensive, I've also added bananas when they're in season.
6.- Roasted vegetables, the other day pumpkins were cheap so I grabbed one, cut it in half threw it in the oven and that's that. Three meals ready to go. You can do a bunch of different vegetables, add spices or don't, do whatever works for you. Fried vegetables is also good but that requires a tiny bit more attention.
7.- Salad. People underestimate salad, at home you have full control, the other day I had glass noodles with cucumber and soy sauce. It was easier to make than pot-ramen and super healthy and tasted great. Sometimes I do pasta salad by making the pasta the day before and leaving it in the fridge (usually I make a pasta meal and just set some aside), russian salad is also amazing and super cheap.
8.- Vegetarian wraps, I just buy the frozen already chopped peppers form my supermarket, I fry them with a seasoner for burritos and then throw them into some wraps, cheap quick and delicious.
9.- Cereal, this is within the toast and popcorn area, just worth having around for when depression is high.
10.- Ramen but not ramen? Obviously, the pots of ramen are really expensive if you are dirt poor, but most supermarket sell noodles and chicken broth wich is the same thing. You just boil the noodle in the broth, I usually do this until their is no broth so it's not really ramen but to each their own. Make it extra amazing by adding a few more spices and an egg. Cheap, five minutes, delicious.
11.- Carbonara or bolognaise: just spaghetti (or any other pasta it doesn't really matter), for bolognaise I do tinned tomato, some onion, some garlic (depended on the season it'll be fresh or frozen), and if I have a bit of extra cash I add meat, but mostly my meals are vegetarian. For carbonara (this isn't proper carbonara but it works) I just do cooking cream, mushrooms, sometimes onion and again, if I have the money, bacon.
12.- Pizza bread, or pizza really. Just throw some tomato, cheese and ham on a piece of bread and put it in the oven. You can add or remove ingredients. If you have the time, flour and water makes dough to do proper pizza but you need to leave it to raise and I know I rarely think that far ahead.
13.- Toad in the whole, basically you mix water, flower and egg to make a pancake like batter, add some salt, put it in an oven friendly bowl or whatever, throw in some sausages (though I've done this without the sausages plenty of times), you get a bread, pancake, kinda thing and if you added sausages the juices make it taste extra good.
BONUS DESSERT: Cartwheels, basically you buy a pack of digestive biscuits and a bad of marshmallows, you put one marshmallow on one biscuit, put in the microwave for literally 10 seconds or less, when the marshmallow expands you place the other biscuit on top and voila! Super fast, cheap because you get lots of them out of those packs, warm.
Also, if you's feeling a bit depressed hot beverages are the cheapest treat I consistently get myself, like nice teas if you count the price per cup is super cheap but makes me happy. I also have like a pot of instant caramel cappuccino and some nice hot cholate powder.
Anyway, if you're struggling right now, good luck, the world is a mess right now and we just kind of have to trudge through that mess. Feel free to add anything that helped you through hard times because everybody has their own experience.
And again, most of these are not healthy, but sometimes you're just surviving and trust me, this is so much better than fainting because you haven't eaten in too long.

Pasta salad doesn't have to have olives in it
I'm picking up the pieces of my old routines, and facing the annual summer dilemma of "what do I like to eat when it's hot outside?", so tonight I made pasta salad. This uses both the oven and the stovetop, so it's not ideal if it's super hot in your home, but the meal itself is pretty good cold.
I disliked pasta salad for many years because I thought they were full of mayonnaise and olives, two things I hated. I still hate olives, and I've come around on mayonnaise for sandwiches but not as a dressing. This contains neither.
Vegetables
A bell pepper or two
A bundle of asparagus
A punnet of grape or cherry tomatoes
Maybe some zucchini; I had mini cucumbers so I used those but they didn't add much
Wash the veggies, slice or break them into smaller pieces as appropriate, and put them on a cookie sheet or in a roasting pan with some olive oil, salt, pepper, and garlic, longest-cooking ones first. I tossed the bell peppers in olive oil and roasted them for 25 minutes, then added the asparagus (snapped into shorter bits) for five minutes, then added the tomatoes and cukes for three minutes. If I'd had zucchini I would have put them in with the peppers.

Use about two cups of literally whatever pasta seems like a good idea to you; I used tricolor rotini. Boil it until it's al dente, drain, and return to the pot; add a cup of your favorite variety of broth (or just some pasta water, if you planned ahead and retained some of it), about a teaspoon of tomato paste, and a pinch of red pepper flakes. This is as good a time as any to add your

One pack of mozzarella pearls
Some salami sliced into small bits, however much seems good to you
Toss those in with the pasta. When the veggies are done, get them out of the oven and combine everything in whichever cooking container is large enough to hold all of that. Stir it up. Serve with some shredded fresh basil on top.

June is a joyfully colorful month in this region for several reasons! For starters, by the time June’s warmer temperatures seep into downstate New York, the growing season is entering full swing with a bright palette of fresh produce arcing through the farmstands in our markets. Plus, June is of course Pride Month – symbolized by the six-striped rainbow flag that cheerfully adorns flag poles, government buildings, store fronts and many other public spaces throughout the course of this month. Rainbows have risen to become a symbol of good fortune, positivity, diversity and inclusiveness in our popular culture, so it’s no coincidence that the phrase “eat the rainbow” is used by dieticians and other medical professionals to encourage people to put more fresh produce on their plates. In fact, consuming a variety of colorful fruits and veggies is the best way to introduce the most nutrients into your diet, without adding excessive calories. The naturally occurring pigments in these foods indicate different compounds with different properties that have been shown to provide a wide range of unique health benefits. So, to aid in the quest to taste and embrace the many seasonal colors of this month, here are some rainbow-hued items to look out for in the farmers market this weekend: Purple daikon Purple daikon radishes are at their peak during winter and spring months and are easily spotted at farmstands thanks to their bright violet skins offset by emerald leaves. This exotically hued root vegetable is native to Asia where daikon has been cultivated for thousands of years. Purple daikon is a specialty hybrid belonging to the same Brassicaceae family as the red radish. Their globular roots are oblong and cylindrical in shape with a thin tapered “tail.” The striking purple pigment is due to a type of flavonoid called anthocyanin -- the same antioxidant that gives blueberries their color, which will be entering the markets soon. If you don’t see purple daikon at the farmers market, look for watermelon radish, a round, green-white radish that reveals a dazzling hot pink interior when sliced open. Daikon radish can be enjoyed raw thanks to its crispy, crunchy texture and spicy, peppery profile that will add a splash of color and extra dimension to summer salads, grain bowls, pasta dishes and crudité platters. It can also be cooked using a variety of methods, including tossing the roots in olive oil, salt and pepper and roasting them at 375 °F for 10-15 minutes or until easily pierced with a fork. Don’t toss your leaves though! If they are still fresh and unblemished, radish greens of all kinds are delicious pan sautéed with thinly sliced garlic and olive oil then spritzed with a little freshly squeezed lemon juice. Red beets Beets grow in a rainbow of colors from gold to magenta to stunning candy cane-striped Chioggia beets. They derive their jewel-like hues from betalain, a type of natural plant pigment that has antioxidant and anti-inflammatory properties. The most common kind of beets you’ll find in the farmers market are the reddish/purple variety, but you can generally locate them in every color. Beets burst back into season this month so grab a big bunch of the spherical beauties this weekend and “get down to the beet”: * Beet salad with Goat Cheese and Balsamic * Balsamic and Fresh Thyme Roasted Beets * Easy, Homemade Pickled Beets Green peas Peas are cool weather-loving plants which means that June is a prime month for these exploratory climbers before they become sapped by the arrival of hotter temps. Peas contain a variety of minerals including magnesium, potassium and calcium and are also rich in antioxidant nutrients like vitamin C, carotenoids and flavanols. Snow, snap, and garden peas are all members of the legume family, but there are subtle differences between the three. Though they may look similar, each has a different texture and level of sweetness:
Garden (aka sweet or English) peas: Pods are firm and rounded and are shelled then discarded (toss them in your compost!) to retrieve the sweet peas inside which can be eaten raw or cooked. These are the common green peas that are sold shelled and frozen.
Snow peas: Snow peas are often used in stir-fries. The whole pod is edible and they are flat with very small peas inside. The tough “strings” along the seams are usually peeled back and removed before eating. Snow peas are mildly flavored and can be served raw or cooked.
Snap peas: A cross between snow peas and garden peas, the whole pod is eaten and has a crunchy texture and sweet flavor. Snap peas may be eaten raw or cooked. Stringless varieties are now available.
Of course, there are many more ways to shop the rainbow at the farmers market this week: orange carrots, canary yellow oyster mushrooms, blue potatoes, carmine red strawberries and the list goes on! And, if you want to eat your way to some extra credit, pick up a bunch of beautiful rainbow chard! The stalks come in an array of bright hues and pretty pastels from white, yellow, red, purple, pink and striped topped with vibrant, leafy greens.

lazy cooking part 1
I thought I'd share some of my go to recipes since I always get overwhelmed when I'm looking for something new to cook and the ingredients list is like 12 things and you need a pan, a pot and an oven and three hours to prep veggies and weigh everything to the gram
also idk if it's the adhd but when I'm hungry I want food now (or less than an hour from now) I usually cook enough for a few days but if you were so inclined you could definitely eat this for a single meal 👀 just saying..
One Pot Pasta with Tomato Sauce and Coconut Milk
Ingredients
pasta
strained tomatoes
coconut milk
onion
garlic
salt
Optional add-ins:
spices of your choice (I like paprika, chili flakes and cumin)
something acidic (e.g. lemon/lime juice, vinegar)
vegetables (I usually buy frozen, soup mix or broccoli, but use what you like best)
smoked tofu (so good!! add some of the water in the package to the sauce too)
Measurements
I measure in parts because that's easier for me to remember, so for this it'd be 1/3 pasta, 1/3 tomatoes, 1/3 coconut milk. In exact measurements for me that's usually 500g pasta, 500ml tomatoes, 400ml coconut milk + 100ml of water.
Instructions
Peel the amount of garlic and onion you want, fry them in oil if you're feeling fancy, but you can also just put them in the pot with the rest.
(I usually do one onion to three garlic cloves because it's not supposed to be garlic-y, just add some flavour)
Add pasta, strained tomatoes and coconut milk to the pot as well as salt, pepper, spices and lemon juice if you have it. Mix everything.
Put the covered pot on the stove on medium-low heat.
(I have an electric stove with the dial 1-5 and I put it on 2, basically low enough that it doesn't immediately burn if you walk away or don't stir constantly).
Stir occasionally until the pasta has soaked up a noticeable amount of the sauce. Then turn down the heat (I put it on 1) keep stirring occasionally until the pasta has your preferred consistency. Then leave the pot covered on the stove to cool for as long as you can take it. (If you're really hungry you could just eat it right after turning off the heat, but this tastes even better the longer you cook it or as leftovers.)
And done!
You can also make this in the microwave. Add everything to a microwave safe container, put a lid on it and pop it in the microwave for 2-3 times the time it says on the pasta container. Don't forget to stir occasionally. Take the pasta out once it's reached your desired texture.
I hope you enjoy this one pot pasta. It usually lasts me ~five meals (3x dinner, 2x lunch) if I add some frozen veggies, salad and/or tofu to the meal.
It won't win a beauty contest but it's tasty!

Garden vegetable pasta sauce—like this is the greatest way to use up vegetables: chop everything up real tiny. the only necessary veggies here are mirepoix (carrots, onions, celery). Throw in pot. Sauté sauté sauté. Garlic salt pepper basil oregano rosemary parsley. Measure with your heart. Six cans of Crushed tomatoes. Wine and a little sugar. Measure with your soul. Simmer until you’re hungry. Stir the bottom so it doesn’t burn. Pasta, salad, cheese, olives. Boom.
Pizza!!! Crushed tomatoes, salt, pepper, garlic, tiny bit of chopped onion, parsley, oregano, basil, basil, basil, olive oil, balsamic vinegar, brown sugar, anise seed. Measure with your faith. Put into pot. Simmer simmer simmer until thick.
Roasted Nuts. Cashews, almonds, peanuts, pecans, mix brown sugar, clear oil, chipotle powder, rosemary, lots of salt, orange juice into bowl. Pour all over. Bake. Eat hot. Then give whats left to your ungrateful relatives in pretty decorative bags for Christmas.
Jackies Crazy Cookies—named because my grandma’s best friend Jackie ate these every day while she had a nervous breakdown (is the language problematic—absolutely—is that what she insisted we call them because sometimes people use humor to Cope™️, yes it is). Melt one stick of butter, 2-3 Tablespoons of cocoa powder, 1 cup of sugar, half cup milk. Bring to a boil. Let boil for exactly 30 secs. Take off boil and stir In a generous 3/4 cup of peanut butter and splash of vanilla. Stir in three cups of oats. eat directly from the stove like a monster (my preferred method) or set tablespoons of the mixture to cool and wet into cookies.
5. Whipped or Chantilly cream. Baby girl, it’s just better fresh.

So I am not one to post too much on social media but I think I will start posting on here and not just reposts either. Just shit about my life that I deal with or pisses me off.
Like today I have worked at pizza chain place for less than five months they insisted that I should be a shift lead, which I have no problem with but this was two months into my employment there. I said I would love to. It was a two dollar raise bumping me from 9$ to 11$. I told them as long as I am properly trained to run the store as a shift lead then I would do so. Because my last job did the same thing they threw me in as shift lead with no training and expected me to know what to do. They promised me that they would do that. They did not, they taught me how to do the books at the end of the night and the bank deposit. They only gave me three to four days to learn all of that and then proceeded to throw me, with little to no training on one of the busiest nights of the week to be by myself and run the store and the employees inside of it and gave me written step by step instructions on how to do books cause I hadn't had it down yet at all.
That's the main problem but not all of it. Half of the employees do not do their job they do the bare minimum and call it good, per example we have a front of house or personality as they call it, who comes in wearing whatever they want no uniform, smelling like weed and cat piss who sits on his phone the whole time and has his headphones in talking to his partner all night, if his partner isn't in the store, he doesn't make pizza boxes, doesn't fill the salad bar at the end of the night and mops over a dirty ass floor and doesn't clean the tables. The employees were not dating food, they were putting moldy and expired food into the salad bar at the managers orders even though they knew that could seriously hurt someone. The manager claims that the date on something is not an expiration date but a shelf life date -_- she should not run a store. But I have proceeded to suck it up and do my job. But I am continuing to do things that I shouldn't have to do, even deep cleaning the store because it hasn't been properly cleaned in years.
How do you know you may ask, if you are even bothering to read this, is because this location has been in my town since 1987. They used to have coloring pages, crayons, and board games and I am finding chess pieces and crayons from years ago in places like where we keep our straws, lids, sunflower kernels, croutons, imitation bacon bits and crispy onions. Underneath the booths, and underneath my managers desk. They have not done a pull out in the kitchen for over two months. There is mold growing on the shelves in the walk-in where we keep food and underneath the make table in the kitchen. But my last straw is that I do the closing shift on Monday ( today April 29th) nights, which I am used to now but there was a total of 32 orders. We open at 11 am and i came in at 4pm so that is maybe seven orders per hour and nothing had been stocked or prepped there was barely any cinnamon butter, garlic butter, spaghetti pasta or penne pasta, no onions, green peppers or tomatoes cut and nothing had been cleaned. So I am supposed to run the kitchen, make two different types of pasta which take 20+ minutes for each type of pasta, cut all the vegetables, label, date them, make all the butter for the pizza and desserts, handle all the customers problems and any that the call center tells me to do so and close and make sure everything has been done at the store.
So I quit today, I had already put in my two weeks on Tuesday cause I have had troubles in my household but also cause I found a job that was closer and paid more for doing less work than I have been now. But coming in today to see the other shift lead hadn't done anything pissed me off that I could not take it so after not even 55 minutes of me being on shift I quit and walked out. Now I usually don't just quit on the spot like that I like to be courteous and professional but since my fellow employees could not even do their jobs they get to have a shitty night and do everything they expected me to do. Bonjour toute le monde, I am still at home and am enjoying my garden. We had three days of gorgeous weather where the temperatures reached 20c, although I was doing a lot of washing and letting it dry outside I still managed to prune my roses, clear nettles from around the paniculata and cleared out the dead leaves and weeds from the peonies.
The delicious meal at the restaurant did not disappoint, I decided to have a starter and what a cracking choice it was, tartine of chèvre chaud with a salad made with apple, pears and more cheese, it was really delicious. I then had the filet of beef with pepper sauce, gratin dauphinois and green beans plus I still had room for the delicious exotic fruits with sorbet. It was certainly worth going as I really enjoyed it all.
I had to go to the hospital for a platelet transfusion on Monday and I thought I was never going to get home! Did they not realise we were having similar to toad in the hole for dinner!
“The Photographer” and I were still busy getting my affairs in order. The one thing that was most important to me was having a funeral plan in place. We went and got the estimate and then I had an appointment on Friday for it all to be finalised. That’s it, I have the paperwork, it’s all paid for and an additional burden removed from my sons’ shoulders.
For our last meal together, “The Photographer” drove us to Buffalo Grill. I didn’t feel as hungry as I had previously and couldn’t eat all of my steak but I still managed a slice of cheesecake which was delicious.
Then it was time for “The Photographer” to leave. I was waiting for a taxi, which didn’t show, to take me to the hospital for my PET scan. The lady said it hadn’t been booked 🤔. So I spent an extra hour with him as he drove me to the hospital for the scan. It was a long day for him but he returned home safe and well and we had spent a lovely nine days together.
As I said the weather was gorgeous and so I took advantage and got all of the bedding washed (it will soon be ironed and put away). I have my bag to pack for hospital tomorrow.
Lots of messages from friends, Anie, Pauline, Monique. Maud and Claudine in France, Mary, Val, Jo, Jackie and Miranda in the UK.
My gorgeous grandchildren have been with Daddy this weekend, what little cuties they are! I got gorgeous photos of my grandson and my granddaughter was in studious mode until she knew that her uncle was coming to visit and my goodness the smile on her face when she saw him was amazing. They were both sitting on his knee, just loving being with him. My grandson was using his uncle’s girlfriend’s phone to take selfies, cheeky little chap.
“The Trainee Solicitor” is still trying to do his work and prepare the office for a new member of staff (hopefully one arrives soon). It is full on busy and boy will he be glad of a four day weekend this coming week.
“The Reconnect Navigator” has been given her own cases and feels that things are moving along. She also had her first payday which is a great day in anyone’s book.
“The Jetsetter” returned from her trip to Bologna, Venice and Florence and I know that during the stay aperol was consumed and I imagine quite a bit of pasta too. I always think it’s great to get away at this time of year as it sets you up for the summer.
My hair has fallen out big style now, I look a little like a friar with my big round bald patch in the middle of tufts of hair. As I don’t have the next round of chemo until maybe another month, I think I will be bald for sometime (I am not really liking it!)
My first piece of music this week comes from the artist I know as Terence Trent D’Arby but who is now known as Sananda Maitreya. To choose between “If You Let Me Stay” and “Sign Your Name” has proven very difficult, I am going to go with “Sign Your Name” but why not listen to them both. This song was released in 1987, wow so long ago!
The second song, has quite a haunting melody, it’s “7 Seconds” by Youssou N’Dour ft. Neneh Cherry, it was released in 1994.
Now I really must go to the supermarket, I need to get some filters for my Brita water filter (other makes are available) and I would like to buy something tasty for this evenings meal.
