Weeknight dinners must be easy for me, or it’s not getting cooked. This is why I meal prep. However I don’t meal prep for the entire week. I can’t eat the same thing all week I’ll go crazy. So I’ll change it up for the last few days of the week. But like I said it has to be something easy. So I made this shrimp fajita bowl the other night with a homemade Spicy Chipotle dressing. BOMB! Let’s start with the uncommon green sauce — Pesto : pesto is made from basil leaves , garlic , crushed pine nuts , coarse salt , cheese and olive oil .
