I've been making variations on chili garlic peanut noodles since seeing the recipe on TikTok.
I often make dan dan noodle (or cauliflower) so the idea of a spicy peanutty noodle dish was very appealing. The addition of black vinegar and use of sweetened peanut butter, though... I wasn't sure I'd like it--until I tried it.
I still think my dan dan is better (more complex from the bitter toasted sesame paste), but acidity and slight sweetness of this dish has kept me coming back for more.
While trying new things, I also decided to stop cutting my noodle veggies in the "traditional" ways (often in huge pieces). In the first dish, I used de-stemmed Swiss chard cut into ribbons and sauteed with garlic. In the second, I use kale, but seared it in a hot pan before lowering the heat and adding garlic. These ribbons of greens are much easier to eat with the noodles, and feel much better integrated.
For the first dish, I used ground pork, given a similar treatment as my dan dan pork. For the second, I used store-bought lamb skewers because I was craving lamb.
