'player character has amnesia' is one of those dull tropes that i/we collective accept because it's so damn functional at explaining
a) how a character is so damn basic that they barely know how to hold a gun/swing a sword despite presumably having lived in this world for at least 20 years
b) why their personality can be so flexible that they'll do do anything from 'save every puppy in their path' to 'go out of their way to murder orphans'
but the only game i've ever played it where it TRULY works is Disco Elysium
game went 'PC has amnesia. why? because he went on a drug fueled black-out and his self-hatred became so strong that he literally wiped his whole brain clean. completely. he doesn't even remember what country he's in.' it then went on to say, 'every single moment he's having like a 20 way conversation with the fractured elements of his psyche. even things as simple as "don't lick spilled beer off the counter in this hotel" requires his electrochemistry to duke it out with his volition. he failed a skill check not to piss himself.'
this character has brain damage and it SHOWS

Frankly I think Alistair being mildly shitty to that mage in Ostagar seems pretty in-character for the guy he is before the massive, life-altering trauma that is the Ostagar massacre wherein he sees all of his Grey Warden comrades, his beloved mentor/father figure, and his beloathed half-brother/convenient-target-of-projection absolutely torn to shreds by literal Thedas boogeymen. IIRC Morrigan and Flemeth both comment on his wack behavior after Ostagar and then by the time we get to Lothering Alistair just fully surrenders any and all responsibility (and, frankly, agency) to the player's Warden for the foreseeable future. It can then take anywhere from a couple IRL hours to the entire second act of the game for him to retake almost any amount of it back. And depending on the player's choices in dialogue, and especially whether or not they choose to romance him, we may only see flashes of that guy we met at Ostagar before he potentially morphs into almost someone else entirely (hardened!King!Alistair). All that to say, I don't actually think it's a useful criticism of "characterization" to bring up Alistair's glibness as compared to his behavior in the majority of the game because from where I'm standing (looking directly at his snottiness about Cailan, his complaints about being assigned to the Tower of Ishal, his Templar-esque focusing on Morrigan and Flemeth being apostates, his generally pretty brusque manner with the Warden recruits) it seems fairly in-line with the rest of his behavior at Ostagar.

Welcome to the first ever Would They Eat A Rat? Tierlist, documented by Sora! It's a slow day today and she has nothing better to do, and so created a list of some friends based around the question of: would they eat a rat?
Sora (me): "Starting with myself I actually have to admit that I've never eaten a rat before. Weird right? I'm open to trying it though if I get the opportunity."
Morax (@orecrowned): "I don't think he eats them now but I'm like, 99% sure he's eaten a rat in the past. And if he hasn't I could get him to eat one in five minutes."
Childe (@narvvhal): "Ayaks will see a rat and go "is anyone gonna eat that?" and then not wait for an answer."
Tem (@snowtombedstar): "I think she would eat a rat. Probably has eaten one already actually. Might even eat one that's just been frozen like, on a stick or something."
Ren (@erabundus): Sora is silent for a few moments, staring at the page where she'd written his name down. Then she very carefully writes out the word NO in big bold letters and underlines it a few times.
Chongyun (@mmriesoftvat): "I don't think he has and I don't think they will on their own, but I might be able to peer pressure him into eating a rat."
Nanashi (@starscrxssed): "Nanashi has probably eaten a rat before, like at least once. He likes fish a lot more though so it was most likely a one time thing."
Sylvie (@sylvctica): "Sylvie has probably eaten a bunch of rats. Would make something weird out of them though like.. like a rat burger or something."
Tonia (@abyssmalice): "She would only eat a rat if it was entirely made out of cotton candy or something. Or maybe a cake... a rat cake."
Rex Lapis (aka:dad) (@lapisdex): "I'm willing to bet he's eaten a rat in the past but not anytime in the last like, two thousand years. Probably."
Tomo (@visionkept): She isn't too sure about this one, actually. Cautiously writes down "yes?" in her notebook. Needs further study to validate.
