Lunch time
This is going to be a doubl-decker. So yes that's mustard 〽️ on both breads. First bologna then a slice of cheese, you want meat touching the mustard, and cheese sandwiched between two slices of meat.
First bottom bread, covered in chipotle aioli 🟠 and diced bell peppers 🫑. Then lettuce 🥬 and another bologna-cheese layer.
"Cheeseless behavior" Hmouserguy
Red onion 🧅 on more chipotle mayo 🟠, to be covered in lettuce 🥬. Hey that's three vegetables to 2 cheese and 4 meat (and 3 bread). This combo is working out nicely.
Does this count as healthy? IDGAF
Like the Grand Canyon you can see all the layers through time.

Apple and Pear Blue Cheese Salad (Vegetarian)
A whole sunny (and warm enough) day, from morning to night, has been enough of a rarity lately, that I pounced on the occasion to make a salad for lunch! A beautiful and filling Apple and Pear Blue Cheese Salad, which tastes like a late Autumn harvest! Happy Wednesday!
Ingredients (serves 1):
1 tablespoon Quince Paste
1 heaped teaspoon Dijon whole-grain mustard
3 tablespoons apple cider vinegar
1 1/2 tablespoon olive oil
1/2 teaspoon freshly cracked black pepper
1 cup lamb's lettuce
1 cup baby spinach
4 leaves Romaine lettuce
half an Ribston Pippin Apple, rinsed
half a Williams Pear
1 heaped tablespoon dried cranberries
30 grams/1 ounce good quality Roquefort, or other blue cheese
1/2 tablespoon pumpkin seeds
In a small frying pan over a low flame, heat Quince Paste, until softened. Remove from the heat and let cool slightly.
In a small bowl, combined softened Quince Paste, whole-grain mustard and apple cider vinegar. Whisk in olive oil until well-blended. Season with black pepper. Give a good stir.
Thoroughly rinse lamb's lettuce, baby Spinach and Romaine lettuce. Spin-dry well. Roughly chop Romaine lettuce.
Core and dice apple and pear.
In a medium bowl, combine lettuces, baby spinach, apple and pear. Add dried cranberries, and crumble in most of the Roquefort.
Drizzle generously with Quince Paste dressing, and gently toss, to mix and combine.
In a small frying pan, toast pumpkin seeds over a high flame until just fragrant.
Spoon Apple and Pear Blue Cheese Salad into serving plate, topped with remaining Roquefort and toasted pumpkin seeds. Enjoy!

We planted volunteer tomato seedlings in these hay bales to see if they had been treated with Grazon before applying the hay to our garden or using it for compost. It is still early so we’ll see how things go:
Treated the strawberries with diatomaceous earth to fend off the slugs:
This is the first year the grape has tried to make flowers:

Our fairy lights from last year died so we had to run new ones:

Greek Sloppy Joes
Chef’s Note: I don’t know how Greek it is, but I did enjoy this. How many rolls you use depends on how stuffed you make it.

Ingredients
1 pound lean ground beef
1 small red onion, chopped
2 garlic cloves, minced
1 can (15 ounces) tomato sauce
1 tsp dried oregano
1 tsp ground cinnamon
1/4 tsp ground nutmeg
1/4 tsp ground cloves
6 to 8 kaiser rolls, split and toasted
Romaine leaves
black olives or kalamata olives
~1/2 cup crumbled feta cheese
Instructions
0. Optionally, toast the roll buns
1. In a large skillet, cook beef, onion, and garlic over medium heat until beef is no longer pink, 6-8 minutes. Crumble beef and drain fat.
2. Stir in tomato sauce, oregano, cinnamon, nutmeg, and cloves. Bring to a boil. Reduce heat and simmer, uncovered, until sauce is slightly thickened, 8-10 minutes, stirring occasionally.
3. Place romaine on roll bottoms. Top with meat mixture. Sprinkle some olives and ~1.5 tbsp feta cheese. Place tops and enjoy
