ZUCCHINI GRATIN WITH YELLOW SQUASH
2 tbsp Butter
1 small Zucchini
1 small Summer squash
2 cloves Garlic
½ cup Heavy cream
¼ cup Parmesan cheese
1 cup Smoked Gouda
Preheat oven to 450 degrees
Melt butter in oven proof skillet over medium heat. Add onion and cook until the edges start to brown approximately 5 minutes. Add garlic and cook for additional 1 minute. Add cream and simmer until bubbly and starting to thicken. Slowly stir in parmesan. Add zucchini and yellow squash and cook an additional 4-5 minutes.
Sprinkle with smoked gouda and bake in the oven for 15-20 minutes or until cheese is golden brown.

~ Almond Cookie Recipe ~

Time needed: 30 minutes
What you need:
~ 112g almond flour
~ 1/2 tsp baking soda
~ 2-3 tbsp light soy milk
~ A dash salt
1. Whisk the flour, baking powder and salt together until it’s well mixed. Then add milk and sweetener and stirr until it’s smooth.
2. Use a tablespoon to drop onto a baking sheet, bake in the oven at 170°C | 350°F for about 15 minutes or until browned. Let them sit for 10 minutes.
Tip: You can play a lot with this recipe! You can add nuts, jam, fruit, whatever you like!

LEMON BARS RECIPE
Recipe for lemon bars - These bars are packed multilayer oily crust mixed with lemon and a little sugar. To date, this is the best lemon bars I've ever done!
2 c flour
1/2 c powdered sugar
1 c butter
1 8 oz cream cheese softened
6 TBSP sugar
1/2 tsp vanilla
2 c sugar
1/3 c lemon juice
1/4 c flour
1/2 tsp baking powder
Sift together flour and confectioners sugar.
Cut in butter until mixture clings together. (I use my hands to mix in the butter to the mix - it gets messy but is the best way to get it in there!)
Bake @ 350 for 20-25 minutes, or lightly browned and then cool.
In a bowl, mix cream cheese until smooth.
Add 1 egg and vanilla and beat well. Set aside.
In a separate bowl, beat 4 eggs until frothy.
Add granulated sugar and lemon juice.
Sift together 1/4 cup flour and baking powder and stir in to egg mixture.
Spread cream cheese mixture over cooled crust.
Cover with egg mixture. (Pour this slowly, do not dump it onto the layer, it will not layer well)
Bake for 25 minutes, or until done. (might need longer depending on thickness of bars)
Sprinkle with powdered sugar and cut into squares.

LEMON LOAF CAKE🍋
🍭 refined sugar-free
Ingredients 📝 :
🔸90g dairy-free butter 🧈
🔸3 eggs 🥚
🔸80g greek dairy-free yogurt🥛
🔸Zest of 2 lemons 🍋
🔸Juice of 1 lemon 🍋
🔸5g baking soda 🥄
🔸A pinch of salt 🧂
🔸200g common flour 🌾
🔸100g glass erythritol
🔸Juice of 1 lemon🍋
🔸Lemon zest 🍋
Tip: it's important having the eggs and the butter at room temperature. ✨
🔹Preheat the oven to 200°C.
🔹In a large bowl add the erythritol and the butter and mix with a hand mixer until you have a creamy texture.
🔹Add the eggs. Add one, mix until combined, and repeat the process with the rest.
🔹Add the yogurt, the lemon juice, and the zest and mix well.
🔹In another bowl, add the flour, the baking soda, and the salt and remove.
🔹Sift the dry ingredients and add them to the mix.
🔹With a whisker, remove until combined (we don't want to add too much air to the dough).
🔹Pour the dough into the mold and place it in the oven for 45 minutes at 175°C.
🔹Remove from the oven and let it cool for 10 minutes. Then take it out from the mold and let the cake cool down completely on a baking tray.
🔹For the frosting, add the glass erythritol and slowly add the lemon juice as you stir it. Keep adding lemon juice until you get the desired texture.
🔹Pour the frosting over the cake and spread some lemon zest on the top.
🔹Place the cake in the fridge for about 15/20 minutes to let the frosting solidify.

~ Mini Apple Pies ~
Here is an easy pie recipe I love to make during autumn and winter time! It's very easy and quick and perfect to enjoy with some hot cocoa or tea or to gift to family and friends! It's a bit higher in calories, but they really fill you up. ♥
162 calories | 2g Protein | 7g Fats | 27g Carbs per serving (makes 6)
Time needed: 1 hour roughly
What you need
1 package puff pastry
3-4 tbsp cinnamon
3 tbsp brown sugar
2 packages vanilla sugar (optional)
2 tbsp butter
1 egg (optional)
1. Preheat oven to 180°C | 356°F. Wash apples well and cut them into cubes.
2. In a bowl, mix the apples with cinnamon and sugar. Make sure the apples are well covered.
3. Heat butter in a pot. Cook apples for about 5 minutes or until they are soft enough for you.
4. Take out the pastry and brush it over with the juice from the apples, then cut it into squares. With a spoon, fill one triangle of the square with the apples, then overlap it with the other triangle and use a fork to seal the ends and brush the top with the egg.
5. Bake for 20-25 minutes.
Tip: You can also add Christmas seasoning or fill it with pumpkin instead of apples! If you don't have puffy pastry at hand, you can make your own!
