How much time have each servant been with sebastian and ciel? I know snake like 7-8 months but what about the rest?
Hiring timeline
Finny is the first one to be hired, some time in 1886, probably. He's discovered by our earl and Sebastian during an early assignment as watchdog. So, some time after March 17, 1886, I should think.
Mey-Rin is next, definitely in 1887, probably kind of early in the year. In her flashbacks, she goes back ten years from when she was hired, and ten years back was 1877.
Baldo also in 1887, but probably just shortly before Halloween. He's seen three Halloweens at Phantomhive Manor: 1887, 1888, and 1889 (ch120).
Tanaka comes back to the manor at an undisclosed time, but even when Baldo first starts working, Tanaka is still off-duty. Doesn't mean he's not at the manor, but he's not working. Possibly there but on bed rest... or something. By then Sebastian is talking about Tanaka as if he's merely on hiatus.

Would you be willing to expand more upon the relationship between Greeks and Celts, since there's a lot of Greek mythology and iconography in Kuroshitsuji as well? Is there any direct connection or overlap within the Fenian cycle and anything Greek, at all? I feel like that would be relevant, if that were the case.
I'm going to give the vaguest run down in the world in my best attempt to answer this. Before they came to be known as "Celts" they were called 'Gauls/Gaels.' Eventually after a long history of battles, the Greeks fought a number of Gauls/Gaels (Hence the word "Gaelic") and drastically reduced their numbers. Many Gaels decided to stay with the Greeks (and Romans) but many stayed against their will. The Greeks and Romans took territories from the Gaels and chased them to the edge of what we now call France, other Gaelic tribes left the European continent completely, and made their way to what is now known as the United Kingdom. The Celtic people who first lived there were called Celtic Britons. Eventually, the Roman empire launched an attack on those lands as well and successfully conquered the UK for a time. England was actually under Roman rule for a while in history, yes. The culture and government was an interesting Celtic/Roman fusion, but was ultimately under the Roman Empire. The history is extremely complex and messy, but Anglo-Saxtons didn't actually start showing up and settling with political influence, until after Roman rule ended in the UK. The Anglo-Saxtons brought upon an entirely new series of threats and prejudice to the Celts and their tribes were divided even further, some going back to Europe (France and some neighboring islands) and others, decided to stay in the UK and attempt to coexist with the newcomers. In other words, Greek and Roman history is a part of the United Kingdom's History as well and had a strong relationship with celtic people. Not always for the better but they also coexisted within the same lands for a very long time. They go much more hand-and-hand then I think people realize at a first glance. This is why it's not unnoticed that a lot of Celtic myths and legends are very similar to Greek and Roman myths and legends. Aaaaaall of that being said, there are characters within in the Fenian Cycle that are said to be Greek, that invade Ireland and have bad intentions with the characters in it and are ultimately defeated by Irish Warriors. "Garb mac Stairn" is one of them but not the only one. However, in some versions of the exact same story, this very same character, will sometimes be changed and said to come from other parts of Europe, and sometimes coming from as far as Turkey. Oxford sources state that he's from Scandinavia, while Harvard sources (Harvard taking it upon themselves to chronicle the entire Fenian cycle) state he was more-likely Greek (which I find incredibly fascinating) ... but they acknowledge there's alternate versions claiming he was from other places. Which begs the question, why was that detail changed so many times? As those locations are very different places on the globe. Your guess is as good as any, but the answer is usually whatever narrative suited the people translating and writing them down, at the time. ✨ Hope this helps!

Double the flashbacks would be double the fun! Though we've seen a good amount of Finny back in the Green Witch arc, so I don't know how much there would be left to tell, but we'll just have to wait and see what Yana comes up with :3

Vampire Finny being the most loyal of the crew hell probably more than Sebastian when it comes to protecting Ciel. Finny over time and years of being with Ciel becomes Seb's fledgling learning how to be head of the house and eventually does so while Sebastian works in the shadows being Ciel's true guardsman. Idk it'd be an interesting dynamic concerning the passage of time and of course Finny does the Gardening, he insists to do it regardless of his already huge workload.

honestly even canon finny and sebastian fight for the spot of being ciels most loyal person so this is right on point but i LOOOOVE the thought of seb taking finny under his wing to be the head of house and ciels right hand man oh my god
in canon too i feel like he would be the most susceptible to manipulation by seb and ciel to be okay with sebastian being a demon, like he'd be pissed that sebastian wants to eat him but it would also make him want to be ciels right hand even more and i feel like it would work even better in an au where they're all already supernatural beings. i had in my mind that vampirism maybe comes from drinking demon blood and can get passed on when i originally made the vampire posts so maybe they just reveal that to him here so they can have someone within the household whos In The Know when things go south, or maybe sebastian needs to pretend to be dead for some reason and they need ciels next right hand man to be aware hes not actually? either way i love it
finny doing his best to learn how to be a good right hand man, maybe he's not great as a butler but he tries so hard. he wouldnt learn as quickly as sebastian did (partly because he's got canon learning issues and cuz sebs demon ass retains info faster than a human) BUT he could get help from tanaka too and over the years become better and better. and he absolutely would still do the gardening, it would tire him out so much but he'd be so dedicated that ciel wouldnt have the heart to tell him to hire a new gardener. with every cup of blood he serves he'd put a flower on the tray for ciel who tells him its silly but always takes the flowers and holds them like a lovesick teenager when finny leaves the room <3
god and to add in some vampire flavor, whenever ciel is sick or injured, he immediately will offer up his wrist or neck or anything else for ciel so his blood will help him heal faster, and if anyone says anything about it he simply states "i'm ciels right hand man, of course I would do this for him ^-^" (while secretly getting really excited and lovestruck whenever ciels got his teeth in him because he chose finny to drink from and not someone else)

after this chapter i am genuinely so confused as to why the undertaker (who i presume revived doll as a bd since he was present when sebastian killed her) would allow her to attempt revenge on ociel and the servants. doesn’t he not want any more phantomhives lost? even if no harm could ever reach ociel because of sebastian, doll does still pose somewhat of a threat to him as he is only human and she is this enhanced creature with potential abilities to harm him. also why is doll referring to the servants as ‘phantomhives’, i mean sure they work for the master of house phantomhive, but they aren’t; why is she calling them that when her master who is rciel (i think) is also a phantomhive? last but not least, who do you think will leave victorious, doll and the maids or finny and the kids.

Conflict of interests
Undertaker does a lot of things that seem to go against his own interests. He's been figuratively shooting himself in the foot. I guess it's because if he told our earl what he really wanted to do, ultimately, then our earl would not agree. Instead, Undertaker has decided to try to force our earl into a situation where he's more willing to accept his terms, whenever he eventually gets around to stating them; that would be whenever our earl is most vulnerable. That would definitely hold true, if, say... Undertaker wants to transplant our earl's soul into real Ciel's body, as some last ditch effort to "save" them both. Our earl (or Sebastian) would likely only agree to that if our earl's body were severely damaged in a fight or something. Until the contract is fulfilled, Sebastian can't let him die.
I can envision scenarios in which our earl is injured to the point that the only way to keep his soul from departing would be to place it into another vessel. Sebastian previously offered to place him entirely, soul and body, within himself to keep him safe, but our earl declined. That would be separate from devouring him, but if his body is too injured to survive, then putting him inside Sebastian might be the same as devouring him. Can't do that until the contract is up. Undertaker would step in saying something like "What to do? What to do?! Oh, I have an idea! Hihi!" Removing our earl's soul and placing it into real Ciel's body could break the contract, because real Ciel doesn't have a contract seal. This became an issue in s1, when the contract temporarily breaks because Ash/Angela cuts off Sebastian's left arm, which has the contract seal on that hand. That's how Claude steals his soul before Sebastian can devour it. Undertaker is a tricky fellow, and I'm sure he's looking at every opportunity he can find, even if it risks lives he wants to protect.
Doll sees anyone associated with our earl as a "Phantomhive", which is seriously ironic, because she's working for a Phantomhive and Undertaker, who wishes to not lose Phantomhives. If Polaris was once a Phantomhive butler, as I theorize, then he's another. Tanaka would count, too, regardless of which brother he serves. Doll herself is a "Phantomhive", in the same way that Finny and Snake are.
In a recent post, I said that I hope Snake and Finny point out to her that she's working for her enemy's twin, the real Ciel Phantomhive. I don't know whether she's actually met him. Would she mistake him for the younger twin who had her and her family killed? Or does she have some sort of doublethink going on, where she refuses to accept the obvious; it's all just a feud within the same family. She's being duped and used by the Phantomhives, either way.
I do expect Finny and most of the kids to survive, but there might be some casualties on Finny's side. We could lose some kids, besides the candidates that have already "fledged", because that's how dark the series has become. Snake could lose a snake. Even Snake could end up dying, but I sure hope not. We have to remember that Yana-san has no qualms with killing off a beloved character that's been in the story for many years. I can't even promise that Finny makes it out; I just think he probably will. Mother3 theory says Finny should survive, but 🤷🏻‍♀️.

I look over and see a fire burning in their eyes, burning brighter and hotter than any flame that has ever been sparked from their blood. 
It is a beauty that looks like death, and I know now that Roko would cross any line to keep us safe. They are driven by ambition, but their ambition is driven by a need to protect what they love - it’s obvious behind all of their harsh words. 
I have not fully figured them out yet, but I know them well enough to know what is about to happen.

🍀The Salmon of Knowledge and Fionn’s Magic thumb  Abridged version: Fionn eats a magic salmon, he burnt his thumb on fat/juice that escaped from the salmon while it was cooking. Whenever the warrior brings his thumb to his mouth, he’s granted forbidden knowledge.

Our!Ciel always, always, ALWAYS wears the Phantomhive Ring on his thumb. It’s never on any other finger, never worn in any other fashion. One might think he could easily wear it around his neck on a chain, or have it pinned into place, or temporarily fashioned into a broach: But it is ALWAYS on his thumb, even when Sebastian had the perfect opportunity to resize it after the band was shattered. He purposefully places the ring on his thumb, and it consistently remains there.

There's also been some interesting artwork depicting our!Ciel holding his thumb close to his mouth drawn very recently... and even an early image of him licking it, made almost a decade ago. So this has been "a thing" for a while, now.

And if you’re thinking “It can’t be THAT important” you’re wrong: because as many might remember, The first season of the anime, did not follow manga canon (although the first meal was still poached salmon and mint salad).  As a result (and sort of a “refresher”) Episode One of Book of Circus is meant to be a “redo” or “recap” of the first chapter. Guess what he’s served, again just to remind us?

He was considered a “master of hounds” and could get his hounds and near any dog, to do what he said.  ...Then, there’s our!Ciel– Clearly, he didn’t feel like he was living up to his namesake.

🍀Bonus 🍀 Fionn is infamously known as "the sleeping warrior." According to legend he's not actually dead...but asleep. And he'll wake up in Irelands most dire hour of need. This 'wake up, Finn!' has long become a part of Irish folklore, and enmeshed in the culture in many sayings, folk songs and such. A message that for obvious reasons was aligned with "if you want this warrior to wake up it means you hate the Queen of England" so it's sort of... an inside joke. Many believe it's even been hidden in more popular Irish songs as well. The best example I have of this, is probably " Finnigans wake " which of course, has nothing to do with the warrior itself. It's meant to be a lighthearted, very funny and upbeat song about miserable drunk old man literally coming back to life because he's mistaken for dead. But the title choice is a play-on words. It sounds like "Finn, again, is 'wake."

Our!Ciel has a tendency to be a very sleepy boy, but I find it incredibly interesting that Sebastian waking him up is such a stark, piece of imagery in the series as a collective whole. (There's another layer of suspicion if you're of the belief the twins were switched at birth). But this is also on the first page of the manga, the first time ANYONE speaks, is Sebastian. And he says this.

🧡- what's your character's worst irrational fear?
That's eas— oh irrational. You know, most of them are quite rational when you look at what I've done to them, but let's try.
Caldyn's biggest fear is that people will leave him; because he's too much of a burden, because they find they find something/someone better, because he's just not worth it. Again — it's no wonder, but it will also never happen.
Finnian's biggest fear is ... ok, I'm not sure anything he could be afraid of would be unwarranted, given his past 😅
There always is the fear that something happens to someone he loves (i.e. Eilis) and he is unable to heal her, despite all the magic within him. Which, for some reason, I can understand, but if we go the irrational route, it's that Eilis would hate him for it.
🤎- How much physical pain can your character withstand? How much mental pain?
He, that question makes it sound like they have a choice :)
Caldyn, quite a lot physical pain. He used to even before certain events, as being a healer he kind of knew it wasn't "that bad" and he could fix it and really now that pain is just annoying (but please someone hold his hand 🥺)
Then certain things happened, and he now has chronic pain (he mostly just ignores, until he can't anymore). He has fought half-dead before, and he would again. I think his body would give up before his stubborn self would.
The one thing he cannot deal with is fire. His eyes burning were the worst pain he has (and probably will) ever felt.
Finnian also has some chronic pain, but he is less lucky with shutting it out. It can easily ruin his day, but what can he do about it. I guess his breaking point, however short, was the idea of broken knees on top of it all (and Clayton so would have done it.)
Mentally... uh I plead the, actually, no idea of american laws 😂
