ZENB Plant-Based Pasta
What did I think of ZENB plant-based pasta? I thought it was fantastic. If I didn’t know it was plant-based I wouldn’t know it was plant-based.
ZENBE (ZEN-bee) is created from the Japanese expression, zenbu, meaning, whole. I love pasta…so much that I am heading to Florence, Italy, in a few weeks for the purpose of eating great pasta. Unfortunately, I can’t often fly off to the beautiful country of Italy for some of the best pasta in the world, so I must find options here at home. I am a big fan of carbs – something I wish wasn’t true…

Vegetarian Bolognese sause
In sweden we have this classic dish that is a nordification of Bolognese, called köttfärssås. It's not as well know as meatballs, but it's definitely as important. I don't know about now, since I haven't lived there in ages, but when I grew up this was a favourite with all the kids, and something you would serve if you wanted to make sure that any visiting kids would enjoy the meal. Oh, and speaking of visiting kids, I have a few times as a kid experienced the meme of being asked to wait in the room while my friends ate. In my experience this did not happen a lot, and was very unproblematic. It could be that the friend just did not have enough food that particular time and maybe did not have a lot of money to start with, or that I had let them know I had to eat home. I know it sounds bad, and I don't believe my family ever did it, but it is arguably better than saying no to visitors because you already made the food or did the shopping. Maybe it's also a result of what we cook? Because usually we cook and buy very specific portions in the North with not a lot of squiggle room for extra guests. Food is also very expensive. But I digress. I changed this around over the years to make it vegetarian (not vegan), and it's very rich and creamy. Fry in pan, I use a dutch oven:
1 onion, coarsely chopped 1-4 garlic cloves 1-2 dl nuts (I prefer hazlenuts, but walnuts or cashew works too)
Add and boil until the carrots are soft but not mushy:
2 carrots, coarsely chopped 1 can of good quality tomatoes
Add and blend until chunky:
1 dash of soy sauce 1 dash of cream, veggie or dairy 1 sprig of parsley
Serve with spaghetti and parmesan. I use gluten free, off course :)

Heaven in a Bowl - Aglio e Olio
I love a big bowl of pasta as much as anyone! Add some garlic, olive oil and grated Parmesan cheese and I’m in heaven and loose all self control!
The other day when I was trying to figure out what I would make for my latest Instagram video, this pasta kept calling my name and I know why…it’s so delicious and so easy to make! It’s nice to have a handful of recipes that take literally no time to put together and use basic pantry ingredients.
This recipe for Aglio e Olio (garlic and oil) is everything you want when you’re craving pasta…perfectly cooked noodles, olive oil with lots of crispy (and so healthy) garlic, lemon juice and parsley. Traditionally, this dish isn’t served with Parmesan, but why not add a little or a lot if you want because it only makes it creamier and even more delicious! Serve this pasta with a glass of Rosé and some crispy bread along with a green salad and you have an easy meal that is literally “heaven in a bowl”!

Be sure to use really good olive oil and the best Parmesan cheese when making this dish because you’ll definitely taste it!

It’s cozy season and the weather is supposed to be so cold over the next month! I’m a warm weather girl and admittedly struggle during the colder months so I do everything I can to make my home inviting and warm until the chill is gone! That includes lighting candles, having blankets draped across every chair and making warming comfort food to eat (lots of soup)!! I have a theory that we’re supposed to hibernate during this time of the year…it’s a time to reflect, turn inward and plan. I’ve been meditating longer, journaling and reading more…keep scrolling for a few book recommendations as well as my favorite candles, soft pajamas and all things cozy! Vegetarian gluten free lasagna
I know this image was maybe not doing it justice, but this was a beautiful lasagna. I used the sauce here https://somewhatdelicious.tumblr.com/post/705515470798880768, and added some extra cream and cottage cheese. Obviously it would have been even better with proper layering with cheese sauce and fresh homemade pasta instead of store bought dried, but we all have our limits :)
