Mushroom Polenta (Vegetarian)

This creamy and cheesy Mushroom Polenta, enhanced with a pinch of fragrant Piment d'Espelette, makes a hearty vegetarian lunch on a chill Spring day! Happy Monday!
Ingredients (serves 2):
2 tablespoons dried porcini mushrooms
1 cup boiling water
1/4 cup skimmed milk
1/2 teaspoon fleur de sel or sea salt flakes
1/4 teaspoon Piment d'Espelette or Cayenne Pepper
½ cup polenta
4 heaped tablespoons crème fraîche or sour cream
Parmesan
Sppon dried porcini mushrooms in a small saucepan. Pour the boiling water over the mushrooms, and cover with a lid. Allow to soak and plump up, about 10 minutes.
Then, stir in milk, fleur de sel and half or the Piment d'Espelette. Heat over a medium flame until simmering.
Add polenta all at once, energetically stirring with a whisk to prevent lumps from forming. Whisk constantly until mixture thickens. Once it has, stir in crème fraîche. Finally, grate in about 1/3 cup Parmesan, and give a good stir until completely melted and you have a beautifully smooth polenta.
Serve Mushroom Polenta hot, sprinkled with remaining Piment d'Espelette.

Creamy Apple and Mushroom Chicken

Another recipe with the harvest from my garden orchard (three fruit trees!), this Creamy Apple and Mushroom Chicken is a deliciously indulgent meal celebrating the new season. Perfect for a sunny but chill Sunday lunch. Have a good one!
Ingredients (serves 2):
1 heaped tablespoon porcini mushrooms
1/3 cup boiling water
1 tablespoon olive oil
2 chicken thighs
1/2 red onion
1 teaspoon dried thyme
1 large garlic clove, minced
2 large Ribston Pippin Apples, rinsed
1/4 cup good quality apple brandy
1/4 fleur de sel or sea salt flakes
1/2 teaspoon freshly cracked black pepper
1/3 cup double cream
Spoon porcini mushrooms in a small bowl. Pour boiling water over them and cover with a lid or cling film. Set aside, at least an hour.
Heat olive oil in a large, deep skillet over medium high heat. Add chicken thighs and cook, about 5 minutes on each side, to brown.
Peel and finely chop red onion. Add to the skillet, and cook, about a couple of minutes until softened. Add thyme and garlic. Cook, one minute more.
Halve and core the Ribston Pippin Apples, and cut them into slices. Add to the skillet, tossing into the chicken juices, fat and herbs.
Thoroughly drain the plumped up porcini mushrooms, keeping their soaking liquid.
Stir the mushrooms into the skillet.
Pour apple brandy all over, and carefully ignite, with a match.
Flambé, until the flames die down, gently shaking the skillet. 
Once the flames have disappeared, stir in double cream and mushroom soaking liquid. Bring to the boil.
Reduce heat to medium-low, cover with a lid and simmer, 15 minutes.
Serve Creamy Apple and Mushroom Chicken hot, onto a buttery Potato Mash, with either a glass of fruity chilled white wine, like a Chardonnay, or a robust red, like a Shiraz.

And after about fifteen minutes of walking, we turned toward the left, we're gonna add some tomato paste, tomato puree, our browned onions, beef, and celery concoction, salt, pepper, red chili flakes, some white wine, chopped up porcini mushrooms. And my grandmother didn't know the last five minutes that things got messy. The fire went out. I told him we weren't home that day until the morning. He gave me a warning and pulled me out of the fire, but he gave me two more warning and turned on the fire. And what was happening was in a strange place on the sidewalk.
