Roasted Cauliflower and Leek Quiche (Vegetarian)

Leftover Roasted Cauliflower and Garden Leeks make a hearty, fragrant and vibrant Roasted Cauliflower and Leek Quiche, a tasty picnic if you're on your way home from a long weekend! Happy Monday!
Ingredients (serves 4 to 8)
2 large Garden Leeks
1 tablespoon unsalted butter
½ tablespoon olive oil
450 grams/1 pound chilled Pâte Brisée
6 large eggs
¾ cup crème fraîche or sour cream
¼ cup semi-skimmed milk
¼ teaspoon salt
½ teaspoon freshly cracked black pepper
1/4 teaspoon Garam Masala
1/4 teaspoon ground turmeric
3/4 cup to a cup leftover Turmeric and Cumin Roasted Cauliflower
Thoroughly rinse Garden Leeks under cold water, removing any dirt.
Melt butter with olive oil in a nonstick skillet over medium heat. Cut Leeks into thick slices and add them to the skillet. Cover with the lid, and cook, 5 minutes. Flip leek slices on the other side, cover with the lid, reduce heat to medium-low, and cook, a further 5 minutes. Remove from heat, and let cool completely.
Preheat oven to 200°C/395°F.
Roll Pâte Brisée out thinly onto a lightly floured surface. Fit into a buttered 26cm/10.25″ tart pan, letting the pastry overhang on the edges. Prick the base with a fork. Place a sheet of baking paper onto the Pâte Brisée and fill with dried beans or rice. Blind bake the Pâte Brisée crust  at 200°C/395°F, 10 minutes. Carefully remove the beans and baking paper, and bake another 5 minutes, at the same temperature. Remove from the oven. Let cool slightly before trimming the edges.
In a medium bowl, whisk eggs together with crème fraîche. Whisk in milk, salt and black pepper. Stir in Garam Masala and turmeric.
Arrange cooled Leeks onto the tart crust. Cut Roasted Cauliflower into chunks, and scatter them liberally on top. Pour egg and cream mixture evenly all over.
Place in the warm oven, and bake, at 200°C/395°F, 25 to 30 minutes, until cooked through and crust is beautifully golden brown.
Serve Roasted Cauliflower and Leek Quiche warm or cold, with dressed lettuce.

Roasted Cauliflower with Tomatoes and Green Olives
A colorful side dish always makes dinner more special and festive no matter what you’re serving as an entree.
I love the colors in this dish — I’ve made it with different veggies on different occasions but this combo seemed the prettiest to me (black olives work too though). And the olives add a surprisingly tasty tang. It’s perfect for Shabbat dinner.
Bonus: if you have any leftovers you can sprinkle them with vinaigrette for a lovely salad. Add cooked potato or hard cooked egg if you have some.
Roasted Cauliflower with Tomatoes and Green Olives
4 cups bite sized cauliflower florets
4 tablespoons olive oil
kosher salt or sea salt
2 dozen halved cherry tomatoes
10-12 green pitted olives
2 tablespoons chopped chives or green scallion tops
Preheat the oven to 400 degrees. Line a cookie sheet with parchment paper. Place the cauliflower pieces on the parchment and sprinkle with 3 tablespoons of the olive oil. Toss the pieces to coat them evenly with the olive oil. Sprinkle with salt. Roast for about 20 minutes, tossing the pieces once during that time, or until lightly browned. Sprinkle the tomatoes and olives with the remaining olive oil and add them to the cauliflower. Toss the ingredients and roast for another another 10 minutes. Sprinkle with chives and serve.

This beautifully colourful and flavourful Turmeric and Cumin Roasted Cauliflower is a recipe from this month's The Simple Things. Thus, when I found a beautiful cauliflower at the market the other day, I knew I'd try it, and what a good idea it was! It is bright and fragrant, and roasting the cauliflower means it retains its nutty taste and a delightful bite. It is warming and filling -like a proper- but not too rich; perhaps just the kind of thing one needs after a morning spent treading through the snow --what a joy!-- to watch birds with one's new binoculars at the park, over a partially frozen pond! Happy Thursday!
Ingredients (serves 2):
a small, beautiful cauliflower
1 teaspoon ground turmeric
1/2 teaspoon ground cumin
1/4 teaspoon fleur de sel or sea salt flakes
1/2 teaspoon freshly cracked black pepper
1 large garlic clove, minced
3 tablespoons olive oil
a few stalks fresh Cilantro 
Trim off the cauliflower's leaves and stalk. (Keep them to make a fragrant Vegetable Broth.)
Bring a large pot of salted water to the boil, over a high flame.
Once boiling, plunge in the cauliflower so it is submerged. Cover with a lid, and cook, 5 minutes.
Turn of the heat and lift the cauliflower out of the water. Place a steaming basket over the hot water and place the cauliflower onto it. Allow to steam-dry, about 20 minutes.
Preheat the oven to 220°C/430°F.
In a small bowl, combine ground turmeric, ground cumin, fleur de sel, black pepper and minced garlic. Stir in olive oil until well-blended. Set aside.
Line a baking tray with baking paper, and sit the cauliflower in the middle of it. Generously brush with spice and oil mixture.
Place in the middle of the hot oven, and roast, at 220°C/430°F, 30 to 35 minutes until golden brown.
Finely chop Garden Cilantro.
Serve Turmeric and Cumin Roasted Cauliflower hot, sprinkled with Cilantro, and yoghurt, if you wish.
